What To Do With Leftover Risotto!

Have it for breakfast!!!! Chive risotto cakes (Ina Garten recipe) and small French strawberries from the garden with a shower of sugar and a pour of cream. With freshly brewed coffee, it was a heavenly breakfast!!!!

I usually eat leftover risotto cold while I stand in front of the open fridge. Your idea is better.

Go over to the Garden JUnk forum and ask the the gals and guys there for ideas. They are a creative and talented bunch of folk. Freecycle it on your local freecycle chapter. It's free and easy http://www.freecycle.org/ Offer it to a local 4H group or even an elementry school teacher. How about making a hammock or 2 for yourself. Nettings of most sizes make nice hammocks. If it is a tight small spaced netting maybe make a few reusable tote bags for beach use, sand shakes out so nice from netting... shopping, no need for you to take paper or plastic to send to a landfill.... gifts for friends I wish I had seen this earlier in the month. Little late, but these are good, especially when served with homemade cheese sauce. Chicken croquettes 3 cups cooked, finely chopped chicken meat 1 1/2 cups seasoned dry bread crumbs 2 to 3 lightly beaten eggs 2 cups sauteed chopped onion 1 tablespoon chopped fresh parsley 1 teaspoon salt 1/2 teaspoon ground black pepper DIRECTIONS In a large bowl combine the chicken, bread crumbs, 2 eggs and onion and mix well; if mixture is too dry to form patties, mix in another lightly beaten egg. Then add parsley, salt and pepper to taste, mix well and form into small patties. ***Let them rest in refrigerator before cooking. Heat oil in a large skillet over medium heat and fry patties in oil until golden brown.

That's it!!! Marigene. I KNEW there was something great to be done with leftover risotto. It's lunch time and I'm gonna just heat some slowly with seafood stock (no wine included Linda) but will remember the Arancini which I love but have never made. Now that I'm over my fear of the pc again (I seem to forget that it's ok if I don't use the little darlin' for about 6 months....) I'll have to make some risotto just for leftovers. I love this place..you ask a question, go to bed, and Voila! the answers appear in the am. ;-) Thanks! Maureen

Artemis, kind of off topic, but I have to admit I have no idea what 'pakoras' is, so I googled it yesterday. Found there are a gazillion (or so it seems) different definitions and/or recipes. Would you please share your recipe? It sounds like something I would like to try, but I have no idea where to start. Thank you! Rusty

A very luxurious breakfast indeed.

What a lovely breakfast!

I seldom have left-overs. Especially Marcella's wild mushroom risotto, yum. If i do, it barely makes it through breakfast eaten cold at the counter. If any makes it that far, arancini. : )
Only once did it make it far enough to stuff with mozzarella and wrap in prosciutto and bake till crispy! Delicious with a fried egg.

Yum, I love risotto cakes! I sometimes make a small batch of risotto not to eat right away but specifically to make cakes.
