This may not appeal to you but we love it served with rice and broccoli. I don't deep fry I use a wok or a large fry pan. It's very different and very yummy.

Orange-Glazed Crispy Beef - Ricardo

For the Batter

250 ml (1 cup) unbleached all purpose flour
125 ml (1/2 cup) tapioca starch or
cornstarch
15 ml (1 tablespoon) sugar
2 1/2 ml (1/2 teaspoon) salt
180 ml (3/4 cup) lager or pale ale
125 ml (1/2 cup) water
454 g (1 lb) cold leftover roast beef cut into strips
60 ml (1/4 cup) tapioca starch or cornstarch
Oil For Frying

For the Sauce
60 ml (1/4 cup) soy sauce
10 ml (2 teaspoons) corn starch
125 ml (1/2 cup) sugar
30 ml (2 tablespoons) rice vinegar
3 cloves garlic minced
Grated zest of 2 oranges
15 ml (1 tablespoon) chopped fresh ginger
1 ml (1/4 teaspoon) hot pepper flakes or cayenne
Juice of 2 oranges

Directions:
For the Batter

1. Heat the oil, setting the deep fryer to high. Preheat the oven to 100C (200F). Line a baking sheet with paper towels.
2. In a bowl, combine all the dry ingredients. Add the liquid ingredients, whisking until the batter is smooth. Set aside.
3. In another bowl, combine the beef and the starch.
4. Divide the beef slices into 5 equal portions. Coat 1 portion with batter. Drop the battered strips 1 by 1 into fryer to prevent them from sticking together. Fry for 2 to 3 minutes. Drain, transfer to the baking sheet and keep warm in the oven. Repeat for the remaining portions.

For the Sauce

1. In a bowl, combine the soy sauce and the starch. Set aside.
2. In a large skillet or wok, bring the sugar, vinegar, garlic, orange zest, ginger and hot pepper flakes to a boil.Simmer until the sugar begins turning gold. Add the orange juice and simmer for 1 minute.
3. Add the soy sauce mixture, whisking constantly. Bring to a boil. Off the heat, add the cooked beef strips and turn it gently with a spatula until well coated.
4. Serve immediately.

Vegetable Beef Soup. I threw in the leftover au jus, mashed potatoes, fried corn, sauteed mushrooms, red wine. It was terrific.

At first I thought it was a terrible waste of PR but it turned out so good, DH ate 3 bowls then the rest for breakfast.

I just sear each side quickly to warm and serve like steak.

We like to make left over prime rib into Cheese Steak Sandwiches. Don't really have a recipe, just a throw together. Cut meat into thin strips. Saute strips of onion and green/red peppers until nicely browned, add meat strips. Stir in any kind of cheese you have handy. Mozerlla or Cheezwiz will work, have also used cream cheese. Put on sub rolls or any hard roll.

Two more favourites of my DH's. Can't say I love them but then again I'm not much of a beef eater. I don't even like the prime rib first time around! LOL

Beef pot pie, beef, gravy, peas, carrots and mushrooms.

Not sure what to call this one. Shredded beef in a mushroom cream sauce served over puff pastry shells.

Shephards Pie!

We love having that as leftovers almost as much as the first run!

What about an open faced hot beef sandwich with homemade fries. Although you don't want to make French dip, that and the hot roast beef sandwich would be my preference. We like our beef rare and I wouldn't want to recook and turn a perfectly good piece of prime rib into a stew or casserole.

I like it just sliced thin salted and served on a hard roll with mayo and lettuce....just about my fave sandwich!

This isn't the answer to your question but be sure to save the bones and the next night, you can have Devilled Beef Bones for dinner. Rub bones with cut garlic cloves, then sprinkle with Worcestershire sauce and rub it in. Spread on both sides with a spicy good-quality prepared mustard. Roll ribs in fine dry bread crumbs. Bake at 400 degrees for about 15-20 minutes or until crumbs form a crispy coating and meat is warmed through. Serve with plenty of napkins.

OH dem bones! I tried Ruthanna's Deviled Beef Bones one time and they were to die for! Loved them!!!!!!!

I ended up with a beautiful beef burgundy pot pie! It was wonderful. DH looked at me funny when I told him I was making pot pie (I did save him a nice big slice for a hot sandwich today), but he ate the whole pie and was still raving about it this morning! LOL

Angela, I'm way too late on this, but the pot pie sounds delicious.

Like LindaC, my favorite way to use the leftovers of something like prime rib is just to slice thinly and make a sandwich, I like beef very rare and it seems too done if I heat it much.

Leftover pot roast? Now that I'd make Chase's Orange Beef with, I've got to try it, it sounds delicious. Ashley, however, would go for the hot beef sandwich....
