Picking up my pig tomorrow...

Next door neighbor and I went in halves on an organic pig. He met with a band saw accident and is now ready to be picked up from the butcher.

It looks like we'll have to render our own leaf lard, but that's OK, that's actually kind of fun, as long as you don't set the kitchen on fire. :-)

And I got the heart and liver to cook up for Mason. That's my peace offering to him considering that I'm having his dangly bits snipped today, so he's not going to be very happy with me.

I got the red 6 qt. non stick. Jude, we have to do a smoke burn on it in a well ventilated area for an hour (read manual!) before we can cook in it. Darn. It's snowing like mad here! And I have a baby shower tomorrow to go to. I am thinking about making the sticky chicken recipe that teresa_nc7 posted in my original post for my first run. Annie, I'm looking forward to it. I am hoping it will work good for us in the RV. Especially to keep the heat down in the summer! Carol, do you use tomatoes in your swiss steak, or is it a brown gravy? Mine is a brown gravy. You might like taking a look at my kitchen. I have butternut maple and capella (also known as Golden Ray so you may want to look under that name as well) so it doesn't have that big contrast diffence but I love it (and so do a lot of other people)

I have worked for the Honey baked ham co for more than 10 years. DO NOT, DO NOT cook it in any way. bring out about 30min to an hour before you want to serve and ENJOY. if this is your first taste of a honey baked ham...you are in for a treat and this won't be your last. you can freeze for thrity days without loss of texture /flavor. let me hear from you after you eat yours.

Michael, there's nothing in the grocery store quite like locally grown fresh pork, is there? Mason won't even be thinking about his traumatic experience if you are rendering lard, he'll just be thinking about pork, expecially if you're also going to be smoking some bacon...

Poor Mason! My DH says a bag of frozen peas or corn works well;)

Have fun with the pig. I'm smoking ribs and bacon tomorrow. I love my pork although I must say rendering doesn't do it for me!

A good ear scratch for Mason from me.

First, I thought you might be doing a pig roast. YUM! Then, like Annie, I was wondering about makin' some bacon. I'm sure you and your neighbor will be enjoying all that pork!

I think I feel sorrier for the pig than for Mason, hehe. Ours won't meet the bandsaw until October, but we got a call today that our side of beef is ready. Had Gertrude chops braised in wine w/garlic and rosemary last night. I'm not sure I like it when the guy who grows our pigs tells me their names.

Annie and David, you reminded me that I still have a big old slab of fresh bacon (and a new masterbuilt smoker)and I need to pick Ms. Annie's brains about what to do with it.
