what dish/food makes you think of Halloween/fall?

We're organizing a lunch at work, geared toward Halloween, or fall. Someone always asks me what to bring. I can think of pumpkin cookies, banana bread, anything with apples. I was considering bringing apples with caramel or peanutbutter dip, but I think we need "meal" suggestions. I thought about soup, but would need a vegetarian, maybe potato soup, or I could make an Italian tortellini soup without meat. Doesn't feel "fallish" to me though. I debated pumpkin soup, but have never eaten it, & since several are very picky, I'd probably do better with something more common. Any suggestions on a main course or side dish?

I just read your post on my thread. No apologies needed 'cause I think we all have the same cooking blahs! I want to get that grill going!! I'd brown the meat before putting it in the crockpot, saute some onion, garlic and green pepper (or whatever you have) in the drippings, add the soup to the onion mixture and dump on the meat. You could add herbs, spices or steak sauce or whatever to the soup. I'd just serve that over the rice and cook the veggies separately. Maybe just lots of the carrots. If you have frozen rolls or biscuits that'd be good too. Spring, PLEASE come soon and save us from our doldrums!

Pretty much all of the above. But for me, it is all the New England Fall food festivals. And, yes, they cover the usual Fall foods. We have a Chowder Fest in Connecticut, a bit late for us, here in Boston.. we have our Chowda Fest, oddly enough, in the summer. Rhode Island has a Seafood Fest that is mostly shellfish, oysters and clams. We have many apple and pumpkin Fests and even a cranberry Fest down the cape. As we should, we are the cranberry capital, I believe. But for pure hometown favorites type Fests, nothing beats the Marshmallow Fluff Fest... it's silly, just like the product. And ya gotta love the name.. wait for it... here it comes.. the "What the Fluff? Fest"! LOL! It just makes me smile. We invented Marshmallow Fluff (in Lynn, MA, right next door to where I now live in Revere) and made the infamous Fluffernutter a household name! LOL! I have to say that although I ate my fair share of Fluff as a kid, I always thought it a bit too sweet. My brothers and sisters were crazy about it and my great aunt Lil would come up with all manner of crazy Fluff recipes. All my siblings were ecstatic to find a Fluffernutter sandwich in their lunchbox. And even though I did, on occasion, enjoy a PB&J, and tolerated a Fluff and PB, AKA a Fluffernutter, I was most happy to find a lovely cream cheese and jelly in mine. I did, however, absolutely love, love, love the fudge made with with Fluff! Go figure... I mean, is there anything sweeter than fudge? I think the recipe is still on the jar of Fluff. Silly

dekeoboe I'm sorry, but I'm not sure where I found that particular picture any more. It was saved in my "storage" bookmarks but we decided not to use it b/c we decided to keep our dishes in upper cabs. It is possible that it was a UK only product b/c I know I found a bunch of things they have there that we don't that I am having shipped to cousins in Scotland and then sent over here. Sue, I could have written your list!! Also, the apple cider that Monica mentioned, root vegetables like parsnips, beets, and so on, chili, homemade soups, dried beans, tiny new potatoes.... We eat a ton of winter squash in the fall. I love to try every size and shape I can find. The old standby for a squash with seed cavity that you can stand upright is to bake it with butter, salt, and pepper in the middle, but I like to experiment with adding other things.. balsamic vinegar, red chili flakes, brown sugar, garlic.. I've also got where I usually cut the top off the squash and pre-cook it in the microwave for 15-18 minutes before moving it to the oven. They don't take all afternoon that way :-) Pumpkin bars and apple deserts are a MUST every fall. And roasted root vegetables... yummmmm.....

I think a nice dish of roasted fall veggies would be good too..
potatoes, yams, carrots, beets, squash, fennel...whatever you like.. cut to the same sizes, drizzled with EVOO, s&p and roast at 400F...till they test done.

Some good ideas! I was thinking soup, & Deanna mentioned homemade bread, I'm thinking I'll bring potato soup & homemade bread. Wish I hadn't broken my crock pot, but I have a microwave. The roasted veggies sound really good...definitely have some suggestions for others. Love the idea of hot cider too. I may have to just plan a menu & tell everyone what to bring, I've definitely got some cravings now.

Ah, yes, fall. Pork, apples, winter squashes, sauerkraut, soups, homemade bread (the dark peasant kind). Anything with pumpkin in it, turkey and dressing, pot roast, bean or split pea soup. Now I'm hungry.

I really like cream of potato soup but right now I'm hungry for split pea soup with some of Terri's honey wheat bread or those sweet potato biscuits Nancy (wizardnm) made last year when I stopped for dinner...

Corn pudding! I haven't thought about that, I love corn pudding. Sweet potatoes too. This is leading into my Thanksgiving dinner menu. I have to go back and look, somewhere yesterday I saw a recipe for pumpkin dip, I need to try that for the holidays.

Two of my favorite fall vegetarian soups---peanut soup and corn chowder. Both can be made 1 day ahead.

Peanut Soup
-----------
1T peanut oil
1 onion, halved, sliced
3 garlic cloves, minced
3T curry powder
4C chicken stock (I use veggie stock)
1/3C rice (uncooked)
3 carrots, peeled, sliced
1/2C creamy peanut butter
1 1/2t sugar
Chopped green onions and/or chopped cilantro

Heat oil in heavy saucepan over medium heat. Add onion, garlic and curry powder and sautÃ© until onion is translucent. Add 4C stock and bring to boil. Stir in rice and carrots. Reduce heat and simmer until rice is very tender, stirring occasionally, about 20 minutes.
Puree about half of soup in blender with peanut butter. Return puree to saucepan. Stir soup until heated through, thinning with more stock if desired; do not boil. Mix in sugar. Just before serving, garnish with green onions and cilantro.

Corn Chowder
------------
1/2 stick butter
1 small onion, chopped
1/2C diced red bell pepper
1/2C diced green bell pepper
1/2t ground cumin
1/4t cayenne pepper
1/4C all purpose flour
1C canned chicken/veggie broth
1C milk (don't use skim)
1 16- to 17-ounce can whole-kernel corn, drained, liquid reserved
Minced fresh cilantro (optional)

Melt butter in heavy saucepan over medium heat. Add onion and bell peppers, cumin & cayenne and sautÃ© about 8 mins. Add flour and stir 1 more minute. Gradually mix in broth, milk and reserved corn liquid. Bring mixture to boil, whisk until smooth. Mix in corn and stir until corn is just heated through. Ladle soup into bowls. Garnish with cilantro if desired and serve. (This is also good topped with sour cream and/or shredded cheddar cheese).

Mincemeat pie or Raisin Apple Walnut pie. Indian Pudding or other steamed puddings. Anything with pumpkin or squash. Thick and hardy chowders, soups and stews.
