Speaking of peanut butter.

We don't eat allot of it but I do like it on toast with some honey over the weekends and hubby likes a breakfast sandwich of peanut butter and bologna. Thought I'd get a jump on the price increase just around the corner, went shopping on Friday night and to my dismay the Skippy I usually purchase at $1.99 was now $3.59. I was appalled. I'm not a mom but how on earth are they supposed to be able to afford this stuff. And yes, all the very large jars were gone.

Yep, it's getting ridiculous. Last jar I bought was Save A Lot brand. I can't tell the difference between it and Skippy. I don't like most other brands because they're too sweet. I happen to be eating some peanut butter and crackers right now....

Someone posted at the KT recently that peanut butter was going to rise in price soon. I like natural peanut butter (peanuts and salt the only ingredients), and stocked up on Smucker's last week--on sale for $2.50.

One of the first KT gatherings was here in B'ham. Country Bumpkin brought two of these and very tasty! Quick & Easy Peanut Butter Pie 1 graham cracker crust 1/3 cup peanut butter 1 cup confectioner's sugar 4 oz. softened cream cheese 8 oz. Cool Whip chopped peanuts (optional) Mix all ingredients, except peanuts, until well blended. Pour into graham cracker crust and sprinkle with chopped peanuts. Chill about 2 hours before serving.

This is Marilyn's recipe and it is VERY good! Salted Peanut Bars (The flavor of a Pay Day candy bar.) 1 1/2 cups all purpose flour 2/3 cup firmly packed brown sugar 1/2 teaspoon baking powder 1/2 teaspoon salt 1/4 teaspoon baking soda 1/4 + 1/4 cup butter, softened 1 teaspoon vanilla 2 egg yolks 3 cups miniature marshmallows 2/3 cup corn syrup 2 teaspoons vanilla 1 (10-oz.) pkg. ReeceÂs peanut butter chips 1 (16-oz.) can salted, dry roasted peanuts Heat oven to 350Â°. In large bowl, combine flour, brown sugar, baking powder, salt, baking soda, 1/2 cup softened butter, 1 teaspoon vanilla, and egg yolks until crumbly. Press firmly in bottom of ungreased 9X13X2-inch baking pan. Bake for 12 to 15 minutes or until lightly browned. Remove from oven and immediately sprinkle with marshmallows. Return to oven and bake an additional 1 or 2 minutes until marshmallows just begin to puff. Cool while preparing topping. In a large saucepan, combine corn syrup, 1/4 cup butter, vanilla and peanut butter chips. Over low heat melt just until chips are melted and mixture is smooth, stirring constantly. I do not understand your love of peanut butter - perhaps you can explain it. I have not bought peanut butter since I was in my 20s and bought it at a health food store. I do not remember ever liking it, even then, although at one time I used to buy dry roasted peanuts to add to certain Chinese stir-fry dishes, but I quickly switched to cashews. I have only bought peanut oil once and got rid of it because of its flavor - I expected it to be neutral - it is not. I do buy cashew butter and almond butter (but rarely), and perhaps these might work for you as substitutes. I do not hate peanut butter or peanuts, but I do love cashews, almonds, hazelnuts, pecans, Brazil nuts, etc and therefore have no interest in peanuts. I think I was turned off by supermarket peanut butter from when I was a child, and I always felt sorry for children in my elementary school who had to eat peanut butter sandwiches for lunch. I have a somewhat similar experience to yours with tahini, which I store in the fridge after opening with the container upside down. When I open it, the oil is on top, and I stir it back in with a knife honing rod - wooden spoons would break.

I bought some the other day and it was almost $6 for a 15 oz jar. This is southern Cali so it's a little inflated anyway but I was still shocked. Good thing I don't eat much of it!

If you have a food processor, you can easily make your own pure peanut butter and it's GOOD!

Be very careful making your own--you need a really good, heavy duty appliance, or you'll burn the motor up (ask me how I know--LOL!).

A couple weeks ago I bought a jar of JIF, my favorite brand. I didn't notice anything different on the label; the price was $2.85.

My neighbor had given me a dish of Peanut Butter Parfait, which was really good and I got the recipe from her.

Saturday I made the Parfait. At first bite I knew something was wrong. I got the jar and looked at the label. In small print it did say lower sodium, 35% less sugar*.

I know some of you will think that is a good thing, but I don't. I do like my sweets and at my age I'm not concerned about all that. And I'm not fat or obese. {{gwi:1472708}}

The Parfait was good, but not as good as if I had had the other peanut butter.

*That may not be exactly what it said; I've already given the whole jar, minus 3 Tbls away. I'll be getting another of the old kind next time I'm shopping.

Publix still has Skippy on sale for $1.99. I have a big jar of Jif, but bought the Skippy since PB is going up.

There was a story on the news tonight about peanut butter. They said the due to the severe droughts in some areas and flooding in other areas about 75% of the peanut crop was lost. They said that on the wholesale peanuts were selling or $350/ton last year, but this year they are up to $1400/ton. Is it any wonder the price of peanut butter has gone up? Its great news for the farmers who saved their crop, but sadly its gonna be lean year for the ones who lost their crops.
