Lisa, this is my favourite starter. It is a pure starter, made from just rye flour and water. Nothing else. Once you get it going and it is easy to keep. YOu just have to feed it occasionally. Once you get your starter active, you use it to make a biga or a levain and that is what you add to the French baguette recipe rather than yeast. For the Biga, I just add 2 ounces of starter to 1 1/2 cups of flour and a cup of water and let it develop overnight. Amy's bread This starter is begun with rye flour because rye just LOVES to ferment and is an easier starter to get going than a wheat starter. When I first made it, it had a bubble or two within a couple hours. The procedure is to start it with rye flour, then transform it by changing what you feed it. The original rye will dilute to nothing over time and you'll end up with a white flour (or whatever other grain you choose, it could be whole wheat or pumpermickel, or you could leave it as a rye starter) and water based starter, but it had the advantage of beginning it's life from highly fermentable rye flour. Start it with organic rye flour and spring water. Once you have it going well you can switch to all-purpose white (or other) flour as you choose. The use of spring water is recommended for maintenance, however, as tap water may contain elements (such as chlorine) which may be detrimental to the health of your starter. I also recommend that you use a container that you can mark the volume levels of starter each time, so that you will know when it has doubled. Use a marking pen or tape or any other means to indicate on the container the starter levels each time you feed. Phase 1 - Combine 2 oz organic rye flour (room temp) with 4 oz spring water in a clear container. The batter should be about the consistency of very thick pancake batter, add more water or flour if necessary. Cover & let it sit for 36 - 48 hours at 75 - 77 degrees (a little cooler is okay but over 80 you will incubate the wrong kind of bacteria and your culture will have an unpleasant bitter taste). You should start to see tiny bubbles forming after about 24 hours. By the time it has doubled, there will be a noticeable network of small bubbles throughout the batter & it will be foaming & bubbling on top. (If the batter has not doubled within 48 hours, feed with 2 oz water & 2 oz flour (add more of either if necessary for the consistency) and let it sit another 24 hours or until you see some definite activity.) Phase 2 - Stir the culture down, notice how soupy it's become. The batter should have a noticeable sour smell & a mildly tangy taste at this point. Add 2 oz water & 2 oz flour and stir vigorously until well-combined. Let it sit for 12 hours. It should be showing a fair amount of activity at this point. You should see lots of foaming & bubbling through the sides as well as on the top. Don't be concerned if the culture deflates & loses volume. This means the yeast has exhausted its food supply, but it will continue to increase in acidity. Don't worry if your culture isn't dramatically active yet. As long as there is some noticeable activity going on and the mixture smells & tastes sour, you're on the right track. Phase 3 - The culture should now have a pronounced, sour, fruity taste and smell, it should not taste musty or bitter (if it does, discard and start again, paying close attention to the temp of the culture at all times). Now you can start "transforming" it into a white (or other) flour based starter. Use 6 oz of the starter, add 3 oz water & 3 oz flour, stir vigorously. Let it sit for 12 hrs at 75 - 77 degrees F. Refresh it again, setting up a maintenance level of 12 oz of starter. This will be your "mother" starter that you use to build the sourdough starters/sponges needed in individual recipes. Each time you take part of the mother out to build a starter, you must refresh it with equal weights of flour and water to bring it back up to its maintenance level. To maintain - Use 6 oz of the mother culture (discard the rest), add 3 oz water & 3 oz flour, stir vigorously, let it sit at room temp until doubled in volume. A strong mother will double in 8-12 hours. If yours doesn't do that, let it continue to sit out until it has a nice tangy taste and smell; discard all but 6 oz and repeat this procedure. Repeat this procedure as many times as necessary until the mother doubles within 8-12 hrs. It may take several days. Don't get discouraged, it's worth the effort. To use for recipes - Combine 1/2 c (5 oz) Mother from the refrigerator, add 3 oz flour and 2.5 oz warm water (85 - 90 degrees). The mixture will be stiffer than the mother. Let it sit, covered, until doubled in volume (if it doesn't do so go back to maintenance procedure). When the starter has doubled, it is ready to use in a recipe. Measure the amount needed and discard any that remains.

1. They are all quick breads which require low-gluten flour/s and little mixing. They all depend on the fat to shorten the gluten strands. 2. Scones vary widely in texture, shape, size, and flavor. They can vary from (soft) cookielike to cakelike in texture and from savory to sweet in flavor. Making them is similar to making biscuits. Scones can be rolled, shaped, or dropped, but the mixing method is about the same. Scones contain eggs as well as milk or cream, which makes them richer than biscuits. They may also contain pieces of dried fruits, unlike biscuits. a. Mix the dry ingredients together. b. Cut the chilled butter into the dry ingredients - this is done to shorten the gluten in the flour. Everywhere the butter coats the flour, the liquid will not be able to be absorbed by the flour, thus making short, or shortening, the strands of gluten. If the fat is cold and the mixture resembles a coarse meal, this will contribute to a flaky texture. c. Mix the liquid ingredients together (beat the egg lightly and add the milk/cream) and any other liquid ingredients, and add all at once to the dry ingredients, then stir to combine. Some recipes call for a little kneading to help develop the gluten, but avoid overkneading the dough because this will produce a tough scone. d. Judge the recipe... A high butter or sugar content in the dough will help inhibit the formation of gluten and produce a more tender product. 3. BISCUITS also rely on the fat for shortening the gluten formation. The method of mixing is similar to scones. There is less liquid in biscuits than most scones and biscuit dough usually requires a little kneading to develop the gluten because of the lack of liquid. a. The dough is then rolled. A thickness of 1/4-inch for plain biscuits, 1/2 inch or less for tea biscuits, and 1 inch or more for shortcake. Then it is cut into rounds or squares. b. Drop biscuits have more liquid than cut biscuits. 4. MUFFINS - The ratio of liquid to flour is higher than either scones or biscuits. The batter needs to be placed in a pan that forms the muffin, unlike scones/biscuits which will hold their shape once free formed or cut to form. a. There are two types of mixing methods for muffins. b. Traditional muffin-making: all the steps are geared to minimize mixing, and therefore gluten formation in the flour. The fat is most often in liquid form, either melted shortening or an oil. It's usually mixed with eggs and the liquids, then added all at once to the dry ingredients. Since fat affects tenderness, muffins with a high fat content not only taste rich, they also have a soft crumb. c. Stir muffin batter only until the dry ingredients are lightly moistened (NO ELECTRIC MIXERS PLEASE, or you'll end up with tunnels inside from overmixing). The batter SHOULD be lumpy as it's spooned into the muffin pans - even to the point some bits of dry ingredients are still remaining in the batter. d. Muffins made by creaming fat and sugar will be more tender, but they are also more cakelike. This is the second mixing method. -Grainlady

Primer: Pre-ferment is a method by which a small dough is made of yeast, flour and water, to develop the activity and flavor of the yeast, usually overnight. "Ferment" refers to the yeast activity in the final bread dough. Biga (Italian) and levain (French) are pre-ferments. Usually, however not exclusively, bigas are made with commercial yeast, and levains are made with sourdough starter or saved levain starter. Those distinctions refer to the origins of the words. Many bakers use the words interchangeably. If you're not sure, just say "pre-ferment" and you're covered. Similarly, banneton, a woven basket, usually lined with cloth (French) and brotform, a coiled basket, less often lined with cloth (German) are used interchangeably for both types. In English, you can say "bread form" or "dough basket". Many people say "proofing basket", but I don't care for the word "proof" as a synonym for "rise". I'm not old, but I remember proving cake yeast before dry yeast was stable, but fresh yeast could have died. The yeast was proven (i.e., "proofed"), when the biga rose. The rises of the main dough were a given unless something really bad happened. Nowadays, people just toss in dried yeast and expect it to rise, and it does, so they proof in the baskets. This is a persnickety quibble that has no real meaning to anyone but me. :) Hydration refers to the weight of water in the dough based on the amount of flour, and is usually expressed as a percentage. The flour is always 100%. If there are different flours in the dough, then they have partial percentages, e.g., 95% unbleached white flour and 5% whole wheat (a substitute for European style bread flour). Add them up and they equal 100% because the flour is always 100%. This allows one to discuss, clearly, the amount of water in the dough, which can be more useful than adjectives such as loose, wet, sticky, tight, tacky, etc. If you have 1000g total of flour in your dough, and your recipe calls for 68% hydration, you would use 680g of water. If you have 650g of white flour, 120g of whole wheat, and 30g of rye flour, for a total of 800g flour, 68% hydration would mean 544g of water. These percentages really only apply to what's in the bowl. When you do your stretch and folds on additional flour, you're changing the percentage. When you wet your hands to do them, you're also changing the percentage. So they make it easier to talk about baking, but every baker is still going to have slightly different results. Factor in environment--flour absorbs humidity from the air, and also releases it and dries out. It also has a fat component, though much less with white flour, especially bleached. (Put your white flour in a half full, air tight container for a year (i.e., trapping in some air so oxidation will take place), and even the bleached stuff will smell rancid when you open it up (personal experience talking).) If you oil your surfaces, hands, etc., a trace of oil can also be added, mostly negligible, but sometimes a few drops can make a big difference. With all of those factors, as well, the percentages refer to the basic recipe, and the rest is whatever works for you. Like S&P to taste. Experience is king. Repetition is important. Getting a feel for it is crucial.

I’ve had my instant pot for about two years and though it was a LONG learning curve, I use it repetitively for things I like. As an aside, if you’re in the honeymoon phase check out the community facebook page for instant pot owners. A couple of things I learned along the way: Thickness matters. I don’t know why it took me so long to understand this concept; that it isn’t necessarily how many pounds of meat but also how thick. Lorna Sass, aka Queen of Pressure Cooking, in fact highlights this fact in her "Pressure Perfect", as does an exhaustive cooking blog pressurecookrecipes. When I make barbacoa now, I actually have written how thick my pieces are to correlate with the correct time. Take notes if you want to replicate (which is kind of the way I cook at this point). I have my brown rice down to a science for what I like (grams of brown rice, rinsed, water, bit of olive oil, time, npr#) . I just made black-eyed peas (see Hoppin Johnthread) and it took me two tries to get them the way I like. If you need to cook a bit longer, you can repressurize. I found if you rinse your lid in cold water, the lid will go back easily. If you want your vegetables to retain some structure (some tooth) in your soup or stew, you may not want to cook them in your pressure cooker with your soup or stew. Often times when I’m making minestrone,ribollita, stew, etc., I’ll keep out some of the carrots, zucchini, etc. after sauteeing (or I’ll microwave them separately), refrigerate and add when I open the lid. The ones left in the soup or stew add to the flavor. If potatoes are used, I do them separately for four minutes and add at end. I’ll also reseason at the end cause I’ve think herbs can become muted. Lastly, I have to share kind of cheez whiz confession. My son and I absolutely love the pasta with jarred sauce in the pressure cooker. You know the one – pasta mixed with jar of sauce, jar of water for half the time? Good grief, I it is like an adult version of spaghettios, and I love it. So, I wrote down the exact amounts and time:) Bottom line: when you hit that sweet spot, the food is really exceptional; it just took me a long time to find it. PS – I may have to go back to that honeymoon phase cause folks are posting about using yogurt setting to proof dough:)
