Cooking For Ulcer Recovery

Daughter-San has been in the hospital since Saturday, for a suspected ulcer. I have learned a lot about this disease; most of what I originally thought, was wrong. Here is a link to an article about ulcers if you're interested. http://www.gihealth.com/html/education/ulcers.html

Anyway, she will hopefully be discharged tomorrow and we will have to be careful with her food for a week or more. It is possible that she'll be able to tolerate hot peppers and espresso right off the bat, but I'm going to cautiously assume that I need to prepare "ulcer-friendly" food for a while. An article outlining what she may need to avoid is here http://www.drugs.com/cg/diet-for-ulcers-and-gastritis.html and I'll summarize the recommendations as

Yes to:
"fruits, vegetables, whole grains, and fat-free or low-fat dairy foods. Whole grains include whole-wheat breads, cereals, pasta, and brown rice. Choose lean meats, poultry (chicken and turkey), fish, beans, eggs, and nuts. A healthy meal plan is low in unhealthy fats, salt, and added sugar. "

No to:
Coffee, tea, cola, alcohol, milk, cream, cocoa
Onion, garlic, pepper, tomato, strong spices
Fatty seasoned meats

Well, life might still be worth living on the most vigilant ulcer-friendly diet . . . might be . . . we'll find out.

Here is my question. What is one dish that you would make if you were in my shoes for the coming week, that adheres fully to the restrictions listed above, and doesn't require great skill, patience, or unusual ingredients?
