Yet another AnnT scone question

Ann,

Have you ever made your scones savory vs. sweet? I have been giving marching orders to try to create a caramelized onion/gruyere cheese scone. It seems obvious to simply remove the sugar, but then I worry about the loss of moisture that the sugar would add.

Any tried and true suggestions before I start experimenting?
