Gazpacho question

Last Saturday I had a great gazpacho at Charley's Crab in Hilton Head SC and, of course, came home and looked on the internet for the recipe. I found one that is good, but wanted to play with the recipe some and make part of the soup ahead.

Could I blend the tomatoes and tomato juice with the seasonings (garlic, red wine or sherry vinegar, olive oil, s&p, lemon juice, etc.) and keep it up to a week in the fridge, then add a small amount of diced cucumber, celery, bell pepper, onion, and fresh herbs just before serving? I would be making 1-2 servings each time.
