Hors d'oeuvres only wedding reception

I've been asked to put together food for a friend's wedding reception. She wants to do an hors d'oeuvres only reception -- against my advice. I could be wrong, but at 3pm, it seems to me that people will be hungry and will eat appetizers like they are dinner. So, other then using small plates -- any other ideas?

Some of the food that we've discussed:

Fruit and veggie tray with dip

Shrimp tray

Mini quiches

Pita-type wraps cut into 1/2 or 1/3s

Mini egg rolls

Cheese/crackers

Trail mix for the tables

Guest list will be about 85 -- including 25 kids. I've never been good at estimating and tend to always have too much food. Is there a good rule of thumb for this type of food?

Any suggestions about any of this would be MUCH appreciated. Thanks!
