Leftover risotto...how to reheat??

I made a darn good seafood risotto tonight and after stuffing ourselves, we have leftovers.

It seems that you can make something out of leftover risotto??? or else how can I reheat it? I can pull the scallops and salmon out since I left them in very large pieces.

And thank you Dick for getting me thru the pressure cooker fear again on this one. Maureen

I would leave the seafood in it....and when I wanted to re heat...I would add more of the wine you used and gently warm it...if it needs still more liquid, add a bit more broth.

I wonder if anybody uses a double boiler anymore? I would think that would reheat anything nice and gently.

I've re-heated a small medium rare beef roast that I'd frozen in a vacuum sealed bag using the sous-vide method. I let the roast thaw, brought a pan of water to a gentle simmer, set the vacuum bag into the water, turned the heat to low and let the roast warm up for about 30 minutes. It tasted as good as the day I'd roasted it! It was still a nice medium rare. If you could find some food safe bags I'd give that a try.

I always bake two sweet potatoes at the same time. Eat one, put the other one, still with the peel on, in the fridge. When I want that one I slice it down the middle, longways, and nuke it for a minute or so depending on size. Add a dollop of butter and it is ready to eat. You're fortunate to not taste it, mimi. I can always taste the left-over-ness of roasted meats. The first bit of devilry is a crazy fact: Your food is in a constant state of chemical change. The reactions that cook your food do not stop after the chicken is pulled from the oven. There is still a lot of stuff going on. When you cook meat, for instance, twisted or clumped proteins unravel. During this forced relaxation, the proteins are more open to the chemical reactions that cause them to break down. The process also causes the proteins to release iron, which behaves like a little magnet, explains Chris Loss, director of the department of menu R&D at the Culinary Institute of America. If I'm making pancakes, I try for only what I'll eat, since I can't deal with reheated ones. Otherwise, most comfort foods are in the category of cook (hence clean up) once, eat twice or more. I'm very open to utilizing things in other ways but don't get hung up on "it has to be 'different'" philosophy. And I choke back vomit when I see someone try to make a meatloaf and mashed potatoes look like a cake. UGH! I grew up eating leftovers. I still aim for "premeditated" leftovers. It more economical, just as tasty most of the time and often it can taste better. If it's too much, a freezer can be your friend. And I am a strong supporter of saving energy, both appliance and mine. Since the health issues set in, standing at the stove for hours is no longer a regular option.

I think warmed up it'll likely be a disappointment compared to tonight. I'd pick the seafood out (as you've already volunteered to do), form into patties, bread them and fry them. Yum. I always make too much risotto just so I can have these the next day.

You could make Arancini di Riso, but have never made it with seafood.

i reheated leftover spinach risotto the other night, by putting it into a pyrex dish and sticking it into the oven while cooking something else. i don't know how seafood would take to that kind of treatment though--i'd worry about it getting tough...but i love marigene's suggestion of the rice balls! i definitely want to give that a try!

That's it!!! Marigene. I KNEW there was something great to be done with leftover risotto. It's lunch time and I'm gonna just heat some slowly with seafood stock (no wine included Linda) but will remember the Arancini which I love but have never made. Now that I'm over my fear of the pc again (I seem to forget that it's ok if I don't use the little darlin' for about 6 months....) I'll have to make some risotto just for leftovers.
