Comments (49)I'm going to the same part of Europe in June and have packed/unpacked my suitcase about 4 times already! :D The one good thing about fashions these days is that many fabrics are very thin so don't take a lot of space. I always find it difficult to pack light so have only bought things that don't take much space. I'm bringing 3 dressy outfits for symphony/dinner evenings as well as 3 outfits that can be dressed up or down. Daytime outfits will be pants (4-5 pair) and tops (one for each day). My pants, skirts, and jackets are neutral but the tops are every color of the rainbow. I couldn't wear all neutral for 2 weeks. Also bringing a sunhat but no umbrella altho that's often recommended. I'll either get wet or buy one there if necessary. Haven't definitely decided on shoes yet but will probably choose from what I have and bring 2-3 pair. I'm saving on weight by bringing only bare necessities in toiletries/make-up. I can shop there for anything I need. It will be fun to see what products are available. We're flying Lufthansa and Bac717 is correct about the smaller luggage sizes and weights. I'm not bringing my carry-on to my set but just a tote bag. It's my one concession to traveling light. My medium suitcase is within their guidelines but expands for any treasures I buy there. I weighed it when I had packed what I thought was enough for the trip and it only weighed 30 pounds and 50 is allowed. Good thing I'm not going in winter! Comments (18)Here's a fruit flan that I've made before. Not hard at all. I used the sponge flan that you buy ready made. Fruit Flan 1 baked pie or flan shell (9 inch) or ready-made sponge flan 2 cups pastry cream filling (recipe follows) 4 cups strawberries, washed, hulled and sliced (you can use raspberries, blueberries, kiwi or a combination of these fruits) Glaze: 1 pouch Knox Unflavoured Gelatine ¼ cup cold water ¼ cup boiling water 1 tbsp. lemon juice 1 tbsp. honey Fill flan shell with pastry cream filling. Arrange strawberries over custard layer and chill. Prepare glaze: in a small bowl, sprinkle gelatine over cold water; allow to stand until gelatine is softened. Add boiling water; stir constantly until completely dissolved. Stir in juice and honey. Chill, stirring occasionally, until mixture is consistency of unbeaten egg white. Using a pastry brush, brush with warm glaze over strawberries. Chill until set. Pastry cream filling: ½ c. granulated sugar 3 tbsp. cornstarch 1/8 tsp. salt 1 ¾ c. milk 2 egg yolks, slightly beaten 1 tsp. vanilla (See Note below) In a medium saucepan combine sugar, cornstarch and salt. Add milk and egg yolks. Cook over medium heat, stirring constantly until mixture comes to a boil and thickens. Comments (5)Jenn this is one of my all time favorite dinner party menus. Being vegetarian, I offer roasted eggplant dip, hummus or spinach dip with toasted pita wedges. This is always a big hit with everyone. The great thing is, you can buy all of these dips at a decent grocery store with a good deli. The eggplant dip often goes by the baba ganouj or baba ganoush moniker. I make my own because it is dead easy, just grill or roast a peeled large eggplant with a good coating of olive oil, add a small jar of roasted red peppers, and some salt and pepper to taste and give this all a good whirl in the food processor. Add a small splash of balsamic vinegar or lemon juice to keep it fresh longer. If you think it still needs some zip you can add any of the following: tahini, mayonaise, cumin, oregano or aleppo peper. Comments (5)Oh yes, I'd go with the lemon cakes, I think I need to make another batch here pretty quickly. Barring that, brownies would be a good idea, or something you could just pick up and eat. Barring that, I'd make cobbler or blueberry crisp, if you have some berries available. I use Grandma's recipe and now I want some. Blueberry Crisp-GrandmaÂs ================ 3 cups blueberries, fresh or frozen, unsweetened 2 tbls lemon juice 2/3 cup brown sugar 1/2 cup flour 1/2 cup quick oats 1/3 cup butter, softened 3/4 tsp cinnamon 1/4 tsp salt . Heat oven to 375. Arrange berries in ungreased square baking dish (8 inch) and sprinkle with lemon juice. Combine remaining ingredients until crumbly. (I use a pastry blender, grandma used two knives). Crumble topping over berries and bake until topping is lightly browned and berries are hot, about 30 minutes. Makes 4-6 servings. I double this and it still comes out good. Plus lueberries are low in calories, have lots of fiber and no fat, contain antioxidants C, E and beta carotene and have been found to be as helpful in urinary tract health as cranberries. That's why I need ice cream with them, they are just too darned healthy. LOL If you have pears and maple, this is also one of my favorites, and I make it in a big pan instead of individual servings: Individual Maple Pear Cobblers Courtesy of: Rebecca Rather, Chef, Rather Sweet Bakery and Cafe 6 servings 3 pounds pears, peeled, cored, quartered 2/3 cup + 9 tablespoons pure maple syrup 2 tablespoons + 1 1/2 cups flour 2 teaspoons vanilla extract 1/2 teaspoon nutmeg 8 tablespoons unsalted butter, cut into small pieces 2 1/4 teaspoons baking powder 9 tablespoons whipping cream melted butter sugar to taste nutmeg to taste For the filling, combine the pears, 2/3 cup syrup, 2 tablespoons flour, 1 teaspoon vanilla and 1/4 teaspoon nutmeg in a bowl and mix well. Divide evenly among 6 custard cups or soufflé dishes. Place a pat of butter on top of each one. Bake at 425 degrees for 18 to 20 minutes or until heated through. Have fun tonight.
