How do you make your Vegetable stock?

Do you roast your veggies before adding them to the stockpot when making vegetable stock? We like intense flavors! Due to DH's recent heart issues, I am thinking of substituting homemade veggie stock in place of my delicious chicken stock in some recipes. I already add veggies when making my chicken stock, so I think I need to either roast or caramelize the veggies first - maybe adding a splash of white wine to achieve a flavorful all purpose alternative? I like to keep stock in my freezer as a staple, adding whatever spices and herbs fit the dish when I make the meal. Any suggestions for a heart healthy method or ingredients are very appreciated.
