Really Cute - Petite Pies in Canning Jars

My daughter posted this to Facebook and got me to thinking about serving "sudden company". Wide mouth half-pint jars are fitted with a pastry crust then with a fresh or canned pie filling, capped and then frozen. Individual portions are fun, and there could be a great variety of flavors ready at any time in the freezer.

I am sure that no other size jar would work - can't get stuff out of a regular mouth jar, and ones too tall would not bake properly, so this particular size is the one and only. I Googled for other than the suggested supplier (Amazon) and found other companies that are less expensive and have lower shipping rates, but I am for sure going to check with my local Ace Hardware to see if I can order them and pick up in-store without shipping cost.

Another stove top option you might consider if you only have an indoor electric stove or a stove with small burners, is an outdoor BBQ grill with an attached burner that accommodates a pot or pan. Since you are in Washington, it would have to be under a cover because of rain. I use mine all the time for canning as it is too hot out here in the desert of So. Calif. to run a caner in my kitchen. I believe it has a thermal output of 15,000 or 20,000 BTUs so it is much hotter than most kitchen burners. It is fueled by propane which is also a very hot fuel source. I almost always run my burner on a low setting as it is so hot. You may find a used BBQ in Craigs List or at a local garage sale for little money. In my area, they are plentiful and would range used from $50.00 to $100.00 with a side burner (my neighbor has a side business of selling just used BBQs). If you buy one, just make sure the additional outside burner is placed far enough outside the grill cover that your pot will actually fit on the side burner grill. Some side burners are placed too close to the hood that covers the grill to accommodate a large pot. On mine, I can bring a 20 quart pot with 5 batches of jam to a boil in just minutes without burning (assumes pot has a multi-thickness bottom). Just another suggestion that you might find locally. The BBQ grill can have other purposes also in canning. All my eggplants, tomatoes, onions, etc. that I want a little carmalization go into a perforated grill basket for a quick outside browing when needed prior to canning. Regards - Jim in So. Calif.

A lint free alchol wipe. The kind they use for cleaning an injection area for insulin. I also have a special rubber rejuvinator in a small bottle and its wiped onto as much of the rubber feed rollers that you have access to. HP does offer exchange programs on some printers. My office Jet is huge, color and black cartridges are about $60 for the pair, and after 2 years a paper guide broke off when the print head hit it. I sent back that base part and they exchanged it. It had a 3 year service plan which is now passed. Once it craps out, its history. Its sometims cheaper to get a new replacement than to get the old one fixed. No one will repair an HP inkjet as they are not user serviceable, and there are no legal repair sites. HP just exchanges them at a cost. The site below has a spray can with a long thin tube. You need to remove any paper lint as well as any 'shine' on the feed rollers. Don't attempt to rotate the rollers as they are on a geared shaft and can damage the gears. Run a few sheets of paper though while you spray the rollers. Just print blank pages so the print head stays put. Make copies of baby pics, of yourself,your hubby,your kids......add wings and make angels in a jar(or pixies,etc,lol) Here's what I did with some of mine. Also I have collections of small things in some blue ones. I have some old wooden spools of thread in one,buttons in another, Mardi Gras doubloons in one, animals collected from various Noah's Ark toys,marbles in one. In another I have all my sons MicroMini and Matchbox and HotWheel cars from when he was little(he died when he was 27). I have aluminum cookie cutters in another. These last two are the very large jars. And in an old biscuit jar I have postcards. And of course you could put them out in your kitchen with beans,coffee,sugar,rice,cornmeal, whatever! lol

The recipe was adapted from the one in the link below. Just left out the crust and the pie plate, basically. I like the little jars but it would be really pretty in a beautiful crystal dish with a couple cookies of some sort on the side, too. Who doesn't like having their own little dish of something good? The idea came from someone's blog where they baked mini cherry pies with crust in these little jars... so adorable but we're trying to stay closer to gluten free lately. Okay, I just ate one since there were 13 and I don't like odd numbers. Very delicious and if a person had one of those little torch things, a crust of sugar on top would be p.e.r.f.e.c.t. Anyway: 1 cup sugar 5 tablespoons cornstarch 1/2 teaspoon salt 3 cups coconut milk 4 large egg yolks, beaten 2 teaspoons coconut extract 4 bananas--chopped 1/2 cup brown sugar 3 tablespoons butter 3 tablespoons dark rum or kahlua Making the custard. Combine the sugar, cornstarch, and salt into a saucepan on medium heat. Stir in the coconut milk, gradually, stirring all the while. When the custard has come to a boil, let it remain on the heat for 2 minutes, or until it has begun to thicken to pudding consistency. Remove from the heat. Tempering the eggs. Stir 1/4 cup of the custard mixture into the egg yolks, stirring continuously until it is all mixed together. Pour the egg mixture back into the remaining custard. Cook on medium heat for 2 more minutes. Finishing the cream. Remove the custard from the heat. Add the coconut extract. Stir. (I had no coconut extract so I used banana) Sauteing the bananas. Melt 1 tablespoon of the butter in a large skillet. Add 2 of the bananas. SautÃÂ© for a few moments. Add the sugar. Keep flipping and sautÃÂ©ing. When the sugar starts to caramelize, add the rum. Reduce the rum. It might flame Ã¯Â¿Â½' donÃ¢ÂÂt panic. Stir the pan by hand. When everything looks caramelized and reduced, add the remaining butter and bananas and stir. When the butter is incorporated with the rum, take the skillet off the heat. Divide the banana mixture into the bottom of the jars. Cover with the coconut custard. Refrigerate overnight or til set. Canning jar manufacturers don't endorse baking in their canning jars. Be aware that in doing so jars can shatter in a hot oven (that should make for an interesting clean-up story), from thermal shock taking them from the oven, or from impact while hot. There are perfectly good oven-safe "petite" bakeware for the task. Please keep innocent children and pets away from the scene of any potential exploding jar accident.

I'm sorry I suggested using this oven method with canning jars. Grainlady is right, it's a no-no for safety reasons. I had forgotten.

However, why can't we use the same idea and make the petite pies in cupcake pans? When cooled they could be wrapped and frozen and still have the fun of individual pies, just not as cute as the little jars. I wonder if the cupcake shape fits into the canning jar after it s baked? Guess not; cupcake shape is flared while the jars are vertical-sided. I may have to look into cupcake pans that are canning jar sized, like perhaps popover pans. That way they can be baked then put in the jars for storage in the freezer or for gift giving refrigerated.

They are very cute, but my first thought was, from the freezer straight into the oven? No way." Even if they are canning jars and designed to be boiled, they're probably not designed to be boiled or baked while frozen. If you defrost them before baking, I'd think they'd be soggy.

All that being said, the author claims she's done this lots of time with no incident. I don't know. I've had glass break on me just by switching too soon from hot to cold water while washing, (I don't remember why I did this), so I'm very wary of any extreme, sudden temperature change involving glass.

But, another question, Grainlady. I use glass (Pyrex) bread pans and pie pans. How is that different than glass canning jars as far as the impact shattering is concerned?

sally2 - compare the thickness of Pyrex to the thickness of canning jars for your answer. Pyrex is made from tempered soda-lime glass as are canning jars but there is a density issue here I think.

I have mini cheesecake molds - I bet they would work great especially since you can pop them from the bottom and still have a base kept intact. I don't do pastry that often so not sure if it ever sticks.

This has been on my "to try" list forever! Love the idea. Can be adapted to other types of bakeware.
