Someone died...

I know...I am getting callous.

But I have another funeral lunch on tuesday. Request was for chicken salad....not sandwiches.

Going to cook (poach) 15 pounds of boneless chicken....then make a salad.

My thoughts are a light curry....mayo with lemon and lime added....and some curry and ginger....mixed with diced chicken, celery and pineapple tidbits.

What else could I add that would be both economical and pleasing to all...no nuts ( although I think it cries for almonds)...apple bits? golden raisins? Craisins?....I hesitate to use grapes because there will be lots of grapes in the fruit salad.

I am really "chickened out"....but what do I do?
