Need recipe for Fruit Pizza

Going to the beach next week.... and I would love to make a "Fruit Pizza" for dessert. I think the kids would love this...

I've seen several variations on this recipe..... what is your favorite way to make it??

I am sure there are more complicated recipes....but this is the one I know.
One package of frozen sugar cookie dough...thawed and patted out onto a 10 inch pizza pan and bake according to directions until golden, cool....top with 1 8oz package of cream cheese whipped with 1/3 cup sugar and 1 tsp vanilla, spread on baked crust...top with fruits of your choice...sliced strawberries, blue berried, raspberries, sliced peaches or apples or pears....can even use canned and well drained fruit.
Glaze with warmed apple jelly and chill until set..
It's better, of course if you use home made sugar cookie dough....but still good with the frozen stuff.

That just sounds TOO easy!!! I agree with you about homemade sugar cookie dough being better.... but since we will be at the beach (and the kids won't know the difference!).... the frozen stuff will work great.

I'd love to see your filling recipes. The Apple Crisp I make is a little different: APPLE CRISP (serves 6-8) 1 cup graham cracker crumbs 1 TBL flour 1 cup chopped walnuts or pecans 1 cup firmly packed brown sugar 1/4 cup granulated sugar 1 TBL grated orange zest 1/2 tsp cinnamon (I use more) 1/2 tsp nutmeg Pinch of salt 1/2 cup butter, melted 4 large tart apples In a medium bowl, combine the graham cracker crumbs, flour, nuts, brown sugar & granulated sugar. Stir in the orange zest, cinnamon, nutmeg & salt, then blend in the butter. Lightly butter a 13x9" baking dish. peel, core & thinly slice the apples. Place the slices on the bottom of the dish & scatter the crumb mixture over the top. Bake in a preheated 350 oven for 45 minutes.~~The Maine Collection PEAR CRISP (serves 6) 6 ripe Bosc or Anjou pears, peeled, cored, sliced 1 TBL lemon juice 1/2 tsp cinnamon 1/4 tsp nutmeg 3/4 cup flour 1/2 cup butter, softened 1/2 cup quick-cooking oats 1/2 cup brown sugar Place pears in a greased 2 qt baking dish. Toss pears w/lemon juice, cinnamon & nutmeg. In a bowl, combine flour & butter until mixture resembles crumbs. Add oats & brown sugar. Stir well; sprinkle over pears. Bake in a preheated 375Â° oven 20-25 minutes or until browned & pears are tender. Serve w/ice cream or whipped cream.~~Food for Thought RASPBERRY ALMOND SQUARES 2/3 cup blanched whole almonds 1 cup butter, softened 1 cup granulated sugar 1/4 cup lightly packed light brown sugar 1 egg, separated 1 tsp vanilla 2 cups flour 3/4 tsp cinnamon 1/4 tsp salt 3/4 cup raspberry preserves Using a processor with a steel blade, process the almonds until finely chopped but not powdered. Or finely chop in ablender or by hand. Set aside. In a large bowl, cream the butter, granulated sugar & brown sugar. Beat in the egg yolk & vanilla. In a medium bowl, mix the flour, cinnamon & salt. Stir into the creamed mixture, blending well. Press the dough into a lightly buttered 14x11" jellyroll pan. Spread the preserves evenly over the top. Beat the egg white until frothy & brush over the preserves. Sprinkle w/the almonds & gently pres into the preserves. Place in the center of a preheated 350Â° oven & bake 30-35 minutes or until the edges are browned & the center is almost browned. Remove from the oven & immediately loosen the sides with a spatula. Let cool in the pan 40 minutes, then cut into squares.~~Our Town Cookbook APRICOT BARS 1 2/3 cups quick oats 1 2/3 cup flour1 scant tsp baking soda 1/4 tsp salt 1 cup packed light brown sugar 1 stick butter, melted 10 oz jar apricot preserves Preheat oven to 350Â°. Grease a 15x10x1" jellyroll pan. In a mixing bowl, combine the oats, flour, baking soda, salt & brown sugar. Add the butter & mix until crumbly. Pack 1/2 the mixture firmly into the prepared pan. Spread the preserves evenly over the mixture. Sprinkle remaining mixture evenly over the preserves & pat down gently. Bake 30 minutes or until lightly browned.~~Gator Country Cooks

I made something a little "different". Meyer lemon pizza. Below is the recipe as I found it on a blog. I did not use the dough recipe as I had some of "Monique's 5 minute bread" dough in the fridge, so used that. Basic Foccacia Bread/Pizza Dough 1 pkg. yeast 1 t. sugar 2 cups very warm water (like for a bath) 5 cups flour (I use 3 cups all-purpose and 2 cups bread flour) 2 t. Kosher salt, plus more to sprinkle on top 2 T. olive oil, plus more for the top In the bowl of a electric mixer fitted with a dough hook, stir the yeast, water, and sugar together. Let the mixture stand for about 5 minutes; it should be fizzy on top. Add the flour, salt, and olive oil. Knead with the dough hook for several minutes. The dough should come together in a ball and start trying to climb out of the bowl. Let it knead like this for a few more minutes. Knead with your hands for a minute more, working out any knots of flour. (A trick here: coat your hands with olive oil.) The dough should feel smooth and elastic. Return to the bowl, cover, and let it rise in a warm place (I put it in my pantry) for at least an hour. At this point, you have a few options: get it ready to bake, refrigerate if youre planning to use within a few days, or freeze it for a later use. To bake as focaccia: divide the dough in half and form into rounds. Place on cookie sheets and allow to rest for about 15 minutes, covered. Preheat the oven to 475 degrees. Dimple the dough with your fingers, drizzle olive oil on top, and spinkle with Kosher salt (and chopped rosemary if you so desire). Bake for 10-12 minutes, until the top is just beginning to turn golden. For the Meyer Lemon Pizza: 2 Meyer lemons, thinly sliced and seeds removed 4 cloves garlic, thinly sliced 2 jalapeno peppers, thinly sliced 2 cloves garlic, crushed 2 sprigs rosemary, minced Zest of one lemon Olive oil Parmesan cheese Preheat the oven to 475 degrees. Heat about 2 tablespoons of olive oil in a large skillet over medium heat. Add the lemon slices. Cook for about 10 minutes, turning occasionally until the rinds begin to soften. Add the pepper slices and garlic, and cook for 10 minutes more, or until the garlic and pepper are very soft. Stir frequently to make sure the garlic doesnt brown. Spread one half of the dough thinly over a cookie sheet, stretching it with your hands. You may have to be forceful, but try not to tear it or leave any holes. Drizzle the dough with olive oil, salt, the crushed garlic, lemon zest, and minced rosemary. Bake for 5 minutes. Remove from the oven, and spread the lemon topping evenly over the dough. Grate Parmesan cheese (about 1/2 cup?) evenly over the pizza. Bake for 10 minutes more. Refrigerate the other half of the dough, freeze it, or bake it as bread to have the rest of the week.

It will be interesting to hear your recipe, trailrunner! I just made a small batch (way too small as it turned out), this was enough for two pizzas. Minced garlic from 2 heads, simmered slowly in around 1/4 cup olive oil, for 5 minutes only, being carefully to not let brown. I can't remember for sure, but I think it was almost equal parts garlic and XV olive oil. Then, added a small can of tomato paste, 1/4 cup sugar and a couple Tbsp of water, and 1/4 tsp of oregano and pepper. The crusts do look different but I'm pretty sure they are both the Baguette recipe (which I must attempt this week, having found my pans). The second crust looks more like the Bittman recipe, but that was because it was made in a square pan, more deep dish style. I wasn't thrilled with either crust this time. We had a hockey game in the middle of the day so I made the 4 batches of dough in the morning and let them proof in the fridge, then skipped the second rise for the baguette recipe. Maybe they rose too long? Next time, I'll shoot for around two hours before oven time. Then again, I tend to not eat when I am hosting, so maybe I am imagining the difference. Everyone else loved the pizzas, which is all that counts. Between the two, I like the baguette recipe a little better but DH likes the MB.

Annie, I can't speak to the perforated pan, since my method is to use parchment paper. If you use my crust, it's easy to make the thinnest crust pizza just using your hands. It's only technique, but for myself, I like the parchment paper on the stone and liken using a stone as a quick sear method to help set the crust. If the pizza is thin enough, and you don't overload it with ingredients, the middle won't be soggy. At the high heat, it also comes out with the browned crust you expect from a pizza parlor. I always make the outer edge of the crust a little thicker, with the middle as thin as I can make it. Try using half the amount of ingredients you normally would and see if it makes a difference. (I know, it goes against my basic nature to use restraint, but it really makes a difference!) One recipe of my crust will cover the bottom of a half sheet pan (on parchment), which lets you know how much the dough should stretch. I've tried Ann's method of using an peel and sadly I am obviously not coordinated enough to manage it. It seemed that in order to get them to move, my crusts always had too much flour, and the cornmeal always burned and smoked in my oven. I'd really like to watch her do it, so I figure out a new technique! My pizza crust also has an olive oil coating (top and bottom), which helps create a crispy exterior and flavor that I like. It's impossible to move anywhere after you oil the dough, spread it out and load it, which is why I like making it on the parchment. This is only a theory on my part, but I think when you make your crust in a pan, the tendency is to overload the toppings since you have a pan to support the crust. The pan will take time to heat up with the pizza in it, which is why the top burns before the bottom gets done. There are many ways to make pizza, however I know this is the only way I can make mine turn out! Since I'm also a fan of thin and crispy (St. Louis style) pizza, that's the style I wanted to learn to make. I am dismal failure with anything else...

Here's another one:
Pizza Hut Dessert Pizza Recipe

Pizza Crust:
1 cup warm (105F) water
2 cups flour
1-1/2 tablespoons vegetable oil
3/4 cup cake flour
1 teaspoon salt
1/4 teaspoon active dry yeast
Fruit Filling:
1 21 oz. can pie filling (cherry, blueberry, or apple)

Crumb Topping:
1/2 cup flour
1/2 cup brown sugar
1/2 cup quick oats
1/2 cup firm butter or margarine
1 teaspoon cinnamon

Vanilla Glaze:
2 cups powdered sugar
3 tablespoon Milk
1 tablespoon Melted margarine or butter
1 teaspoon vanilla:

Combine yeast and warm water and let proof for 3 minutes. Add to
other crust ingredients in a large bowl and knead for 10 minutes.
Cover with plastic wrap, and allow to rise for about 12 hours.
Preheat oven to 500F. Roll the dough on a floured surface until it
is about the diameter for your 16 inch pizza pan. Place in pan and
form the dough to the edge. Brush with vegetable oil and prick with
fork. Prebake for 3 minutes. Remove from the oven and spread with
pie filling. Mix crumb topping ingredients with a fork or pastry
blender. Spoon over pie filling. Return pizza to the oven and
continue to bake for 10-15 minutes or until crust is light golden
brown. Remove and drizzle with vanilla glaze.V

Years ago one of the secretaries brought a fruit pizza to an office potluck. We all liked it. She used refrigerator cookie dough (the kind in a tube) and mixed cream cheese with Cool Whip. She topped it with orange sauce. There are a zillion recipes on the web for this. Have fun!

I also have seen one using refrigerated tube of crescent rolls. lay them on a cookie sheet and seal together to make a solid crust. One package should cover a standard jelly roll pan. Bake at 375 for 12 to 15 minutes until browned.
Beat two 8oz packages of cream cheese with two eggs and 1/s cup sugar and 1 tsp vanilla....spread on the cooked crescent roll crust and return to the oven for 10 to 12 minutes until lightly browned and set.
Cool and top with fruit of choice.
This is more like a cheese cake on top of a flaky crust....topped with fruit.

Thanks everyone! I'll save the "real" fruit pizza recipe for a trial run at home (don't want to have to deal with rising dough at the beach).

There are so many varieties ..... we may have to have more than one!

I thought that the kids (and adults!) would enjoy a nice, cool refreshing fruity dessert for supper... it will help the sunburn cool off a bit!
