You can make the shortbread any time and store it air tight....but don't assemble it until an hour or so before serving or the crust will get soggy and pasty...the fruit brown....and the whole thing will generally be icky.
Make the pizzas late Saturday afternoon.

I agree with Linda. You can prep most everything ahead, but don't assemble until the last minute.

Depending on what fruits you use, they may or may not get brown. Berries, pineapple, kiwi and even peaches can be cut up ahead of time. Pears, apples and such would need to be tossed with some lemon juice to keep them from turning brown.

I cheated and used store-bought shortbreads, but homemade would be phenomenal!

Thanks... I figured that would be the answer. I was hoping that I was "over-thinking" this and they would be fine to make earlier in the day ;)

Oh well.... I'll just add another thing on my to-do list for Sat afternoon!

Normally, I would make the shortbread cookies myself, but I am cheating this time. I have so many things to do, so I found some in the store and I am going to try them (I'm cheating, don't tell anyone!).

I'm planning on peaches and blueberries. I'll let you know how they turn out.

My friend used to make one that was those croissants in a tube, baked and spread with a cream cheese butter sour cream mixture and topped with fruit.
Sorry I don't have a recipe...she died....and that's one of many recipes of her's I didn't get.
