glazed carrots in advance?

I'm down to the crunch time here, and for various reasons, we're having glazed carrots for the reception dinner. There's already broccolli in the alfredo, plus caeser salad, so enough green, and there's too much pasta to have corn.

Anyway, the carrots will be heated and held in big Nesco type roasters. The glaze is simply made of butter, brown sugar, orange juice and orange zest. I usually thicken with a bit of cornstarch, but I'm wondering if the cornstarch will break down if it is held for several hours in the roasters? Or should I just add a couple of jars of orange marmalade for thickening, since the stuff is pretty sweet already, and skip the zest since it's already in the sauce?

I'm going tonight to check out the kitchen at the hall, see what kind of utensils are available, measure ovens, etc., but I'm sure we won't be able to fit anything else in the ovens and I'd rather not e heating at last minute stovetop.

So, will the cornstarch hold up?
