Appetizers---Party Time?

Now that we all have our new copy of AnnT's appetizer chapter, do you want to have another party?

I'm thinking Monday May 5th or May 12, unless you have a better idea.

It's been suggested that we have a party after each new chapter. Hey, we have to cook something anyway... :))

oh YES! I totally had to skip the dessert one - bad timing - but since I make one of Ann's desserts each time I have to actually make a dessert, I let it slide... :-)

But I really want to join in! I hope you go with the 12th, I think - I am REALLY up in the air as I have to wait and see what I have to do with a jury duty summons..........................................you wouldn't want to do a weekend?

Stacy, I think that it worked pretty good to set Monday as the day with the idea that you could actually do the cooking on Sat, Sun, or Mon...

I can start the thread for posting the write ups and pics on beginning Sat with Mon being the day to post if there wasn't time on Sat or Sun. Like last time, I would also encourage late posts also...life does get in the way sometimes. So just think of Monday as being the 'goal' date.

Surprise Cheese Balls. Keep 'em frozen then pop in the oven for 15 minutes. Surprise Cheese Balls 2 cups sharp cheddar cheese, grated 1 stick butter, softened â¨1 cup flour â¨1/2 teaspoon cayenne pepper â¨1/2 teaspoon dry mustard â¨1/2 teaspoon salt (I use a little less) â¨1 teaspoon paprika â¨1 small jar pimento stuffed olives (drained and wiped dry) or whole small pecans â¨Sift dry ingredients together. Cream softened butter and cheese then stir in dry ingredients. â¨Â â¨Take about 1 teaspoon of dough and flatten. Put an olive (or pecan) in the middle and wrap dough around it, then roll to make a ball. Put tray of balls in freezer until firm, then pop into Ziploc bags. Â Bake (frozen) at 400Â° for 15 minutes. blizlady, that would be Sherry (sheshebop), she makes the spinach "brownies" and I love 'em. How many people do you have to serve appetizers to, Dawn? Little pate choux puffs, tiny cream puffs, can be filled with various fillings including chicken salad, egg, tuna or seafood salad, a thick southwestern chicken kind of filling, whatever you like. I make rye puffs and fill with reuben fillings and they can be done ahead of time easily. Reuben Puffs 1 cup water 1/2 cup butter, cubed 1/2 cup all-purpose flour 1/2 cup rye flour 2 teaspoons dried parsley flakes 1/2 teaspoon garlic powder 1/4 teaspoon salt 4 eggs Caraway seeds CORNED BEEF FILLING: 2 packages (8 ounces each) cream cheese, softened 2 packages (2 ounces each) thinly sliced deli corned beef, chopped 1/2 cup mayonnaise 1/4 cup sour cream 2 tablespoons minced chives 2 tablespoons diced onion 1 teaspoon spicy brown or horseradish mustard 1/8 teaspoon garlic powder In a large saucepan over medium heat, bring water and butter to a boil. Add flours, parsley, garlic powder and salt all at once; stir until a smooth balls forms. Remove from the heat; let stand for 5 minutes. Beat in eggs, one at a time. Beat until smooth. Drop batter by rounded teaspoonfuls 2 in. apart onto greased baking sheets or make puffs with a pastry bag. Sprinkle with caraway. Bake at 400° for 18-20 minutes or until golden. Remove to wire racks. Immediately cut a slit in each puff to allow steam to escape; cool. In a large bowl, combine the first eight filling ingredients. Split puffs; add filling. Refrigerate. Yield: 4-1/2 dozen. I make these cheese thumbprints filled with hot pepper jelly, they are pretty popular. I make my own habanero jelly to fill them with, but anything you like could be used, including salsa. I got the recipe from Carol (Readinglady) and she's never given me a bad recipe! Savory Cheddar And Jalapeno Jelly Cookies 8 oz (about 2 1/2 cups) finely grated (use smallest holes on grater box) extra-sharp cheddar cheese 6 tbs (3/4 stick) unsalted butter, at room temperature 1 cup all purpose flour 1/3 cup jalapeno jelly, apple butter, or chopped chutney Place cheese ad butter in a food processor and pulse a few times to combine. Add flour and process until mixture forms a soft dough. Gather up dough and divide into two flat disks. Wrap in wax paper and freeze until chilled, about 45 minutes. Position two racks in center and top third of oven. Line baking sheets with parchment paper or silicone pads. Place the jelly in a small plastic bag and force it into one corner. Snip off the corner of the bag to make a small hole. Set bag aside. Using 1 tsp of dough for each, roll the dough into small balls. Place the balls 1-inch apart on the prepared baking sheets. Bake for 5 minutes. Remove from oven. Using the end of a wooden spoon or a 1/2-inch wide dowel, poke an indentation in each cookie. Pipe the jelly from bag into the indentation. Return to the oven and bake, switching the position of the sheets from top to bottom, halfway through baking, until the tops are lightly browned, about 10 minutes (the cookies will continue to crisp as they cool). Transfer to a wire cake racks and cool completely. Can be prepared 2 days in advance in stored in air tight containers at room temperature. OK, first I use a spoon, not a bag, for the jelly, I made a big mess with that ziplock bag thing. Second I bake them one pan at a time, I don't do the remove/switch thing, it's easier for me to do one pan at a time. Third, this dough is very similar to another one posted here by Weed, so you could wrap it around an olive or pecan, etc., and make a whole difrferent kind of appetizer. I doubt I'd take the time to wrap the dough, I'd probably plunk an olive in the middle of the "cookie" and call it good, LOL. If you don't do something like the puffed sandwiches, Ann T's Gougiere would be lovely, I think. An antipasta plate could be nice and could be entirely assembled ahead of time and I've had Caprese-on-a-stick, which was basically a cherry tomato, a chunk of marinated mozzarella, an olive and a leaf of basil, all skewered for serving. Meatballs would stay hot in a crockpot or small Nesco roaster without any last minute prep at all, as would chicken wings, although those could be messy unless they are boneless. Hi all! What a great success the party turned out to be...everyone loved the food they were very surprised that the hosts daughter was making all the major goodies. I got accolades abounding, offers for jobs to cater, and questions as to whether I do this for a living and why aren't I? [um, 'cause it's *hard*!, all you pros have my complete respect] I just felt like a million bucks for making Mom and Dad's guests happy. I can only say thank you to everyone here for being an inspirational support system and fueling my cooking desire where I felt strong enough to do this. Hell, having people over for dinner is one thing, taking your show on the road in someone else's kitchen is another altogether!!! I was major league stressed out praying this would all work out. Again, without all of you and the great experiences I've had cooking new and different things and honing new skills in not only preparing but presenting food - I would never have had the intestinal fortitude to attempt such a thing. I love that my Mom and Dad were able to entertain friends they haven't seen in years with confidence. Whew! Thank you. Oh, and BTW my laptop took a nose dive Friday so I was flying by the seat of my pants and couldn't even check in here or ask you guys one of a million questions unless I hit one of the other pc's in the house and with all the prep I mired myself in that was not in the cards, or I woulda been all over you guys with questions!! Oh, I love appetizers! I'll bring a big platter of strawberries, both plain and chocolate covered and this dip: MARSHMALLOW FRUIT DIP 1 jar marshmallow cream 1 - 8 oz. pkg. cream cheese Mix together and chill. I was going to bring these little yummy biscuits, but it's too close to Marci's recipe: PIZZA BUBBLE RING 6 to 8 tablespoons LAND O LAKESÂ® Butter, melted 1 teaspoon Italian seasoning 1/2 teaspoon garlic powder 2 cans (12 oz each) PillsburyÂ® Golden LayersÂ® (Jr. Grands) refrigerated original biscuits 40 small slices pepperoni (about 3 oz) 8 oz mozzarella cheese, cut into 20 pieces 1/4 cup grated Parmesan cheese 1 1/4 cups pizza sauce, heated Heat oven to 350Â°F. Spray 12-cup fluted tube pan with cooking spray. In small bowl, mix melted butter,Italian seasoning and garlic powder. Separate 1 can of dough into 10 biscuits; press or roll each into 3-inch round. Place 2 pepperoni slices in center of each biscuit round. Top each with piece of mozzarella cheese. Bring dough up around filling; press edge to seal and shape each into ball. Roll in butter mixture; place 10 balls in pan. Sprinkle dough balls with Parmesan cheese. Repeat with remaining can of biscuits, placing balls over balls in pan. Pour remaining butter mixture over top. Bake 33 to 38 minutes or until deep golden brown. Cool 5 minutes. Gently loosen bread from sides of pan. Place large heatproof plate upside down over pan; turn plate and pan over. Remove pan. Serve warm with warm pizza sauce for dipping. Can substitute Italian sausage for pepperoni.

I'd like to participate this time, but would have to do the actual cooking and serving of the appetizers on the weekend before since I have a night class on Mon. nites, 6-9 and work during the day.

I'd be up for it but it would have to be around the 12th. And as Ann stated, I just might do an all appetizer dinner as I love sampling lots of different things.

I just need to see what is up with Photobucket as to why I'm not being able to post pictures here anymore. My pictures are there but when I try to pull them over now to here, I get an error message on this board. I didn't have that problem in the past.

I'll play and I too may do a selection. The weekend preceding the 12th is best for me. Might make it into a cocktail party if we are at the lake.

I'm out of this one. I'm getting married on the 10th and I'll be....um.....occupied. LOL

I'll be sending honeymoon pictures from Joe's Gizzard City, though. (grin)

I'm on the fence for now...very busy month for me with birthdays, graduations, Mothers Day, and work. I'll try and join in if my schedule allows it. I'll be watching the posts for sure!

I can't do it the 5th, but maybe the weekend after that, but I don't know, that's Mother's day. I don't know if I can do it this month, I'm busy pretty much every weekend, too. I'll enjoy seeing what y'all make, though.

I need to take an appetizer to a get together on the 13th. This would be a good excuse to cook something out of the ordinary so count me in.

By the way, I'm kinda out of it, where do I find Ann T's appetizer recipes?

I would love to do the appetizer party, but don't think I will be able to with two birthdays, graduation and Mothers Day. But if I can I will and might just do it anyway even if not on the exact day.

Ann, thanks again for the recipes. I have enjoyed looking at the appetizer and dessert recipes and look forward to making many of them!

May 12 it is! I hope it works out for as many as possible. I know life gets in the way, but I figure it's only going to get busier!

Annie....you are excused! I hope you and Elery are going to be able to take some time off for a Honeymoon!!!! I'm just so excited for you two!!!!

I might plan to make my appetizers for dinner either on Friday or Saturday night, then post my pics on Sunday or Monday. Lots of nibblies make a terrific dinner in my book!

I'm still participating on the 12th, but decided to have an appetizer dinner last night too.

Warm goat cheese on slices of baguette, some with roasted red peppers and some with Tapenade,

Tuna Pate,

and Brie.

And to make it a little better we drank Champagne with it.
