Gluten free ice cream, sorbet, a parfait, chocolate mousse or flourless chocolate cake, fruit macerated in a grand marnier served over a meringue or a cake or brownies made from a gluten free baking mix. However, you should check and see if she eats any grains or would prefer a dessert suggestion like above.
Meringues are always a good bet-- a cookie which can be purchased and served with a fruit parfait is a lovely idea!

I agree, meringues are good, and can be made easily at home. The flourless chocolate cakes are delicious and I have made cheesecake with a crust of gluten free gingersnaps purchased at the local grocery store in place of the graham crackers.

My Aunt who has celiac loves this peanut butter cookie recipe, and I often press the dough into mini muffin pans and then fill the baked cookies with Nutella. I've made sandwiches with small cookies and homemade jam too. The recipe has been around forever, I know I've made it since I was a child. Be aware that it doesn't rise or spread substantially, as it has no leavening.

Flourless Peanut Butter Cookies

Ingredients 1 cup peanut butter
1 cup sugar
1 large egg, lightly beaten
1 teaspoon vanilla extract

Preheat the oven to 350 degrees F.

In a medium bowl, mix the peanut butter, sugar, egg and vanilla until well combined. Spoon 1 tablespoon of mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies.

Bake until golden around edges, about 10 minutes.

Transfer to racks to cool. Repeat with the remaining dough.

Have a nice time with the neighbor, I'm sure she'll appreciate whatever you have.

This recipe for Super-Simple Banana Cookies is nearly as easy as the Flourless Peanut Butter Cookies. A nice recipe if you don't want to invest in a lot of gluten-free ingredients like almond flour and coconut flour, etc. Just make sure your oats are certified gluten-free (Bob's Red Mill), and make sure your neighbor can eat oats. I got the recipe from another message board and make these all the time. In fact, I made them yesterday morning.

Another option would be recipes for cornmeal cookies.

SUPER-SIMPLE BANANA COOKIES

3 mashed bananas (OR 2 bananas + 1/2 c. unsweetened applesauce)
2 cups oats
1 c. chopped dates
1/3 c. oil (I use coconut oil)
1 t. vanilla
pinch of salt

Preheat oven to 350-degrees F. Mix ingredients well, drop by teaspoonfuls onto ungreased cookie sheets [I cover my sheets with parchment] and flatten the mounds with your fingers. Bake for 25-30 minutes, or until lightly browned.

I'd make a Pavlova.

Some celiacs are very sensitive, and won't eat food prepared with equipment also used for gluten-containing foods. They will have separate toasters from the rest of the family, for example. So it might be worth asking her when you decide what to serve if there's any problem for her.

Yet one more.... My mother had Celiac disease and made this recipe quite often. She loved Pineapple Upside-Down Cake and this took it's place after she was diagnosed. -Grainlady

BAKED CRUSHED PINEAPPLE

3/4 c. sugar
1 t. cinnamon
Dash nutmeg and cloves
2 eggs, lightly beaten
1/4 c. cornstarch
20 oz. can crushed pineapple, DRAINED
2 T. melted butter

Preheat oven to 350-degrees F. Grease an 8-inch square baking pan. In a mixing bowl combine sugar, cinnamon, nutmeg, cloves and cornstarch. Stir in pineapple, eggs, and butter. Mix completely and place in prepared pan. Bake 20-25 minutes, or until set and lightly brown.

Thanks! It's not a situation where I'd want to call and ask a bunch of dietary questions so I'll just do the best I can. It's really going to be she and husband - come over in the evening after dinner for cocktail and/or dessert/coffee. So far from what I can tell wine is pretty safe. If she thinks my dessert isn't, then I guess we'll have more wine!

You can always tell her what you're going to serve, and she'll know if she can have it or not.

You all crack me up - you over estimate my cooking knowledge/expertise. What the heck is a Pavlova? You may be aghast to know I've never made meringue. Is that easy - really?

How about strawberries filled with whipped cream and drizzled with chocolate? I could make those for every dessert I bring anywhere and they are always the first dessert to go, stuffed or not. Everybody seems to love them.
Melt chocolate in a baggie in the microwave. Snip a tiny corner off and while twirling the strawberry, squeeze out a drizzle of chocolate and circle the strawberry.
They're pretty with white and dark chocolate drizzles. Then, if you want you can get fancy with coconut, chopped nuts...but I like just the chocolate.

If it's wine, I'd put out a platter of cheeses plus a bowl of good quality chocolate. No complicated preparations and i think everybody'll be pleased.

I was thinking about that - cheese as dessert and to accompany the wine. It doesn't seem that all chocolate is gluten free - need to find some that is. This would certainly be easy enough once I find the gluten free chocolate. I do have some tasty gluten free rice crackers. This may be the direction to go.

Gibby, meringue is really easy to make! I've done them for a friend who is Celiac. Probably the easiest thing I ever made for him. About the pavlova--heard of it, but had to look it up.

Those strawberries sound good, too!

FYI, here is the ingredient list of Callebaut dark chocolate (from Whole Foods): unsweetened chocolate, sugar, cocoa butter, soy lecithin added as emulsifier, natural vanilla flavor.

I have a friend who has celiac, so I make her rice pudding in the crock pot...very easy and real comfort food.

I've also made parfait with 2flavors of pudding and I crumble up chocolate gluten free cookies for in between the layers. You can also make parfait with, like, strawberry yogurt and strawberry jello, with chopped fresh strawberries as a layer in between.
