Celery broth - What would you make?

My cousin had an overstuffed gallon plastic bag of celery sticks that she had cleaned and cut up to refill a crudite platter at her picnic but didnÂt use so I took them home with the intention of making cream of celery soup. I dumped them in a pot, covered them with chicken broth, added a chopped onion, leek, parsley and some PenzeyÂs fines herbes and simmered them until soft.

When I went to puree them with a stick blender, some of the celery was so stringy that the blender was having trouble going through the mixture. (IÂve never had that happen before.) My first thought was to transfer it to my regular blender but instead, I smashed it with a potato masher and then strained it through a colander. I tossed the vegetable remnants into the compost pile.

So now I have two quarts of this intensely flavorful celery broth. What would you make with it?
