Kosher breakfast meats? Help with menu!

We are having friends for brunch on the Fourth of July. They are not seriously kosher in that they don't keep a kosher kitchen, but they do avoid pork and shellfish.

I am planning on serving a spinach-and-ricotta-baked-in-puffed-pastry-thing, which calls for a few slices of bacon. I figure I could use turkey bacon instead. I've never had turkey bacon, does it really taste like bacon or is it nasty?

Also, I wanted to serve some kind of meat on the side, like sausages. Can I use the all-beef smoky links or are they from the wrong parts of the cow? I have heard of chicken sausage but never have had that either - is it any good? Now that I think about it, sausage of any kind just doesn't seem like a kosher concept! Is *any* sausage kosher?

What else can I serve with this? I'm not a fan of smoked fish so I didn't want to go there. Ideally my menu would be...

Spinach & Ricotta Brunch Bake

Fresh fruit salad

Breakfast meat

Sour cream coffee cake

Chocolate covered strawberries

Any suggestions?
