Why I can't can salsa

So I started with the famous Annie's salsa recipe as dh and ds declared it a hit. Gathered the hundreds of tomatoes still taking over the garden, harvested a couple of onions and misc. peppers and cilantro... so far so good...

Then I just went off track adding this and that and tasting and retasting, and decided to skip the tomato paste and sauce... And then I gave some to the neighbors, and then dh and ds started munching, and then I thought I could take a bowl of it to a dinner party tonight.

And now the recipe is completely off the cuff -- which tastes pretty good but I have no idea if it's canning safe any more -- and it doesn't matter any way, because now there's not enough to can.

Oh well, there'll be another batch of tomatoes ripe next week. Maybe I'll try again...

I might just not have the discipline for this one. Maybe it's because I know we'll have tomatoes ripening till Christmas.
