Sourdough Bread

The thread on sourdough reminded me that I hadn't fed my starter in over an month. I fed it on Sunday and again on Monday and then Tuesday morning used 2 ounces to make a biga and another 2 ounces to make a Levain. Tuesday night I made two batches of dough. No additional yeast was added to the Biga batch, and only a pinch, maybe an 1/8 of a teaspoon was added to the levain dough. Probably wasn't necessary because the starter was very active.

Left in the fridge to rise overnight. The biga dough was in a 3 quart dough pail and it blew the lid off over night and just kept rising. The Levain had maybe 1 1/2 cups more flour (8 cups)and was in a 6 quart container and it rose to the top but the lid was still in place. I baked 7 loaves of sour dough yesterday. Three are in the freezer, three were given away to neighbours and one was cut for breakfast this morning.
