Growing up did you have a particular dish ...

on a particular day, consistently?

We never did. When I was about 12 or 13 I met a great aunt who lived on a farm back in Missouri. (Was born there, but moved to California as an infant) Every Sunday was fried chicken (that had been running the yard that morning), mashed potatoes and gravy, corn on the cob, a ton of plates of fresh vegetables out of the garden, several pies and assorted cakes. Every. Single. Sunday.

Helping clear the big farm table after the meal, every single thing left on a dish went straight into the trash! I was flabbergasted!! Those leftovers would have feed our little family of four for two weeks! Great Uncle would not touch leftovers! (Oddly enough, I don't eat them now!)

Saturday night was the only night we consistently had the same dinner and we did for years!

Every Saturday night my Mom would make spaghetti. We would eat it siting on the living room floor, eating off the coffee table, (newspapers and then a table cloth over the carpet) watching Tarzan.

It was so special! Not just the spaghetti but eating in the living room watching TV!!!!

I don't remember when I was really young but from about the age of 12 or 13 every Sunday we had roast chicken, stuffing, mashed potatoes, gravy, green beans, corn, and some type of fresh fruit (lived in CA). Dessert was always a pie of some sort. My parents were of the "Chicken in Every Pot" generation & my Dad expressed pride every week that we had a chicken. It was always a "production" meal. I suspect there were many years earlier in their marriage when there was no weekly chicken. My oldest sister was born in '37 but I didn't come along until the '50s and by that time Dad was well into upper middle class yet that chicken phrase stayed with him for life.

We ordered a valance to connect the cabinets on either side of the window. The contractor and I agree that it's superfluous. It hides the nice light. We have a left over 12" cabinet and a 6" spice cabinet when plans changed. Hoping to use them elsewhere - maybe a workshop. There is a whopping re-stocking fee with KM, not to mention the energy of re-packaging and carting them to HD. We have an extra sink base for a farm sink but it was free with the order. We found we didn't like farm sinks so ordered another sink base that we had to pay for. KM was not interested in taking the other back and replacing it with a regular sink base. We bought a light that was 15" in diameter which was huge for the space. We were able to return that one though because they stocked it at the lighting store. Found an 11" diameter light at Lowes that I love. I have found that things like lights are very large and it is hard to judge by a picture even though they tell you the measurements. Everyone else has a mansion who could actually use them. Our other lights are Hinkley and Kitchler. They are big but look OK. We have an extra $5 light we bought on clearance for the lavette in the interim for when we found one we liked. Then we found one very soon after. It's really a mini chandelier that we took the chain off to 1 link. It's adorable with the glass crystals. The lavette is kind of victorian looking. We have an extra wall sconce that was for the hall way but it is really too big. We'll re-purpose that for the floor to ceiling chimney that already has an outlet for a sconce. We were going to rebrick but it looks good there. By and large we don't have much bought but not used stuff. We do have lots of extra boards and micellaneous stuff that the designer had us purchase but were unnecessary for the remodel. Where his mind was at I cannot tell you. We will wait for the end of install and take it all back to HD and INSIST that we get full price back for all the design errors. We have soft-close drawers and love them.

Growing Up Did You Eat Casseroles?
Q
Comments (102)
There's absolutely NOTHING wrong with making casseroles! It's one of the economical bonuses on a tight food budget, and a way to use small amounts of foods that might otherwise go to waste. (As we all know, wasted food is the most expensive food we buy.) Here's what I teach in nutrition classes about casseroles and other mixed foods items (like pizza, tacos, stir-fry, and fusion bowls). It's not volume, it's nutrition and the number of servings within the mixed-ingredient meal. Just because the ingredients are combined doesn't mean you don't count them towards your daily requirements of servings for each food group for the day.... Nor are casseroles an excuse to over-eat because you make large portions using cheap ingredients. To be economical: "Stretch" an expensive protein (meat) with a low-costing protein (eggs, beans, dairy, peas, lentils, whole grains like amaranth/quinoa, nuts, plant proteins like seitan and leafy greens, even protein powders...); NOT more grains/starches in the form of pasta, rice, tortillas, and fillers like high-sodium condensed soup - with just a token amount of protein per serving. Most people consume far too many servings of grains/starches as it is. Especially those that are typically empty calories, highly-processed, low-in fiber, high-glycemic, and void of nutrition. Examples: I serve a small 1/2 serving of chicken (about 1- to 1-1/2 oz. - a small tenderloin or a small chicken leg) with white cannellini beans for the remainder of the protein serving. A nice example of a recipe I did this with is "Tuscan Rosemary Chicken and White Beans" (http://www.bettycrocker.com/recipes/tuscan-rosemary-chicken-and-white-beans/854e2207-1eb9-43e9-a118-0301f615cc05). I use smaller portions of meat and increase the vegetables. Tuna salad - add hard cooked eggs and/or cannellini beans to the mixture as high-protein extenders to get more servings of protein. Before going gluten-free, I would mix homemade gluten, ground (aka "wheat meat" or seitan) 50/50 with any kind of ground meat as a high-protein, plant-based meat extender. Food-for-thought: Tuna is NOT an inexpensive protein when you figure the cost by the pound. A 5-oz. can of tuna that costs 69-cents = $2.21 (rounded up) per pound. If you spend $1.19 per can = $3.81 per pound (rounded up) A serving of protein is 2-3 ounces and the suggested amount is two servings of protein per day (whether from meat or alternative non-meat protein sources). Therefore, a 5-oz. can of tuna is 2.5 servings of protein. So you need to build your casserole to meet your daily requirements from all the food groups. Each serving of tuna and noodle, or tuna and rice casserole, should have at least 1- to 2-ounces of tuna and/or protein alternative in it (depending on the number of servings of protein it needs to meet for the day), and 1 oz. of starch (1/2 c. of cooked rice or pasta) per serving of grain/starch you need for the day. It's suggested by the USDA MY PLATE we consume at least 6 (1-oz.) servings of grains/starches each day. I follow the old "Basic-4" and consume 4 servings of grains each day because I gain weight eating more than that. In general, 1 ounce of meat, poultry or fish, ¼ cup cooked beans, 1 egg, 1 tablespoon of peanut butter, or ½ ounce of nuts or seeds can be considered as 1 ounce-equivalent from the Protein Foods Group. - See more at: http://www.choosemyplate.gov/protein-foods#sthash.0TkMWywO.dpuf -Grainlady

Did you share a room with siblings while growing up?
Q

I had a friend back in grade school who went to the same church as I did with my family, she had 4 sisters and the oldest 3 would rotate who got their own bedroom each year and the rest were in bunks in another bedroom while parents had their own as well (of course). I only had a brother and we both had our own room. My mom was born in Houston in 1946, my dad born in California in 1945 - her family moved out here (California) when she and her twin were 5 years old and pretty much all on both sides except for my immediate family (brother had been living there since 1996 then my parents left for Nebraska in 2007) has continued to reside in California. But we're all basically what one would think of as the definition of "nuclear family" - I have an aunt and an uncle through my mom's side and an uncle on my dad's. My maternal uncle had 3 kids, my aunt had two, my paternal uncle had 2 kids from one marriage and one kid from his second. I remember when my brother left our parents house for air force basic training, his old bedroom was turned into a home office within 24 hours - I think my mom was happy that the computer could finally be set up somewhere other than their bedroom!

Growing Up, Did You Have Your Own Room?
Q

I didn't have my own room until I was around 21 years old. We had a 2 bedroom house with 7 kids. When I was little we had 2 sets of bunk beds that 5 of us shared, my youngest brother was with my parents in a crib in their room, my olderst sister was living in Toronto and I shared a bunk with my next oldest sister. Then the older boys moved upstairs into the unfinished attic. My Dad cut a hole in the sub floor to bring up the warm air from below. I then shared with my sister Lizzie, and my youngest brother. Then Paul joined the rest of the boys upstairs so that left Lizzie and I, she had the lower bunk and I was up top. She used to talk in her sleep and it was so funny. I would lean down and try to talk to her to see what gibberish she would say. I then had a bedroom to myself for a very short time when my sister moved out. My sister got pregnant and moved back home and I shared a bedroom again with her and the baby until my niece was 2 then my sister got her own apartment. I only had the room to myself for 2 years then I moved out West. My parents had split up and my brother moved in with his girlfriend so and I was having a hard time finding an apartment of my own because there were literally no vacancies where I lived and I was sharing apartments and houses with people that were heavily into the drug culture and I was starting to feel unsafe so my brother talked me into leaving my wonderful job and moving back home and my Dad let me have the house, rent free. Then a few years later my Mom moved back in. I live in the same house, gloriously alone with a dog and cat.

Every Sunday was soup day. Mom alternated - beef soup and chicken soup. She was the absolute best cook out of all my friends' moms - everyone always wanted to eat at my house.

Holidays were the only time we always had the same thing. Always.

Easter-ham, scalloped potatoes, asparagus, lemon meringue pie

4th of July- Grilled something ( my parents practically never grilled so grilling was a Big event), blueberry muffins, corn on the cob, macaroni salad w/tiny shrimp

Dad's birthday- boiled shrimp with 2 dipping sauces, baked potatoes, salad, Angel Food cake, a bunch of vegetables

Thanksgiving- what do you think?

Christmas Eve- lasagne, salad, garlic bread
Christmas Morning- A dozen assorted Dunkin Donuts ( this was probably the most special thing out of the whole year since it was store bought prepared food)

The most important day of the year - Super Bowl Sunday- fun appetizers and submarine sandwiches.

Not a day, but when my dad would go out of town on business, Mom would let us each get a frozen TV dinner at the store: I always got the Mexican and both my little sisters got the fried chicken dinner. And Mom would get a night off from cooking! This did not happen often, so we all thought it was pretty special.

Hot dogs,Boston baked beans and canned brown bread on Saturday nights. (Boston-Irish mom.)

We had spaghetti, salad and garlic bread regularly (Boston-Irish raised in Italian neighborhood...she made killer meat sauce), but not sure if it was on a certain day. Most things I remember by event, not day of week. We got to choose our birthday dinner (breaded pork chops, applesauce, mashed potatoes and creamed corn for me), we always took fried chicken and potato salad to family picnics, The Stuffing on TDay, ham on Easter, and corned beef and cabbage on St. Paddy's.

You are really making me walk down memory lane here, lol.

My dad was a barber, and Sunday and Monday were his days off. On Mondays a fish monger would travel through our neighborhood selling his catch. He had a refrigerated truck similar to an ice cream truck. So every Monday was fish night.

Many times my dad would purchase extra to cook a fish stew for his lunches. Every Monday he'd make some sort of soup or stew, fill jars, and keep them in the refrigerator all week long. He'd take one jar each day to heat up at his barbershop for lunch. He made bean soups, spaghetti, and fish/calamari stew.

The calamari stunk horribly. I'd close the kitchen doors and my bedroom door and open my windows. But to no avail. The memories of the stewing squid kept me from eating calamari until I was in my 40s.

Nothing terribly unique, but lots of "regulars." Thomas' English Muffins or English Muffin bread for breakfast; doughnuts or bear claws for weekend breakfasts; peanut butter and mayo (!!), bologna, liverwurst, or tuna fish sandwiches for lunch; pork chops, brussel sprouts, white rolls, mashed potatoes for many dinners. Chicken (typically creamed chicken over noodles or rice) for Sunday dinners. Pot roast on occasion; pizza nights; and (my favorite!) German oven pancakes dusted with powdered sugar for dinner every so often. Luscious pork roasts for holiday meals. Homemade cookies and brownies always around!

As a family, no. My dad ate his bacon, eggs, toast and coffee for breakfast (for that matter, lunch and supper too) whenever he could and he usually would leave before us kids would arise so he had his favorite meal whenever he could to start the day.

Also goes to show what a farce "high cholesterol" paranoia is. His whole family had the "killer" high cholesterol and he lived to be 93, which was quite normal for his family. 90-95 yo on most of them.
