Borsche (beetroot soup) recipe

Some of my friends requested this recipe, so - i'm putting it on here. Can be made with beef or chicken (I prefer chicken), it's how I learned to make it in the Ukraine. Hope you enjoy!

Note - use well trimmed meat to avoid grease in the finished product.

1 lb lean meat, cooked (browned)

4 cups of water

2 14 oz cans of diced tomatoes

2 14 oz can of tomato sauce

1 large onion, chopped

4 large carrots, peeled and sliced

4 cups shredded green cabbage

3 medium fresh beets, peeled and cubed or julienned

1/2 teaspoon of salt and pepper, also garlic powder if you like.

Sour cream

I was taught how to make this by a nice homemaker in the Ukraine. We added whole pieces of cooked chicken (bone in)to the soup, at the time of presentation. I'm sure it can be done several different ways. Mix together all ingredients except for sour cream - in a large cooker, and cook until vegetables are done (soft)- not mushy, though. Present finished product in bowls, with a dollop of sour cream in it. The soup is then stirred, to give it a nice creamy texture.
