Okay, it's so darn hot out today, after doing the obligatory yardwork I'm inside in the A/C with everything I need to make a lasagna.....except Ricotta cheese. The store didn't have any and I wasn't in the mood to go to the 'big-box' store for one item. They had cottage cheese which I detest...so that's out. Can I make do without it? I have 1.5 pounds of mozzarella, eggplant, parm cheese, garlic, tomatoes and tomato sauce along with peppers, italian sausage and of course the noodles.

Make it without or wait until tomorrow when I get back out to the market again?

I would use large curd cottage cheese and WASH IT!
Actually I would just drain it.
Add a little lemon juice for tang which it will lack.
and, yes I have done that....it's OK.
But what are your choices? Use cottage cheese and make lasagna....or not make lasagna...
Go for the cottage cheese....it'l be fine....you may even like it better....adds to the "stringy cheese" factor

We got hit here too, 8 inches of very heavy wet stuff. I spent 2 hours shoveling the driveway, the deck, the backyard. Cooper is afraid of the snow and he pooped in the house twice. He's a Michigan dog, fer crying out loud. I finally just tossed him out. He got even by chewing up the cat's catnip mouse and throwing up. We're supposed to get another foot, at least, and we have blizzard warnings. 50 MPH wind gusts, blowing and drifting, white out conditions. Yup, it's winter and it's Michigan. The snowplow plowed me in this morning, Ashley never made it to work/school. There was a 3 foot wall of wet snow at the bottom of the driveway but I just put the Jeep in 4 wheel drive and went to work, not a hesitation. Have I mentioned that I LOVE that Jeep? LOL. We'll see what tomorrow brings, and I have to get out to the farm and check tanks and hay feeders too. It's about 10F here now, but the windchill is way lower than that. Annie

I'm not Linda, but I have her recipe. I thought I'd go ahead and share it with you so you could make it Right Away, just in case she doesn't see this by the time you need Blue Cheese Dressing. It's the best I've ever had. I'm going to go ahead and post the ''story'' she had to go with it, so you know of her true culinary genius. ''Funny....I had a salad for lunch with my blue cheese dressing. The story goes is that there was a restaurant in Tiffin, Iowa where lots of people went after an Iowa game, and their blue cheese salad dressing was legendary. Their salads were enormous....they stood a leaf of iceberg lettuce up at the back of a salad bowl and filled that bowl full of chopped greens and dumped on easily half a cup of blue cheese dressing, made with Maytag Blue of course!!. Every time I went there I tasted the dressing and wrote down something I noticed about the dressing...Mayo based....sweet and sour, thin enough to coat every leaf, parsley...and a "bite"....horseradish. Finally my DH and friends said! That's IT!....here's the recipe...I recommend doubling it....or quadrupling!'' DonnÂs Delight 4 oz Maytag blue crumbled 1 cup of mayo ( I use Kraft) 3 oz ( about 1/3 cup) milk or cream 2 tsps sugar 2 tsps dried parsley 1 Â½ Tablespoons lemon juice 1 Â½ Tablespoons cider vinegar 1 Tablespoon fresh grated onion 2 Tsp Lee and Perrins worchestershire 1 tsp horseradish Â½ tspoon garlic powder. Oh, Woodsy you may be right it does sound like Yarbrough if you say it fast. This is atrocious, don't you think? It reminds me of Precious Moments, gads. Now I'm wondering what the so called french furniture looks like. I pictured gorgeous chandys and gold leaf clouded mirrors, very old and straight from Paris. Oh well, maybe I will be surprized and the furniture will be drop dead, but that is doubtful. This is really not antique but more of a collecter item. According to the internet the company started in 1953. Woodsy, you are a doll for taking the time and looking this up for me. I love this site. This is an estate sale and I didn't go Linda because frankly I didn't want to stand out there with all the antique dealers in the wee hours. In the program it did mention they had the shades. But geez you would think they would of put them on and then taken the picture, and gotten ride of the tube light bulbs. The funny thing is I was more interested in the sconces. And at $100.00 for the pair I would of gladly paid that. But my guess is they would of charged more for them and all the antique dealers would of pounced on them. I don't know about you Linda but sometimes antique dealers can really get on my last nerve. Thanks so much for your opinion, I appreciate it so. .....Jane

I didn't get the cottage cheese because (see above: I DETEST COTTAGE CHEESE!) Okay, Duane..calm down...okay I'm fine now...but Linda did answer me ..so thanks Linda, but not the answer I wanted to hear LOL. Anyway, I guess I can start the prep work and go back out for the ricotta before 'assembly'...sigh.

You can do like Linda said. I've done that before.

But I put it into a Cheesecloth and squeezed the water out.
The texture is not the same. You can beat the lumps and make it smoother.
Or you can do like Ravioli's filling, add an egg, Parsley.
A pinch of Garlic powder and
other spices you like, with a little milk.
Give it a taste test. Add whatever.

With all the ingredients you have on hand,
If you have a good sauce, you don't even need the Rigotta.

BUT !!!!!Personally, I would wait and pick up some Rigotta.
I only use Maggio's. I found that to be the smoothest.

Don't know if it is available in your area.

Maybe someone else can help !!!

I'm in the I DETEST COTTAGE CHEESE camp. But that made me the biggest loser because of all those years my DM and DGM, both from Italy, used cottage cheese in lasagna and I refused to touch it. When I finally tried it I regretted that I missing out on their to-die-for lasagna. I still won't eat CC except in lasagna. So you know my answer.

Well actually I've made Lasagna before without the cottage or ricotta..it's not as creamy...but it's NOT necessary. So for go it this time...

My Mom never used ricotta or cottage cheese in her lasagna so I grew up not knowing it was supposed to be in it. So, my advice would be to skip it.

Thanks everyone. I ended up running over to an italian market a couple of miles away that I had forgotten about. They had 'fresh' ricotta in the deli case. Problem solved. I have made lasagna with a cream sauce and veggies before and just winged it. I'm sure it would have been good without it, but I hated wasting all of this effort and homegrown veggies because I was too lazy to get the ricotta!

(Lou, my sauce is from homegrown heirloom tomatoes that I had saved from last year...yumm (frozen and thawed in the fridge).

Mustangs, it's funny...I will eat Stouffers lasagna and it has cottage cheese in it, but just can't make myself add the stuff on purpose to my own!

(shhh! do'nt tell Duane, but many many cheeses begin with cottage cheese. Instead of adding cream and refrigerating it, they salt it and drain it, and pack it and age it....sometimes they even add blue mold spoors!
But don't tell Duane or he might not eat blue cheese or cheddar or Edam or jack cheese.....)
