I think pumpkin butter could be used anywhere a spiced pumpkin mixture is called for, so that would include muffins, quick breads, pies, bar cookies, etc. In that way it's almost a homemade "fast food". For example, this recipe would be easy to adapt: Walnut Bread and Pumpkin Butter Ingredients: 1 cup unbleached flour 3/4 cup all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 3/4 cup sugar 3/4 cups milk 1/4 cup walnut oil 1 large egg 1 Tablespoon lemon juice 1 teaspoon vanilla extract 1/2 cup chopped walnuts Pumpkin butter For Pumpkin Butter: 1/2 cup butter or margarine, softened 1/4 cup sifted powdered sugar 1/2 cup canned pumpkin 1/4 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg Walnut Bread: Combine flours, baking powder, salt and sugar in a large bowl; make a well in center of mixture. I have some tips as well. :O) I am a female type A 1.I saute in chicken broth my onions,cilantro,tomatoes and squash with my chicken,fish,shrimp or turkey. 2I make homemade hot sauce boil together then put in food processor.season to taste Also, you can hand cut tomatoes,peppers and onions to make a pico de gallo. season to taste 3.. turkey meatball- Make golf ball size balls. 1 15 oz tomato sauce,3 small tomatoes,1 small onion,1 green and 1 red bell pepper,1 tsp parsley,1 tsp garlic,1 tsp oregano,1tsp basil,2 packets splenda,2 egg whites and black pepper. mix all ingredients together and cook. My Kitchenaid makes cookies and cakes sooooo easy! I pre-measure everything and put it on paper plates and just dump each plate when the recipe tells me to. If I don't pre-measure, you can bet I will leave something out. Here are my favorite 2 recipes that everyone goes nuts (pun intended) for. Cookies: Oat-rageous Cookies 1/2 C shortening 1/2 C sugar 1/2 C brown sugar 1 egg 1 Tbsp water 1 tsp vanilla extract 1 C all purpose flour 1/2 tsp baking soda 1/2 tsp salt 1 C quick cooking oats 1 C semisweet chocolate chips 3/4 C cranberries 1/2 C chopped walnuts 1/2 C English toffee bits In a mixing bowl, cream shortening and sugars. Beat in egg, water and vanilla. Combine flour, baking soda and salt. Gradually add to the creamed mixture. Stir in remaining ingredients. *Drop by rounded Tbsp 2" apart onto ungreased baking sheets. **Bake at 375 for 10-12 minutes or until lightly browned. *I use a cookie scoop and get 32-36 cookies per batch. **I prefer to bake them at 365 for 15 minutes. ***I leave out the chocolate chips. Bundt Cake: Ingredients � 1 (18.25 ounce) package devil's food cake mix � 1 (5.9 ounce) package instant chocolate pudding mix � 1 cup sour cream � 1 cup vegetable oil � 4 eggs � 1/2 cup warm water � 2 cups semisweet chocolate chips Directions 1. Preheat oven to 350 degrees F (175 degrees C). 2. In a large bowl, mix together the cake and pudding mixes, sour cream, oil, beaten eggs and water. I clip coupons, but don't use them a lot. A lot are for unhealthy foods. Sometimes I do hit the motherlode and come up with quite a bit of savings particularly if I can get a couple of different newspapers worth of coupons and a sale. If you'd like more coupons, a good way is to sign up on-line for promotions. I use a separate e-mail specifically for this sort of thing. I sign up for coupons, freebies or anything that hits my fancy. I sometimes get some pretty good deals. You don't get a lot of junk mail from the legitimate businesses. Another good place to get good deals is to shop at Walgreens. They have a little booklet they put out each month. It has some coupons to be used in their store and also some rebates. I believe they also allow manufacturers coupons in addition to use of the store coupons. Thanks to them, I'm stocked up on adult toothpaste and toothbrushes and some other items. Check out manufacturer's web sites. I don't know if they still do this or not, but Kroger used to have it where you could go on-line and pick out which coupons you'd like to have mailed to you. It was for their brand only, but we got some pretty good deals. It also got us on their mailing list for other special promotions like $10 off. If you can find someone in another state to swap coupons, you may be able to double up on some deals because companies run different promotions in d ifferent states. For instance, you may find a buy one, get one free coupon in another state and your state got the $1 off coupon. Depending upon the deal, you may be able to use both coupons.
