Shouting out to carolb_w_fl: Thank you for posting your 'apple nut pudding cake' recipe earlier this year!!! I love how simple / quick it is to throw together (perfect for last-minute baking) and I swear it seems to work with any fruit combination! My first try was banana, sour cherry, and red raspberry (lol!), then apple and blackberries, and I just made (and ate) a peach one... here it is going in the oven. As you can see, I don't follow recipes exactly and this is a fav! :)

    ci_lantro, I thought carolb should post it herself, but I'm not sure she's posting here lately.... I found a copy of her original post (below). I also wanted to note that I make it gluten-free (sub an AP gf flour, no xanthan needed!), and I add more fruit... :)

    I have another favorite recipe for a fruit & nut 'pudding' cake
    in which I often use mixed fruits. It's very quick to put together &
    uses only 1 egg & no shortening - an 'economy' recipe I adapted
    from a 1947 issue of BH&G magazine. It's more an extremely moist
    cake than a pudding:


    Apple Nut Pudding Cake

    1/2 cup white or brown sugar (less if fruit is very sweet - maybe 1/3 cup)

    1 beaten egg

    1/2 cup flour

    1/4 tsp. salt

    1 tsp. baking powder

    1 1/2 - 2 cups finely chopped apple - see note

    1/2 cup chopped nuts

    1/4 tsp.nutmeg &/or 1/2 tsp.cinnamon

    1 tsp. vanilla or bourbon - optional


    Beat sugar into egg w/ salt & flavorings until dissolved. Add dry ingredients & mix well. Stir in apples, nuts.

    Pour into a lavishly buttered 8" pan. (I use a pyrex baking dish)

    Bake @ 350F 35-40 minutes.

    Serve w/ whipped cream - if desired.


    NOTE: Other chopped fruits may be used instead of, or with,
    the apples, i.e. bananas w/ strawberries, pears, peaches, plums, mixed
    w/ cranberries, blueberries, etc.

    I don't bother to thaw frozen fruits before using, since they can
    become too watery. I just chop larger pieces while still partially
    frozen.

    I haven't tried making it with AP flour, so I'm not sure how the texture compares to the gf version, but the recipe works fine for me. I think it's easy to tweak whichever way you want to go with flour, fruit, sugar, spices, and nuts.

    FYI, here it is after baking, w/ 3 c chunked fresh peaches and almonds on top:

    And a tiny little scoop... I was kidding myself and ate a third of it. lol!

    Wow - how did I miss this?. Guess I haven't been around here longer than I thought.
