8# whole salmon - stuffing recipe? HELP!
Comments (13)I think the leftover salmon is going to be good, and Kevin has promised to eat it even though he often will not eat leftovers - especially the next day. So last night I made Crab Louis with one of the King Crab legs (they were huge), and I froze the meat from the other two. To do that, I put the meat in a ziplock bag, wrapped that in a paper tower, and then put that into a Foodsaver bag. I plan to use it when my sister is here for Labor Day. Yesterday I did a search for Salmon Croquettes because Kevin requested them, and I found a recipe from Ina Garten that I plan to adapt. I've been watching her at lunch (now that Time Warner no longer shows People's Court on Channel 9 because of the war with CBS), and while I do not learn much from her, I have noticed that she cooks very similarly to me - which is why I do not learn much - I already make everything that she makes. She adds minced, sauteed yellow and red bell pepper to her salmon cakes, and so I thought I would try that. If you do a search for Salmon Croquettes on YouTube, you will find some entertaining videos - one from a woman whose show is called "Ghetto Cooking". I did not realize that Salmon Croquettes was Soul Food, but maybe it is just Southern. Another woman (who is in Southern Colorado) calls herself Grandma CheapCheap and sometimes calls the dish "Simon Croquet", pronounced like the mallet game. I put away more of the salmon stock in the freezer, but I saved enough to make a dill sauce for the croquettes that I plan to make this evening. I also bought some spinach so that I can make a spinach sauce for another dish. I might freeze some salmon to make salmon dip for later. I don't think cooked salmon freezes that well, but I think it would be okay for a dip. I bought bagels to have with it and cut my thumb when I was removing a bagel slice that had gotten stuck in my electric meat slicer. I always use that for slicing bagels, and I can get four slices from each bagel that way - I prefer the thinner slices, and my doctor told me to cut back on carbs. Comments (27)I'm not a salmon expert but we live in Seattle and eat fresh (summer/fall) and frozen salmon (winter/spring) weekly. We only eat wild caught salmon from the Pacific. I have always been disappointment in the flavor of Atlantic salmon I've eaten. From my experience the color varies across species. For example, sockeye has the richest darkest color. King is often lighter. The color does seem to affect flavor, but I think the most important factor to my palette is freshness. The fresher the wildcaught pacific salmon is when eaten or frozen the better it tastes. We buy frozen from a local vendor that fillets and freezes on the boat so the frozen when defrosted still tastes great. The other thing is not to overcook it. I find defrosted frozen salmon takes less time to cook. If you live somewhere that does not have good access to really fresh salmon then I'd buy frozen and try and source boat processed salmon. I haven't tried Costco salmon but they are a Seattle company and I do think they source, in general, pretty good quality products. If you like it then really that's all that matters. Also, largely you get what you pay for with salmon. The exception is that if it's the first of the season it's a rip off and if it's the height of the season it's a great deal. But wild will typically cost more than farmed and Pacific probably more than Atlantic and those price differences are worth it IMHO....See MoreTo Costco, or not to Costco?
Comments (66)We don't have BJs around here, just Sam's for a long time and Costco arrived a few years ago. Is BJs virtually the same in price, products, and policies? I never joined the Sam's because is was not convenient, and just not nice inside, kind of gloomy! The Costco is a nice experience to get to and shop in. Leaving is a pain with their checking your receipt, card, and cart, ugh. Just let me go! Re: the Sam's Club, why does the notice on the door say they will reopen the next day? Weird....See MoreCostco
Comments (47)There's only 2 of us so we never did the costco thing until DH needed hearing aids and everyone said that's the place to go, so we did. Since then, I'm addicted to their multigrain crackers which we buy regularly. We also found their cheese to be very tasty (love the cabot vt aged cheddar in the black wrapper) and we will buy their organic apples -- packaged so they aren't all bruised like at the grocery stores -- and I love their fresh pineapple spears. I've also gotten eyeglasses there. The rotis chicken can't be beat for the price...we make several meals and then soup out of it for $5! We've also enjoyed their stuffed peppers. But I'm amazed at the volume of merchandise that goes out the door every time we're there, morning, noon or night. I've also tried their cakes for big get togethers which are out of this world! The carrot cake I bought there was 2-3x the size in the grocery store for half the price....See MoreLouiseab
