LOOKING for: Sweet Potato Bread Pudding with Buttered Rum Sauce

Several months ago I had the pleasure of trying this dessert at Fressers in Highlands, NC. It was absolutely exquisite! When we were trying to make up our minds whether to order this dessert or another our server said, "If that is not the best thing you ever ate, I'll buy it back from you!" She also said it's the kind of dessert you just "want to be alone with"!

However, I was unable to wheedle the recipe out of either the owner or her chef. All they would tell me by way of hints was that it is made from sweet potato bread that they order online rather than plain bread with sweet potato added. And they said the nuts in the dish are walnuts although they could have been mistaken for pecans.

Does anyone have a similar recipe or, at least, a source or recipe for sweet potato bread?

I figure if I start experimenting now I might have it perfected by Thanksgiving! Of course, by then I'll weigh 400 pounds!! LOL

Well....there are a million reciped for sweet tptato bread on line....
Could you tell if it was a yeast bread or a quick bread?
Once you figure out which bread you want to use.....then just make a bread pudding ( Ann T. recipe is great!) and I would sub brown sugar for white.....and use Ann's recipe for caramel sauce and add some dark rum before cooking.
Sweet potato muffins are yummy....I forget to make them!!

If you find a bread pudding recipe that you would like to try, this recipe for a topping is very good:
1c sugar
1/2c butter
1/2c heavy cream
Heat until sugar dissolves and add 1 tsp vanilla and 1T rum`or 1 tsp rum extract.

Heck yeah. I once made a bread pudding out of hot dog buns. I can't remember now why I had so many, probably leftover from some cookout I overbought for. I just wanted to use the darn things up! Well, I made a bread pudding for a party where we voted on best dish, and it came darn near close to winning! If you soak bread, any kind of bread, in custardy sweet junk and bake it and top it with a bourbon or rum sauce, what's not to love? LOL

Here are two of my favorites. MAPLE-PEPPER SALMON BITES This is a very quick recipe to make; just remember to start marinating the salmon the day ahead. You can easily half or double the amounts. 1/2 cup maple syrup 1/3 cup soy sauce 24 ounces skinned salmon fillet 1/4 cup freshly ground black pepper vegetable or canola oil Cut salmon into bite-size cubes. Combine maple syrup and soy sauce in a medium-size bowl and add salmon, making sure the fish is fully immersed in the marinade. Cover and refrigerate for 24 hours. Grease a sheet of aluminum foil with the oil (vegetable oil sprays work well). Preheat oven to 500F. Put pepper in small bowl or plate and dip top of salmon pieces into pepper. Place each peppered piece on foil, then cook in oven for 3 to 4 minutes. Serve immediately. Serves 6 as an hors d'oeuvre. Antipasto Bowl This appetizer should be made two hours in advance. 3 cups (2-inch) sliced asparagus (about 3/4 pound) 3 cups quartered mushrooms (about 3/4 pound) 1 cup red bell pepper strips 1/2 cup pitted ripe olives 3 ounces part-skim mozzarella cheese, cubed (about 2/3 cup) 1 (14-ounce) can quartered artichoke hearts, drained 1 (11.5-ounce) jar pickled pepperoncini peppers, drained 1/3 cup cider vinegar 1/4 cup finely chopped fresh parsley 2 tablespoons extra-virgin olive oil 2 teaspoons dried oregano 1 teaspoon sugar 1/4 teaspoon salt 1/4 teaspoon black pepper 3 garlic cloves, minced Steam asparagus, covered, for 2 minutes. Drain and plunge into ice water; drain well. Combine the asparagus, mushrooms, and the next 5 ingredients (mushrooms through pepperoncini peppers) in a large bowl. Combine vinegar and remaining ingredients in a small bowl; stir well with a whisk. Pour vinaigrette over the vegetable mixture, tossing gently to coat. Cover and marinate in refrigerator 2 hours; stir occasionally. Note: Can be served chilled or at room temperature.

GREAT thread--there's a lot of good recipes here so thanx for starting it! these were a summertime treat when i was growing up in central NY and might be sort of an acquired taste: Salt Potatoes Put 5# of small potatoes into about 2 quarts of water Add about 2/3 C of salt Boil until the potatoes are fork tender Serve with plenty of butter For a variation, cut the above into halves Pan-fry over low heat in olive oil to which you have added 8 or 10 bay leaves cut in half, turning several timeswhen they are crispy and browned, serve or, add a tablespoon of sugar and a little chopped basil and cook for another minute or two (can also be wrapped in foil and grilled). The differences in flavors is really quite good! this is from daisy--very tasty but the color of the finished dish is a little dark... Spiced Potato and Basil Gratin 6 medium boiling potatoes 2 cups loosely packed fresh sweet basil leaves 2 1/2 cups heavy cream 1 tablespoon ground coriander seeds 1 teaspoon each salt, black pepper, mace and allspice 125g Swiss or domestic provolone cheese, grated Preheat oven to 190C. Cook the potatoes in salted boiling water for 10 minutes. Drain and cool to room temperature. When cool enough to handle, remove the skins and cut the potatoes into 3mm slices. Arrange one-third of the potato slices in a thin layer on the bottom of a round 22cm baking dish rubbed lightly with olive oil. Sprinkle one-third of the basil over the potatoes. Cover with half of the remaining potatoes and the remaining basil. Finally, top with the remaining potatoes. Combine the cream and spices in a small bowl. Slowly drizzle the mixture over the potatoes. Bake for 1 1/2 hours or until the cream is thick and the potatoes are very tender. Sprinkle the cheese over the top; bake for 5 minutes longer or until the cheese is melted. Remove from oven and let stand at room temperature for 10 minutes before serving. i'm sorry i didn't make a note at the time i copied these recipes quite a few years ago but i believe they probably both are from one of the frugal gourmet's books. in any case, they certainly are T & T in our household! swedish hasselback potatoes 6 medium baking potatoes 1/4 C melted butter 1/4 C grated parmesan 2 T dry bread crumbs salt & pepper paprika place the potatoes on a large spoon and cut partway through them in 1/4" slices. place cut side up in a greased, 11 x 7 baking dish, brush with butter and sprinkle with salt and pepper. bake @ 375 for 45 minutes (or bake with a roast for 1 hour @ 325). mix together the cheese and the bread crumbs and sprinkle onto the potatoes. bake until tender--another 20 or 30 minutes. Portuguese herbed potatoes 6 new potatoes 6 whole bay leaves 2 T olive oil 2 T butter 1/2 tsp salt a few grindings of pepper pare a strip of skin off from the center of each potato. add potatoes and bay leaves to about 1" of boiling water. return to a boil and reduce heat, cover and cook for about 20 to 25 minutes. drain. heat the oil and butter in a 10" skillet and then return the potatoes and bay leaves to the skillet. stir and add salt & pepper. cook uncovered over medium heat until browned, about 10 or 12 minutes. serve. this is loosely based on a recipe from epicurious-- Potato Latkes ("sort of") Use leftover, mashed potatoes. If not, boil 5 or 6 red-skinned potatoes until tender and then roughly chop them, adding a little milk. Stir into the potatoes: 2/3 C of chopped leeks or shallots or onions Mix together and then add to the potato mixture: ½ C parmesan 1 egg 1 ½ to 2 tsp dried mint 1 tsp dried oregano ½ tsp salt ½ tsp pepper a package of chopped spinach, defrosted and squeezed dry To the above, stir in: 1/3 C feta and enough bread crumbs so that the mixture will hold together lightly Form the above into small patties. Pan-fry them in a skillet on medium heat, lightly coated with olive oil for 5 or 6 minutes per side. if you like "oven french fries" or even plain oven roasted potatoes, just drizzle on a little truffle oil a few minutes before taking them out to serve. delicious! also, i don't make "gravies" very often. but i do like sauces and that includes salad dressings. if you have a sauce that you enjoy, just pour it over plain old boiled potatoes. you just might have a new dish that you really like!

Well, I chunked up my purple taters, peeled them, boiled them, and then I put them in the blender. I was trying to mush them enough so I could make a pie filling. However, those things kept getting thicker and thicker, and so I added some nice fat free half and half....and instead of sugar, I put in a cup of Splenda. And the color is the most gorgeous lavender. I've done no further cooking, but it takes a big spoon to dip this out of the blender container. I think about 48 ounce size too. And my parrots love it, the dogs love it, and I love it. I mean, what is not to like about this smooth concoction, which tastes and has the texture of a pudding. I did not add any vanilla, but I suppose I could have but I wanted to see the taste of the natural sweet potato. Also, I could have left out the Splenda and had a veggie smoothie. I've downloaded a book on my Kindle which is a book about making green smoothies, out of raw foods. The blessed thing about such food, so many of the green foods are "free" foods that do not count against your diet if you are diabetic. That is one reason I've begun eating more dill pickles, sauerkraut, jalapenos, mustard on any sandwich, and then the SaraLee 10 carb whole wheat sliced bread....sometimes just one slice for an open faced sandwich. But the green smoothies are espousing the raw food diet, going beyond vegan to raw, and eliminating cooked foods of any kind. You can go part way with this sort of diet, which is what I would do, but I will give it a go because by eating raw greens, I've already lost 8 pounds. Hard to take it off, but great when it happens.

I don't have a Sweet Potato Bread Pudding, but you can use any bread in the Bread and Butter Pudding recipe that I use. I've made it with regular bread as well as
and even with gingerbread.

Here is the recipe and the recipe for the caramel sauce that Linda mentioned. The caramel sauce can be used on apple pie,
, gingerbread cake,
, ice cream and any leftover is wonderful by the spoonful. LOL!

Home Cookin Chapter: Recipes From Thibeault's Table

5 or 6 slices of bread
1/2 cup butter

1 to 1 1/2 cups sugar
5 eggs
2 cups cream (Or milk)
vanilla
pinch of salt

Caramel Sauce

1 cup butter
1 cup sugar
1 cup brown sugar
1 cup cream
pinch of salt
2 teaspoons vanilla

NOTE: If you prefer the pudding to have more custard, then use less bread so that all of the custard is not absorbed into the bread when baked.

. Cut crusts from bread and spread each slice with butter. (Bread slices
can be left whole, or cut into halves, quarters or cubes.

Place bread butterd side up in a oven proof dish. (may use any shape
dish, or glass loaf pan, cutting bread to fit)

Beat the sugar and eggs together and then add the cream, vanilla and
salt.

Pour over bread and allow the bread to absorb. (make be refrigerated
at this point and baked later)

sprinkle with some white sugar and place dish into a pan of hot water
and bake in a 350 oven for 45 to 1 hour, or until pudding is set and
golden.

To make caramel sauce,

bring butter, sugars, cream and salt to a boil and then simmer for 3 or
4 minutes. Remove from heat and add the vanilla.

No reason not to add nuts to this sauce if you like:
BUTTER RUM SAUCE
1 cup heavy cream
3/4 cup packed light brown sugar
1 stick butter
3 TBL dark rum
1/2 tsp vanilla

Combine the cream, brown sugar & butter in a suacepan. Cook over low heat stirring frequently until themixture boils. Boil 5 minutes, stirring occasionally. Remove from the heat. Stir in the rum & vanilla.~~California Fresh

Here is a recipe that has bounced around in several newspapers before it ended up in our "daily blab". I have never seen anything like it and thought some of you might like to try it during the holidays. Looks pretty decadent.

Sweet Potato Bread Pudding w/ Whiskey Sauce

Pudding

10 slices white bread, cubed and toasted
2 cups sweet potato, peeled and cubed
4 tbs butter, melted
3/4 cup sugar, granulated
10 eggs, beaten
2 cups heavy cream OR half-and half OR milk
1 tsp vanilla
1 tsp nutmeg, ground
2 tsp cinnamon, ground

Boil potato cubes in enough water to cover until barely soft. Drain. Place sugar, nutmeg and cinnamon in a large bowl and mix. Add eggs and cream OR milk and stir. In a separate bowl, combine sweet potatoes and butter and mash together. Let cool. In a large mixer bowl, combine potato mixture, sugar mixture and vanilla. Set mixer speed on low and mix for a minute or two. FOLD in the bread cubes and let stand for 5 minutes. Coat a 9 X 13 baking dish with butter and pour mixture into it. Bake on lower rack at 250 degrees for 45 minutes to an hour. Test for doneness with toothpick.

Whiskey Sauce

2 cups sugar, confectioners
1/2 cup sugar, brown, packed
2 cups cream OR half-and-half OR evaporated milk
1/4 cup butter, unsalted, cubed
1/4 tsp vanilla
1/4 tsp nutmeg, ground
2 squares chocolate, white, optional
2 tbs whiskey, or to taste, optional

In a heavy saucepan, place cream OR milk, both types of sugar, nutmeg and vanilla. Slowly bring to a boil and simmer until volume is reduced to one half. Remove from heat and whisk in butter. Add white chocolate and stir until it melts. Add whiskey and stir. Pour sauce over pudding or over individual servings. Note: Do not reheat sauce as it will separate. Keep it warm by placing in a stainless steel bowl that is sitting in a container of hot water.
