First Cast Party Of The Year On Sunday

Hi everyone,

Our first cast party of the year is on Sunday. This time, I'm making cobbler again, but using peach pie filling instead of blackberry. That's what so neat about this recipe: ANY fruit pie filling may be used. Cherry was also a flavor that I was considering, but something told me to go with peach.

Thank you, Rusty! The first kind of pie filling I thought of using for this recipe was strawberry. I don't really care for pineapple, and people usually like angel food cake with strawberries on it, so I made a connection. I agree about using any kind of fruit pie filling in this recipe. I thought about using blueberry pie filling sometime, too. However, Wal-Mart was all sold out of it when I was there yesterday. I wonder how peach pie filling would go with this recipe? I'm always happy to hear that my gram's lemonade is so popular with friends. I have it memorized now, so I can tell people or write it for them on the spot if they want the recipe. Brad AKA Moonwolf

I frequently make a dill dip, and I add a bit of lemon juice and garlic to it. I bought a small bunch of dill (for $1.00) at the Hollywood Farmers' Market last Sunday, but I used most of it to make a large batch of tartar sauce, which is similar to your dill dip, but it has pickles in it. It is definitely a good idea to use fresh dill (if possible) instead of dried, as it will have more flavor. I planted some dill seeds last week, and they are just now beginning to come up. Have you tried growing dill yourself? I have a lot of parsley in my yard right now - that is also easy to grow. If you add garlic and lemon to your dip, you can use regular salt instead of seasoned salt. I mash the garlic in a mortar & pestle with a bit of Kosher salt to make a paste, and I substitute this for seasoned salt. If you use dried onions instead of fresh (I use chives because I also have those in my yard), you will probably need to thin the dip a bit, but lemon juice will work for that. You might want to add some freshly ground black pepper also. Using cream cheese instead of mayo will also make the dip too thick, but you can use it if you thin it with milk or lemon juice.

Ann, I'm glad to hear it was a good choice. Instead of white cake mix, mom said I can use a box of French Vanilla cake mix instead and I also bought churn style vanilla ice cream and Cool Whip to serve with it.

Something tells me I'm spoiling my friends at the theatre lol.

Yum, I love peach cobbler, although Grandma always made ours with a biscuit kind of topping and so that's how I make mine.

We can't argue with our Grandmas, now can we? (grin)

I think you're getting really popular at those cast parties.

Cobber is all baked and ready for tomorrow! I also made some iced green tea from teabags lol (Orange, Passion Fruit and Jasmine flavor).

One question: Could I reheat this in the oven before it's time to serve it? If so, what degrees and for how long?

Ann, well, I don't know about me, but dad's more than welcome to a piece too, lol. Actually, he doesn't care much for cobblers, so I may end up eating one of the final pieces lol.

Dad got the last of it, at least I think so, I remember him eating a piece, but I wasn't sure if it was the last of it or not LOL.

To think, all this cobbler takes is a box of white cake mix (for this cobbler, I used French Vanilla cake mix), 2 cans of any fruit pie filling, a stick of butter and an egg.

Brad, your cobbler looks really good!

One tip I learned from my mom that you can use to kick it up a notch: sprinkle a little sugar on top of the dough before you bake it.... I never measured, but I'd say just a tablespoon or two of plain white sugar. It makes cobblers look prettier by giving it a nice sparkle/shine, and also gives it just a little *crunch* when you bite into the sugary parts of the dough. :)

The beauty, well, one of the beauties of a cobbler is you can use different fruits or combine them too. Mix them together, or do a half and half or sort of swirl it in.

I'm not a fan of peaches and I'm not sure why. But an apple filling with a spice cake topping and sprinkle it with cinnamon sugar has me interested. Or any kind of berry and maybe a banana cake mix with a vanilla sugar sprinkle. Just a couple of the myriad of possibilities. It's another comfort food.

And if you happen to have access to fresh fruit, you can always adapt it to the recipe easily too.

Keep on cookin' Wolfie! Your friends and family will love it. And I know you'll have a great time doing it. :)

Cynic, I agree, fresh fruit would take it up another notch.

Fresh peaches, though, I could get right into that. Or apricots. Or cherries and chocolate, like Black Forest.

I'm glad your Dad got to try some, Brad, I'll bet he brags about how his son can cook.
