Speaking of Peanut Butter Pie

I know some of you are not buying PB now and I understand that.

I was reminded of the very best PB Pie and thought I would share it for those who might like it.

This is a really old recipe that I got many years ago from the manager of the lunch counter at the old Newberry's Dime store. She made the pies.

1 baked pie crust

½ cup powdered (10X) sugar

¼ cup peanut butter

¼ cup cornstarch

2/3 cup sugar

¼ tsp salt

2 cups scalded milk

3 egg yolks, beaten

2 Tbls butter

¼ tsp vanilla

*Use the egg whites for the meringue.

Combine powdered sugar and peanut butter. Blend til like biscuit mix. Spread half over pie crust.

Mix cornstarch, sugar and salt, add milk and mix well. Pour small amount over beaten yolks, mix and return to milk mixture.

Cook til thick, add butter and vanilla. Pour into shell. Cool. Top with meringue and sprinkle remainder of peanut butter mixture over meringue.

Bake at 350° til lightly browned.
