Tis the Season! Time for pot roast...your favorites please

I was inspired by Nancy's Italian beef pot roast (the basis for spaghetti sauce) and got two great looking hunks..on sale for $1.79 lb. However, having just stuffed ~40 shells, we're off Italian for a bit.

Today I'm making an ad hoc Southwest pot roast in the crockpot, testing out some SW seasoning I have. With two cans of Rotel tomatoes, it will cook today, and be eaten tomorrow.

I have one more roast to freeze and am looking for inspirations. I also have a bunch of dill I dried that I'd like to use, possibly on that. But other suggestions of all sort welcome, esp ones that have a good strong flavor. While it's mild, mild, mild here now, I know a cold snap HAS to be coming so both crock and oven potroasts are welcome. Almost too warm today for the oven on..
