Spice Rub Rut

I have gotten into a real rut when it comes to those last minute meals when I just want to sprinkle a spice mix on some chicken or beef and throw it on the bbq or under the broiler.

I keep a shaker mix of celery salt, pepper, paprika, garlic & onion granules, and a bit of oregano and savory for the purpose, but there must be other spice mixes out there to use when you don't want to deal with wet or dry marinating, breading, or basting.

So do you all have some favorite mixtures?

I can't find the saved cut/paste from Terri PacNW's rub - she gave me some in a swap - so I googled around and found this - same ingredients, I bet same proportions. From one of her links to another website.

Smoky Barbecue Dry Rub

INGREDIENTS:
2 teaspoons smoked paprika
2 teaspoons kosher salt
1 tablespoon sugar
1/2 teaspoon freshly ground pepper
1/2 teaspoon cumin
1 teaspoon garlic powder
1/2 teaspoon chile powder
1/2 teaspoon cayenne pepper

Other than that I use anything from Penzeys - Northwest is good, Chicago Seasoning is smokey but salty, etc.

I use just about what you do. Except nothing with Salt ,
Like Garlic Salt, Onion Salt,etc.
Because you don't know how much Salt or Spice is actually going on the meat.

I usually shake each Spice on separately, so I know just what I am using.
I don't make it overly Hot , because some people can't do hot.
On Pork I add a little pinch of Ground Cloves, it is strong. So is Oregano.
also try a little Old Bay Seasoning.

Sometimes on Chicken and Fish I'll splash on some ,
Zesty Italian Dressing,
then sprinkle on the Spices.
I use the large bottle of McCormicks Garlic And Onion Powder from BJ's.
It is very fine.

Beth, I made pickles first and then I finished dehydrating my tomatoes from yesterday and then I finished my yellow tomato sauce and THEN I made one batch of Multi-purpose Seasoned Tomato Sauce. By the time I finished it was around 2 p.m. and we hopped in the car and sped down to the Southlake Central Market to check out their produce selection. I was a little disappointed. They didn't have nearly as many heirloom winter squashes, pumpkins and gourds nor did they have as many heirloom tomatoes. However, they did have pickling cucumbers, so I bought another 5 lbs. Since I made bread-and-butter pickles today, I'll make dills tomorrow. Best of all, my own pickling cukes are about to reach pickling size, so I'll be able to make stacker-type pickles about Friday or Saturday. We also picked up a 10-grain store bakery bread that we like and a few other veggies. Then, it was off to Green Sprouts Farmer's Market a couple of miles up the road. It really is just a smaller, more affordable version of Whole Foods or Central Market, but I mean really, really, really smaller and not much selection. They had some great prices on produce, but a lot of their produce was overripe and I didn't purchase anything there. But, I did get visiting those two stores out of my system. The next time I want to go to Central Market, I'll go to Fort Worth because it has a better selection by far. I don't know this for a fact, but it seems bigger than the one in Southlake. It might be that the Fort Worth store has more autumn pumpkins and winter squash outside because they have a big covered patio type thing in front of the store where they often have musicians and cookouts when the weather is good, and I didn't see anything like that at the Southlake store. The only advantage the Southlake store has over Fort Worth is that Tim can stop by it on his way to work at DFW Airport if there's something I "need". I got home in time to spend an hour in the garden while my sweet DH grilled chicken and sausage and made dinner. I had used up all my tomatoes today making the multi-purpose tomato sauce, but I got to pick another 6 tonight, so I'm OK. Moni, I think Tulsa might have a Whole Foods or Wild Oats which are sort of similar to Central Market but more heavily focused on organics and less focused on gourmet-type fare, although there is a lot of gourmet type stuff, especially if you like artisan cheeses and breads. I'll do some research and see what I can find out about Edmond-OKC-Tulsa. Surely something in that area has a 'health food store' with a good selection. I have found they usually have the best produce in terms of variety and selection. Today I was looking at all the fingerling potatoes (six or eight varieties) at Central Market and making a mental note to buy some in December to sprout for spring planting. Two road trips in two days. I've got to stay home and weed and mow for the rest of the week or the yard and garden will be a jungle. Jan, I'll link Pendery's below. The web site is great, but if you're ever in the Fort Worth-Dallas area, you have to visit the store for the sheer pleasure of inhaling all the lovely aromas of the many spices and herbs. Don't miss their chili mixes. They are great and come in many combinations. On my list of recipes to try..... -Grainlady All-Purpose Spice Rub (source: Everyday Foods - October 14, 2013) Makes 1 1/4 cups (enough to season 5 to 10 pounds of meat, poultry, or seafood) 1/3 cup coarse salt 1/4 cup packed light-brown sugar 1/4 cup paprika 2 tablespoons ground black pepper 2 tablespoons dried oregano 2 tablespoons dried thyme leaves 1 tablespoon cayenne pepper (optional) 1. In a small bowl, combine all the ingredients, using your hands to break up the sugar. Now, Try Your Own... Experiment with your favorite spices and dried herbs; just keep the quantities of coarse salt and light-brown sugar the same as in the all-purpose recipe. Here are a few ideas to get you started. -Southwestern Rub: Replace some of the paprika with cumin, coriander, and chili powder. -Indian Rub: Replace the oregano and thyme with turmeric, curry powder, ground ginger, and cardamom. Mediterranean Rub: Replace some or all the oregano and/or thyme with dried tarragon, marjoram, rosemary, dill, or basil. Omit the cayenne pepper. Down to Basics: For each pound of meat, poultry, or seafood: First, coat with 2 to 3 teaspoons vegetable oil, then 1 to 2 tablespoons spice rub. After applying the rub, you can either grill foods immediately or let them sit and develop more flavor. If preparing ahead of time (up to 24 hours), you can apply the rub to chicken and turkey parts, steaks, pork chops, lamb chops, ribs, brisket, or pork shoulder. (The larger the cut, the more it will benefit from a long coating time.) Cover and refrigerate; bring to room temperature before grilling. Fish and shrimp are best grilled within an hour of rubbing. To prevent foods from sticking, oil grates well, and don't move the food for the first minute or so of cooking; this will allow a solid crust to form. Rubs are not just for grilling. They're also great for roasting and broiling. Note: Before handling raw meat, measure out the amount of rub you'll need, and set it aside; this way, you'll avoid contaminating the unused rub.

CHILI-SPICED CHICKEN BREASTS Exchanges Serves: 4....... Ready in 30 minutes 3/4 tsp. chili powder Pinch salt 1/2 tsp. ground cumin 1/4 tsp. garlic powder 1/8 to 1/4 tsp. cayenne pepper 4 boneless skinless chicken breast halves (4 oz., each) 1 tsp. canola oil 1/4 c, chopped green onions 1 jalapeno pepper, seeded and finely chopped (Wear protective gloves and avoid touching face) 1 garlic clove, minced 1 can (14-1/2 oz.) diced tomatoes, undrained 1 tsp. cornstarch 2 tsp. water Combien the first 5 ingredients; rub over chicken. Interesting take on change and ruts. As much as I see I may be in a rut, I don't consider myself adverse to change in the least. I thrive with change.. I made my living selling and implementing change. But I don't necessarily see the majority of things we're discussing here as "game changing" changes.. "life changing" changes. I suppose a makeover could be life changing.. but for most of us, I doubt that's the case. Pal, I think you've made an excellent point. Having routine and some things simplified in one aspect of our lives can give us the freedom to seek change in others. I worked and lived with some brilliant researchers and they all had odd quirks in their routines. I too know people who literally eat the same things every day (not quite the extreme of the same thing every meal lol). I think of this as variety though-- not change. I guess that is my big aha of the day.. variety does not equal change. Personally, I like variety but I need change. I am on the cusp of a change-- I am looking for a new job, i am preparing for the eventual move of my bf cross country. My life is going to change a great deal.. and I am impatient. I am sitting here ready for the changes to come.. but I am impatient. The one great mystery is that while we can welcome and even direct change, we cannot control it. Sure, I can change my hair, my nail color.. .I can try new recipes or cooking techniques. I can change my toilet paper and my workout routine.. but that's not going to make the job offers come rolling in. They might give me the illusion of change as I sit here waiting for it though. Or not :) I have been through this before. The antsy feeling of anticipation and impatience. I remember when I first saw the movie Chocolat-- silly as it is, I remember having a great sense of understanding when a wind came up and Vianne Rocher (Juliette Binoche's character) knew it was time to move on.. I liken it to the way my dogs used to respond to the big gusts in the fall that proceeded snow. They'd lift their noses and then perform antsy dances. Who knows what they were responding to.. could have been carried in with the winds scents.. or low pressure.. but it was a marked response to something in the air. I feel change is in the air and I am forced to sit here and wait for it. So yeah, I'll get my hair done.. select the new paint color for the lr... organize the pantry.. all so that I am ready when the new opportunity arrives. Kind of like the nesting behavior we see in expectant mothers. (and please -- no apologies for branching a thread. That's what conversations do! It's all good!)

Yep that's it Jessy, I quadruple it and keep it in a spice tin. It's great on anything, baked, pan seared or grilled!

DELISH!

Oh and I use brown or raw sugar.

Here's one I use - to me, this is THE flavor in Chinese chicken wings:

Five Spice Powder:

2 Tbsp whole black peppercorns
36 whole cloves
12 inches stick cinnamon
12 whole star anise
2 Tbsp fennel seed

Process in blender/food processor 3 minutes on and off until pulverized. Rub some oil over your chicken, then rub on a few teaspoons of five spice powder and grill.

My recent favorite is from Penzey's spices. It's called Bangkok Blend. I don't have exact proportions, but the ingredients are sweet pepper, garlic, ginger, black pepper, galangal, hot pepper, lemon grass, basil, and cilantro. It's beyond delicious. One of the few "prepared" spice mixes I've really liked over the years.

Oh, thanks guys! These are exactly the sorts of ideas I need. Generally, I open my spice cabinet and just get creative, but there are those nights when I'd just as soon eat a PBJ than cook, but have to cook dinner anyway. Then I revert to my mother's typical meal during my childhood, some kind of meat thrown on the broiler or in a pan, boiled potatoes/rice and frozen veggies. Not exciting, but at least decently healthy. An herb-spice mix ready to sprinkle injects at least a bit of flavor.

I forgot about Penzey's spice mixes, I'll have to check out a couple. Also forgot all about Bell's Seasoning, which was a staple spice mix in my kitchen when I first moved out as a teen and didn't know much about cooking...I remember it was a great addition to Chicken.

And, oddly enough, though I wouldn't think about making a bbq sauce without sugar or some other sweetener, it never occurred to me to add it in a spice rub. Funny the things you just don't think of!

Y'all have got me inspired, I think I'll make up a couple of jars of "sprinkles" this afternoon!

Rachel, Elery loves Penzey's new Mural of Flavor, it's a salt free seasoning blend. I really like the Head Country dry seasoning that David (lakeguy) sent me too, if you can get that locally.

As for my own spice mixtures, I really like Lars' cajun spice blend, I'm sure he'd post it since I'm at work. Elery likes this one for chicken, and he uses the smoked spanish paprika from Penzey's. I've discouraged him from adding more cayenne, LOL.

Chili Blend

6 tablespoons onion powder
3 tablespoons paprika
2 tablespoons ground mustard
1 tablespoon garlic powder
2 teaspoons dried oregano, crushed
1 teaspoon chili powder
1 teaspoon black pepper
1/4 teaspoon cayenne pepper

In a bowl, combine all ingredients. Store in an airtight container.

Here's one I found on all recipes for jambalaya - I use it for alot of things such as homefries, potato salad, meats oh yeah, I think I actually tried it with the jambalaya. I also gave some to friends.
Creole Seasoning Blend
* 2 tablespoons onion powder
* 2 tablespoons garlic powder
* 2 tablespoons dried oregano
* 2 tablespoons dried basil
* 1 tablespoon dried thyme
* 1 tablespoon black pepper
* 1 tablespoon white pepper
* 1 tablespoon cayenne pepper
* 5 tablespoons paprika
* 3 tablespoons salt

Weeee! Keep 'em coming folks, if you've got more! We are headed into bbq season around here (when you cook on the bbq to avoid heating your house by using the stove...anything over 90 degrees and I am NOT turning on a burner inside) and will try all suggestions!

I was curious about that smoked paprika that Penzey's offers, Annie, so I guess I'll have to order some and play with it since your man likes it so much. I'm out of Sumac for Za'atar anyway.

And gosh, Cookie, you've got me thinking about Jambalaya...haven't made it in ages. And thoughts of Cajun cooking in general bring Etouffee to mind. Mmmm...

When I grill steaks, on occasion, I'll use this rub. I love it! I know it sounds a little different but I promise the coffee taste is not strong.

I bet a mix of salt, garlic powder, unsweetened cocoa powder and cayenne would be nice. I tried the Michael Chiarello cocoa rub once, found it too peppery, but liked the idea of using cocoa.

I made up this dry rub recipe some time ago & it's still one of our favorites. It smells wonderful cooking!

MOLE DRY RUB

1/4 Cup Cocoa
2 Teaspoons Chipotle Powder
2 Teaspoons Ancho Powder
1 Teaspoon Ground Cumin
1 Teaspoon Powdered Garlic
1 Teaspoon Dehydrated Thyme
1 Teaspoon Cinnamon
1/2 Teaspoon Ground Allspice
1/2 Teaspoon Ground Paprika
2 Teaspoons Sea Salt
1 Teaspoon Black Pepper

I tend to keep sodium down so you might want to increase the salt.
