Cooked Seafood Safety

Hello to all! I'm a regular reader of this forum, but never have anything of value to offer. But I do have a question that I'm sure the experts here can answer...

Last night, I cooked a magnificent (if I do say so myself!) seafood linguini marina, with tomato base, EVOO, chillies, red wine, black olives, capers, lemon juice, lots of garlic and onions, touch of ginger and a few of my favourite herbs. And a mix of squid, mussels, scallops, white fish, salmon, prawns and octopus.

But I could only eat half, so zip-locked and froze the remainder for another day.

However, being seafood, will it be safe to eat in, say, a week or so's time?

Would appreciate opinions/experiences/hard facts!

If you froze it, there is no reason it would not be safe to eat a week later. Do you have a reason not to trust your freezer? When you freeze seafood as you described, you should freeze individual portions, as you would not want to freeze additional leftovers. I frequently make seafood gumbo in large batches and then freeze the leftovers in individual serving sizes, although I do not add octopus to the mix. The prawns and squid might be a bit more tough after reheating, but they will certainly be safe, so long as your freezer is cold enough, which should be 0 degrees Fahrenheit or -18 degrees Celsius.

It does sound like you did include the entire marina in your dish, and so the name makes sense. I wish I had been there to help you finish it!

Hi, Lars! Appreciate your reply. I've heard so many stories (myths?) about the dangers of re-heating seafood, that I'm a bit leery just thinking about this. But I suppose if the worst that can happen is that I die of botulism, it's really insignificant in the grand scheme of things!

Yes, my freezer is trustworthy, and the remaining portion is a one meal size. Although if you'd care to join me here in Australia to share the meal, I can happily extend the quantity to suit the 2 of us!
A couple of crusty bread rolls, some grated pecorino and freshly ground black pepper, a bottle of really good local Shiraz, followed by a cheese platter, a chilled botrytus wine, coffee, brandy and a philosophical chat would be a fine ending to the evening.

And I'll even make my specialty, Indian kulfi, to cleanse the palate. Do you prefer mango or chocolate?

99% of the time red tide clams (or any other filter feeder) will just give you a tingle. Its that 1% of the time you want to miss. I well remember having a seafood feast that involved some friends from away, the hereditary chief of the T'Sooke nation and his family and a couple of low level government wonks from the Dept. of Fisheries. we were discussing putting in a clam cleaning station, where live, beach harvested clams are allowed to clear grit and such in a controlled manner before wholesale delivery. Anyway, lots of fun but soon some of us started to have numbness in our lips and cheeks. Took a while to realize because there were some adult beverages involved (OK, a lot) It was an interesting few hours as we waited to see if we were 1%-ers. All turned out well, toxic shellfish paralysis is pretty rare but it is available.

I make tartar sauce similar to Country Sunshine's, but I put chopped stuffed green olives in mine. Here is my recipe for Shrimp Gumbo. I don't measure anything, but this is the basics. 2 ribs celery 1 bell pepper 1 onion Chop and set aside. In heavy skillet or stock pot, make roux of approximately equal parts flour and oil. Bacon grease is actually best...so if you have that...use that. I'd say about 1/3 cup each or a little more. Stir without stopping over medium heat until roux is very brown, but do not burn. Don't stop stirring either. Add chopped celery, onion and bell pepper. Stir it in and turn off the heat. Transfer if using a skillet to pot or if using a stock pot, add 3 to 4 cans chicken broth. Stir until the roux is dissolved, and on low heat, add a small can of tomato sauce. You can add more or chopped tomatoes. I don't like tomato pieces in mine....so I go with the sauce. I just want it to color the gumbo. The gumbo will not have a pretty color at this stage, but will as you finish it. Bring to a boil and when the celery, onion, bell peppers are cooked done, add a bag of frozen, chopped okra. When the okra is done, add shrimp. I use a lot of shrimp...and if I have crabmeat, I put that in too. You can put in any kind of seafood. Some people put in sausage, but I don't because it over powers the flavor of the gumbo. When I don't have seafood, I use chicken. Season to taste. I use Tony Chachere's creole seasoning and thyme. Tony's is flavored salt, and I use it like salt when cooking. Do not over cook the shrimp. As soon as it turns pink, or the liquid starts to boil, turn it off. Sprinkle a liberal amount of gumbo file and stir in well. That will also change the color a little bit. Stir it well so it doesn't kind of make strings in the liquid. A handful of minced green onions is good to add now too...or parsley. Serve over hot, cooked rice. (When you make the rice, put a big lump of butter in it to give it richer flavor.) My husband shrimped for 45 years...we still have couple of shrimp boats. I have cooked hundreds of pots of gumbo and this is recipe that I have worked on over the years. You could make stock from the shrimp shells, but I have found that chicken broth gives it more flavor. It doesn't taste like chicken...so no worry there. A lot of people don't like okra because they think it is slimy. Frozen okra has been blanched...so it isn't slimy. You can use fresh okra too, and it won't be slimy but I doubt any one who doesn't eat okra would believe me...so I say use frozen.

Tossing in a couple of ways I've been cooking fillets lately - simple, utilitarian, and you can prep it up then when everyone is at the table enjoying the appetizer, you can sneak away and do the cooking in 5 minutes. These are usually tilapia, halibut, cod, or other whitefish. Salmon doesn't taste right if cooked this way, to me. Miso-marinated and simmered - Make a miso soup, cool it to room temp - Marinate fish for 1 hour. Can be fillets or small steaks, less than 6 oz - Meanwhile, bring to boil 1 cup sake, 1 cup miso, 2 TBSP mirin, 1 TBSP soy sauce, 1 TBSP sugar. Turn down to a high simmer and reduce for the hour that the fish is marinating. Should reduce by appx 1/2 to 2/3. If desired, mix 1 TBSP cornstarch with a little water and add that to the sauce. Adjust taste with sugar and salt. - Remove fish from the miso marinade, bring the marinade to a full boil for a few minutes, then turn down to a high simmer and add the fish back. Simmer fish for 5 minutes only. Longer simmering will produce tougher fish. - Place each piece of fish in a small bowl. Add a little of the simmering liquid, to keep the bowl and fish warm, but not to cover the fish. Pour the sauce over the fish. Garnish with something pretty and serve. Milk simmered - Pat fillets dry and salt lightly - Melt two pats of butter to coat bottom of a pan - Optionally, sautee some minced garlic or onion in the butter - Raise heat, place the fillets in the pan and cook for 30 second per side on med-high heat - Pour 1/4" of half-and-half in the pan, turn down heat, simmer for 5 minutes for 1/2" fillets, a few minutes longer for a thick fillet - Remove fish to plate. If desired, thicken liquid with some flour and add another pat of butter plus salt to taste, to use as a pan sauce. Parsley or a little plop of bright green pesto looks nice with this. Wok fried - assumes fillets - coat fillets with cornstarch and salt, knock off excess - Mix up a sauce from 2 TBSP rice wine, 1 TBSP soy sauce, 1 tsp sesame oil, 1 tsp rice vinegar, 1 TBSP finely minced ginger, 1 TBSP finely minced garlic, 1 TBSP cornstarch, 1 TBSP chopped green onions, 1 TBSP fine diced red bell pepper (this last is just for color). I like some hot sauce too. - Place wok (a cast iron pan works too) on high flame, leave to heat for 4 minutes. Pour in enough veg oil to be 1/2" deep at center of wok (if using a flat-bottom pan, don't try for 1/2"), leave on high heat until oil starts to shimmer and then to smoke - Slide two fillets into the hot oil (slide, don't splash!), tilt the wok so that the hot oil gets to all parts of the fillets, after 30 seconds flip the fillets (flipping away from you!), after 30 seconds remove the fillets to blot on paper towels. Replenish oil if needed, heat to just smoking, cook two more fillets, etc. - When all fillets are cooked, place them on serving dish. Pour off the oil, return the wok to heat up, then pour in the sauce. Cook until liquid is bubbling and garlic is fragrant but not burned, pour sauce over fish, and serve. - If you want the fish more cooked or more thoroughly sauced - or if they are thicker fillets - lay each fillet in the wok with the sauce just long enough to cook to your desired doneness. I like my fish just barely cooked, personally, so for me this step would be 5 seconds.

First off, click on the link below and make sure you are familiar with what seafood is recommended, and how often(e.g., seldom) you should be serving certain types. - Octopus, squid and cuttlefish (all sizes) Squid ARE cuttlefish. Octopus is tougher than shoe leather unless either very young or pounded. Squid, once cleaned and de-skinned, can be batter-fried or lightly braised - think Mediterranean recipes. - Clams (4-6 kinds), Mussels, Oysters, Conch, Cockles, Abalone (live), Scallops Conch and Abalone are tough and need to be pounded. The other shellfish are fine steamed or sauteed. You can be as elaborate as cioppino/boullabaise or as simple as a lemon-butter/olive oil mix. - Skatewing, Shark fin Personally I'm very against shark fin because Asian fisherman often cut off the fins and throw the still-alive shark back in the water to drown. They have decimated many harmless shark species as a result. As a Japanese married to a Chinese-Portugese from HK, I have found that conservation is not an Asian imperative. It is strictly a "texture" food with no real flavor of its own. Skatewing is often served steamed with black bean (Chinese fermented soybeans, not Mexican black beans) sauce. It is like a white-meat fish but with a softer, more gelatinous texture. - Lots of salted and dried fish as well. I don't know too many people besides Asians who eat them here on the West Coast. Like tofu, it's one of those things you grow up. Because of the Portugese influence on the Chinese, they are very fond of the Mediterranean bacalhau, or salted cod. You wash it in innumerable changes of water, then cook it in various ways - just Google it. Whether it's worth the work or not, only you can decide. The smaller dried fish are great mixed with chili oil as an appetizer to any Korean meal, with lots of rice and kimchee. - All sorts of different fishes like Mackeral, Pike, Bass, Grouper, Porgy, Pompano, Shad, Yellowtail, Shark and many, many more. Plus sashimi-grade salmon, tuna, yellowtail, mackeral, octopus and shad roe. There is no better use for sashimi-grade fish than sashimi, as long as you watch your mercury intake! Try to identify the fish more carefully - there is a difference between yellowtail and yellowfin. Yellowfin is one of the best sashimi fish, very buttery in flavor. Mackerel is an oily fish, strongly flavored; usually salt-grilled in Japanese cooking. Shad roe cooked in butter was one of my mother's favorite dishes. Pike is a freshwater fish and like all such, has innumerable tiny annoying bones, but the meat is sweet and white - it is often used in gefilte fish, the Jewish fishballs. I may have to take you up on that invitation - I prefer mango flavored kulfi, and I used to have my own mango tree. If you visit me here in L.A. in a couple of years, I should have my own cherimoya to offer you. Your meal sounds absolutely wonderful - I'm a huge fan of seafood and everything else you mentioned. As for the philosophical chat - that would be great as well. I'm currently reading books on paleoanthropology, and there are several different theories about how people got to Australia and when. I think they crossed a land bridge between Ethiopia and Yemen when they left Africa, but from there, I'm not sure.

I hope to see more of you here as well.

Just kidding, of course. I've got distant relatives in Australia, by way of my great great grandfather who built what became the PM's official residence, the Kirribilli House. I'd love to visit.

Well, when you visit, don't just stick to the east coast, which is where most Americans tend to visit, plus Uluru. Come west- we have a lot to offer as well (and much more clean beaches :-) ).

Shax, your seafood should be just fine frozen and reheated. Botulism is a problem when you provide an anaerobic environment for it to flourish.

Food poisoning, now that's something else. (grin) But, you'd have to have either gotten contaminated ingredients before preparing them (and since you didn't get sick, it's probably OK) or have stored them improperly before freezing.

No, I think your worst problem may be with the texture of frozen and reheated pasta, not with the seafood. Which sounds delicious, BTW.

Oh, and welcome to the forum, I hope you post more often.

And I meant to thank you all for the warm welcomes! Actually, I've been living in India and Bhutan for the last 3 years, just having a couple of weeks' R&R back in Oz, and am so enjoying this short time gorging on seafood and quality wines (even Margaret River ones, Colleen!).

I just tried to say "paleoanthropology" 3 times quickly, and am now waiting on the ambulance crew to arrive and untangle my tongue...

Oh, and FOAS...Kirribilli House? Arguably the most expensive and desirable pieces of real estate in the country! Right on Sydney Harbour, with views to the Opera House, Sydney Harbour Bridge...and possibly decent fishing from the foreshores.
