New hardwood floors...for an 1890's kitchen?

We are in the final stages of our kitchen demolition in our old farmhouse, and are a little worried that the old hardwood floors, underneath layers of linoleum and tile, won't be able to be refinished. So, just to be safe, I'm working on Plan B.

If you absolutely HAD to get new hardwood floors for an old house, what would you get?

I'm so worried that a new floor will look so out-of-place...help!!
