Two favorite recipes I created when I had too much of everything coming all at once. Both are family favorites. ZUCCHINI POTATO SAUTE ¼ Pound Bacon, diced 2 Cups Diced Potatoes, ½" dice 1 Medium Onion, minced 6 Cloves Garlic, finely minced 1 Medium Zucchini, ½" dice 1 Medium Green Pepper, seeded and diced 4 Ounces sliced Fresh Mushrooms 6 Plum Tomatoes, diced, keep the seeds and juice Butter and Olive Oil for sautéing In a large frying pan, add the Bacon and sauté until fat is starting to render. Add the Potatoes and cook over medium heat, covered until Potatoes begin to get tender. Add Onions and Garlic and sauté only until Onion just starts to go clear. Pour into a bowl and cover to keep warm. In the same pan add a swirl of Olive Oil and sauté the Zucchini and Mushrooms uncovered over high heat, until they begin to color up but is still al dente. Reduce heat, add the Potato Onion mixture back in. Add the Peppers and stir to combine. Season with MortonÂs NatureÂs Seasons, add 2 tablespoons Butter to moisten. Heat until the Peppers become just tender, add the Tomatoes, cover and turn off the heat. Let stand 5 minutes and stir to combine. Serve immediately. and: ZUCCHINI FETA PANCAKES 1 Pound Zucchini, grated. 1 Teaspoon Kosher Salt ¾ Cup crumbled Feta Cheese 3 Large Eggs, lightly beaten 3 Green Onions, tops and whites thinly sliced 1 Cup All-purpose Flour ¼ Cup Chopped Pine Nuts 3 Tablespoon Chopped Fresh Dill 3 Teaspoons Chopped Fresh Oregano 4 Garlic Cloves, finely minced ¼ Teaspoon freshly ground Black Pepper Olive Oil, for frying Combine Zucchini and Salt in a mesh colander and set aside. Rinse in cold water and press as much of the water out as possible. In the mean time, combine Cheese, Eggs, Green Onion, Pine Nuts, Dill, Oregano, Garlic and Pepper in a large bowl. Fold in drained Zucchini and just enough Flour to hold the batter together. Using an ice cream scoop to portion the batter, fry in Olive Oil until golden, flip and cook the other side. Continue frying in batches until all batter is used, holding the cooked cakes on a plate in a warm oven. For the pancakes I shred and pack one pound bags and freeze them for use in the winter. Because so much of the water goes away when you thaw and drain I use 2 bags. Also go easy on the flour, you really want just enough to bind the mixture, not to make a batter.

Lars, I have made this casserole and can vouch that it is, to use a much overused word, fabulous. Not only is it good but one of the nice things it can be made ahead and no crust required. I tried to copy the picture with no success. I did not change anything about the recipe although I was tempted to add the green chilies. When I make it again I might just add them. Hard to improve on excellent, though! Lydia's Baked Eggs & Cheese Casserole A "Best of" Inn Cuisine, recipe adapted from the Starbuck Inn Bed & Breakfast of Kent, Connecticut �5 large eggs �1/2 cup milk �1 teaspoon granulated sugar �8 ounces (2 cups) Monterey Jack or Muenster cheese �2 ounces cream cheese, cubed �8 ounces small curd, low-fat cottage cheese �2 tablespoons unsalted butter, cut into small cubes �1/4 cup all-purpose flour �1/2 teaspoon baking powder �pinch of fresh chives �salt and fresh-ground black pepper to taste �optional - 1 small can of diced green chiles, a dash of crushed red pepper, or a handful of your favorite roasted veggies Thoroughly spray a 1.5-quart casserole dish with non-stick cooking spray. Preheat oven to 325 degrees F. In a large mixing bowl, whisk together eggs, milk and sugar. Add the 3 cheeses and the butter, whisking well. Add the flour, baking powder, chives, salt, pepper and optional ingredients (if desired) and whisk or stir gently to combine. Pour mixture in the greased 1.5-quart casserole dish and place in a 325 degree F oven for approximately 45 minutes (begin checking at about 40 minutes and cook until center is set and knife inserted in center comes out clean). Note: This casserole may be assembled ahead of time (up to 1 day in advance if covered tightly with wrap) and refrigerated until baking. Remove wrap, allow casserole dish to warm at room temperature for about 15 minutes, then bake in a preheated 325 degree F oven for approximately 60 minutes if casserole goes into the oven pre-chilled. Yield: serves 6-8

I love quiche, but I don't like all the fat, calories, and sodium that usually goes with it. Here is a recipe for quiche that is yummy and uses lots of what is in your summer vegetable and herb garden. Enjoy! Summer Squash Quiche 10 servings 297 calories per serving 12.4 grams fat, 6.6 grams saturated fat, protein 12.5 grams, sodium 191 mg 2 cups brown rice cooled 4 eggs 2 cups cheddar cheese 1 small yellow squash seeded and chopped 1 small zucchini shredded 1 small onion finely chopped 3/4 cup 1% milk 1 cup cream 1 tablespoon Italian seasoning 2 sprigs rosemary 1 large tomato finely sliced 6 basil leaves (or more) finely chopped Directions: Preheat oven to 400 degrees Lightly grease bottom of 10 inch pie dish Place brown rice in a mixing bowl and add one egg white (Save yolk). Mix together well and spread evenly on the bottom of the pie dish. Place in oven for 10 minutes. Take out when done and let cool. Heat oven to 400 degrees. Steam squash and onion. Drain completely and set aside. In a large mixing bowl add: 2 cups cheddar cheese. I shred 4 ounces of sharp cheddar and add about one cup of a Mexican cheese blend. Add the 3 whole eggs and the saved egg yolk. Add spices and mix well. Pour cooked veggies into bowl and mix. Pour the milk and cream in and mix. Pour mixture into pie dish and spread evenly over the rice crust. Take sliced tomato and arrange in a pattern on top of mixture. Place quiche into oven at 400 degrees and cook for 15 minutes. Turn oven down to 375 degrees and cook for an additional 35-40minutes. Remove when done and let stand for 10 minutes before slicing. **It is better if it sits overnight in the refrigerator and is reheated the next day.

So glad you brought this up. Day before yesterday I got a call from a high school classmate who lives in California and she said she was getting ready to make a quiche. Well, that got my saliva glands working. Yesterday was shopping day and I bought additional cheeses, broccoli, asparagus and ham. Guess who is going to make quiche today. Madonna
