FINALLY! Meatloaf Success

CONFESSION: I can't make meatloaf. For years I have been making meatloaf that we have come use to eating with a spoon, like loose meat. Last night I actually cut it into slices and we ate it with a fork! DH even noticed and remarked "hey, I cut this meatloaf".

Basically I POOPed (pulled out of pantry). I don't know if I could replicate it as far as measurements because I just threw ingredients in the bowl so I guess it was dumb luck.
2 pounds meatloaf mix (pork and beef)

1 cup panko

2 eggs

seasoning (celery seed, parsley, thyme, pepper, salt)

remains of red wine about 1/2 cup

remains of chili sauce-maybe 1/3 cup

diced sweet onion

diced jarred roasted red pepper

Bake at 350 until temp reaches 155 about 45 minutes.

Glaze:

1/4 cup ketchup

1/4 cup balsamic glaze

Mix and spread half on top of meatloaf before putting in oven. Spread the rest of the glaze 15 mins before taking out of oven.
