Making Bread on Sunday

Ok, I got 2 globs of bread dough sitting on the peel (with cornmeal under them, generous amounts of cornmeal). We'll see if I can remember to flour the tops and slash them just before I put them in the oven.

I'll post a pic regardless of how they come out.

As every year, we are going to friends who have a 70" TV. They usually invite a dozen or people & it's a potluck. I'm making two appetizers: Bacon-Wrapped Jalapeno Thingies 20 Fresh jalapenos, 2 Â 3 inches in length 8 oz. Cream cheese, softened Thin, regular bacon, sliced into thirds Slice the jalapeno in half length-wise. With a spoon, gently scrape out the seeds and white membranes. Smear cream cheese inside each jalapeno half generously. Wrap 1/3 slice bacon around the jalapeno snugly, but not tight. Stick a toothpick through the middle of each one; this will keep the bacon from coming off in the oven. Place them on a pan with a rack (so bacon grease can escape) and bake at 375 degrees for 20-25 minutes. Serve hot or at room temperature. Asparagus with Wasabi-Mayonnaise Dip 3 lb thin to medium asparagus, trimmed 1 cup mayonnaise 4 teaspoons soy sauce 1 1/2 teaspoons sugar 2 teaspoons fresh lemon juice 2 teaspoons wasabi paste Blanch asparagus in 2 batches in a large saucepan of boiling salted water 1 minute. Transfer to a colander and rinse under cold running water to stop cooking. Drain well and pat dry. Whisk together mayonnaise, soy sauce, sugar, lemon juice, and wasabi paste until sugar is dissolved. Serve asparagus with dip.

Depends on where you get the flour, if you grind it yourself from wheat that you get a good deal on, what else you put in it besides the usuals. I started making the recipe on the link. I make one batch just about every week. Freeze one loaf..keep the other out. I use Bob's Red Mill Organic White Flour 4.19/5lbs and bulk yeast I keep in the freezer from Costco. The bread I buy for the boys is by Franz (I think they are a "local" bakery though. Whole Grain White-No High Fructose Corn Syrup I buy it when it's $2 a loaf and stock up. They eat it or homemade bread now. I make these for hamburger buns, dinner rolls and sandwich rolls. Depends on size. I do the dough in my bread machine. Honey Wheat Sandwich Rolls I have made it in a big free form round 'loaf' for a layered "stuffed" sandwich and baked it in a bread pan. Tonight it was burger buns for turkey burgers. Always cook mine in a cast iron skillet, as did my mother. This is really close to my mother's recipe, though she never used one, just eye balled it, but I watched her make it many many times. Recipe: Southern Skillet Cornbread ©From the Kitchen of Deep South Dish Prep time: 10 min |Cook time: 20 min |Yield: About 8 servings Ingredients 1/4 cup of oil, shortening or bacon fat ^^Mother always used lard or bacon fat 1-1/2 cups of all purpose white or yellow cornmeal 3 tablespoons of all purpose flour 1 teaspoon of baking soda 1 teaspoon of baking powder 1 teaspoon salt 2 cups of buttermilk, more or less 1 large egg, lightly beaten Instructions Preheat oven to 450 degrees F. Add the fat to a well seasoned 10-inch cast iron skillet and place the skillet into the oven to melt the fat and heat the skillet. In a bowl, whisk together the cornmeal, flour, baking soda, baking powder and salt. Using mitts, carefully remove the skillet from the oven and swirl the hot fat around to coat the entire skillet. Pour the fat from the skillet into the cornmeal mixture; stir. Stir in half of the buttermilk and add the egg; add more buttermilk as needed to make a thick but pourable batter. Depending on the grind of your cornmeal and the type of buttermilk you use, you may not need it all. Fold ingredients and don't beat the batter. Pour the cornmeal mixture into the hot skillet. Carefully place directly into the oven and bake at 450 degrees F for about 20 to 25 minutes. Remove the skillet from the oven, let rest for 5 minutes, then very carefully turn the cornbread out onto a plate or platter to preserve that nice crispy crust! Cook's Notes: If your cast iron is not well seasoned, your cornbread may stick. Slice out of the skillet if you are unsure. Use a medium grind of cornmeal, not a fine grind. Don't beat the batter or your cornbread will be crumbly. If your baking soda is not fresh, you won't get much of a rise. For insurance I've added a teaspoon of baking powder. I store both my baking soda and my baking powder in the freezer. Can substitute milk for the buttermilk, you'll need less. Can also substitute 2 cups of self-rising cornmeal mix. Eliminate the baking soda and salt if you use a cornbread mix. I prefer White Lily brand, buttermilk, white cornbread mix.

I haven't noticed a shortage of Mozzarella, and I have been using a fair amount of it. We bought some on Saturday, along with some ciabatta bread, and I will make a sort of pizza with that - it's just easier and still very good. Kevin went to the store today to get more bread flour (I have plenty of rye and whole wheat), as I intend to continue baking our bread - now that I have a good supply of yeast. The stores do have bread on the shelves now, but the bread I get in Rancho Mirage is not as good as what I got in L.A., and it is certainly easy enough to bake my own. I actually enjoy making it, and I've decided that I like it even better when not using my Kitchenaid mixer. I mix pasta dough by hand also, and I plan to make some lasagna later this week. I'll have to roll it out with a rolling pin, however, and so I'll see how that goes. Considering how popular farmers' markets are in southern California, I do think people here are fairly health conscious - or at least are concerned with getting good produce. It's helpful that so much is grown here and therefore so readily available. And I do see mostly younger people (i.e. 20-something) at the farmers' markets. The Bristol Farms that I go to in Westchester is just a few blocks from Loyola Marymount University, and it has a huge selection of health foods, mainly for the students, I think.

Thanks guys. Phew! What an ordeal that was. Glad I finally got it right. I've got more dough mixed up in the bucket.

Wondering, can I shape it into a longer loaf instead of a ball shape? Can I make rolls out of it?

I need to buy the book, huh? I'll bet all my questions are answered in the book.

Fantastic! It looks perfect. Did your family love it? Yes, you can make lots of stuff with it. I've made buns, rolls, bread sticks and pizza. And cinnamon rolls too. Good job!

Good job Shaun! I've made a number of things with the dough. I have the book and there's other recipes in it you would enjoy. I haven't had much time to play as I'd like, but will be trying them out.

All right, Shaun. Beautiful loaf and slices. Perfect for dipping into that EVOO with herbs you have sitting alongside. You're persistent. Did you figure out what was causing the problem?

Yes terrapots. My own stupidity was causing all sorts of problems.

First time, I didnt let the dough sit long enough. I only let it sit out for 40 mins, not the 1 1/2 hrs. PLUS I didnt use enough yeast in the recipe. Then my baking stone broke.

Second time, I put the loaves into the oven and forgot to slash them so I took them out of the oven after they had been in there for several minutes and floured and slashed them, ripping the tops. I also didnt use cornmeal, used flour and the loaves stuck to the peel and the stone and when I finally got the bread off the stone, the bottoms remained on the stone.

The third time was a charm. I mixed up fresh dough using the correct amount of yeast, I let the bread dough sit for the correct time. I remembered to flour/slash the tops and I used cornmeal.

Wa-La. Victory was sweet.

That bread looks perfect, Shaun - exactly how I'd like mine to look! So, could you please clarify for me: which yeast did you finally use, what kind of flour? And if I may ask others here (without hijacking), if I make this along with that sourdough sponge that's been printed around here, when do I add it to this bread dough and does that mean that I eliminate something else? And how MUCH of the sponge do I add to this dough per round loaf? TY

Well I can answer your first 2 questions.

1. Which yeast did you finally use? Fleischmann's Active Dry Yeast.

2. What kind of flour? I used Gold Medal All Purpose Flour BUT I just saw King Arthur's flour in my grocery store and bought a bag of that for next time.

Thanks Shaun; will wait about how to add sour dough sponge to the Artisan Bread. But, tho' I know nothing about bread making, it seems I read something here about not using the KA flour bec. of a much higher gluten content. Or, maybe you have to revise the recipe a bit to compensate for it? Not quite sure - but there has been something about this issue.
