Dairy-free filling for almond macarons?

I'm making almond macarons for dessert after a BBQ Sunday. I'd like to do the kind where two macarons are put together with a filling in between, but all the recipes I'm finding have dairy (e.g. cream in a ganache or butter in lemon curd). Any ideas on a dairy free filling?

I guess I could do dark chocolate thinned a bit with some raspberry jam. Or lemon curd would be nice and summery if I could replace the butter with something else - maybe coconut oil?

If I can't find something, I guess I'll just do unfilled macarons. I'm also making an orange juice based flan.
