Dietary changes...ideas needed

I decided to try accupuncture to treat my RA. Let's hope it brings some relief.

Unfortunately as we discussed my condition in relation to my overall health, the therapist recommended I take a break from chicken and cut WAY back on dairy. Since red meat causes inflammation I already try to avoid it when possible.

So let's see...no red meat, no chicken, no dairy. I think I need help here!

I love salmon and fish, but I don't want to tire of them. I love veggies but I am just not cut out to be a vegetarian! LOL

How can I still get variety in my meal planning with these current (and hopefully temporary) restrictions?

So far I have come up with stir fry and salads. I will eat salmon, I love it, but Tim doesn't like it. He'll eat walleye, shrimp and crab (oh and tuna from a can....).

Veggie and/or fish based meal ideas welcome! I hate tofu, I like beans but they don't like me so I eat them when I know I don't have to go anywhere! LOL
