Cook Red Meat With White Wine?

John Liu

I'm making some pork belly and decided to use white wine in the sauce, because I didn't have a bottle of red open. It is coming out okay, quite a bit lighter than previous rosso-fueled efforts.

This made me wonder how often meat sauce recipes call for white wine? Poultry, sure. Pork, I guess.

What about beef, goat, lamb - red meats? Do you ever use white wine in preference to red when cooking these?

I know in Japanese and Chinese cooking, all wine used for beef or other meat is ''white'', but I'm not even sure you can make red wine with rice.
