Appetizers---Party Time?

Now that we all have our new copy of AnnT's appetizer chapter, do you want to have another party?

I'm thinking Monday May 5th or May 12, unless you have a better idea.

It's been suggested that we have a party after each new chapter. Hey, we have to cook something anyway... :))

oh YES! I totally had to skip the dessert one - bad timing - but since I make one of Ann's desserts each time I have to actually make a dessert, I let it slide... :-)

But I really want to join in! I hope you go with the 12th, I think - I am REALLY up in the air as I have to wait and see what I have to do with a jury duty summons..........................................you wouldn't want to do a weekend?

Stacy, I think that it worked pretty good to set Monday as the day with the idea that you could actually do the cooking on Sat, Sun, or Mon...

I can start the thread for posting the write ups and pics on beginning Sat with Mon being the day to post if there wasn't time on Sat or Sun. Like last time, I would also encourage late posts also...life does get in the way sometimes. So just think of Monday as being the 'goal' date.

Oweeee, my mouth is watering and I have already HAD breakfast! These menu ideas and traditional menus are awesome. ItÃ¯Â¿Â½s so interesting to see what everyone has for their traditional meals at this holiday! Since my family members are scattered all over the place in different locations, we are not having any type of traditional meal, and IÃ¯Â¿Â½ve been in a sour mood because of this separation during the holidays. We will have only our youngest son here with his new wife visiting from Chicago, and she eats only vegetarian, so IÃ¯Â¿Â½m trying to come up with menu ideas that will please her, as well as DH and son, who are big meat eaters. Will probably do some type of local fish, to please son who canÃ¯Â¿Â½t find it in Chicago, and lots of yummy vegetable sides. Suggestions are always welcome! All your menus sound wonderful!

blizlady, that would be Sherry (sheshebop), she makes the spinach "brownies" and I love 'em. How many people do you have to serve appetizers to, Dawn? Little pate choux puffs, tiny cream puffs, can be filled with various fillings including chicken salad, egg, tuna or seafood salad, a thick southwestern chicken kind of filling, whatever you like. I make rye puffs and fill with reuben fillings and they can be done ahead of time easily. Reuben Puffs 1 cup water 1/2 cup butter, cubed 1/2 cup all-purpose flour 1/2 cup rye flour 2 teaspoons dried parsley flakes 1/2 teaspoon garlic powder 1/4 teaspoon salt 4 eggs Caraway seeds CORNED BEEF FILLING: 2 packages (8 ounces each) cream cheese, softened 2 packages (2 ounces each) thinly sliced deli corned beef, chopped 1/2 cup mayonnaise 1/4 cup sour cream 2 tablespoons minced chives 2 tablespoons diced onion 1 teaspoon spicy brown or horseradish mustard 1/8 teaspoon garlic powder In a large saucepan over medium heat, bring water and butter to a boil. Add flours, parsley, garlic powder and salt all at once; stir until a smooth balls forms. Remove from the heat; let stand for 5 minutes. Beat in eggs, one at a time. Beat until smooth. Drop batter by rounded teaspoonfuls 2 in. apart onto greased baking sheets or make puffs with a pastry bag. Sprinkle with caraway. Bake at 400° for 18-20 minutes or until golden. Remove to wire racks. Immediately cut a slit in each puff to allow steam to escape; cool. In a large bowl, combine the first eight filling ingredients. Split puffs; add filling. Refrigerate. Yield: 4-1/2 dozen. I make these cheese thumbprints filled with hot pepper jelly, they are pretty popular. I make my own habanero jelly to fill them with, but anything you like could be used, including salsa. I got the recipe from Carol (Readinglady) and she's never given me a bad recipe! Savory Cheddar And Jalapeno Jelly Cookies 8 oz (about 2 1/2 cups) finely grated (use smallest holes on grater box) extra-sharp cheddar cheese 6 tbs (3/4 stick) unsalted butter, at room temperature 1 cup all purpose flour 1/3 cup jalapeno jelly, apple butter, or chopped chutney Place cheese ad butter in a food processor and pulse a few times to combine. Add flour and process until mixture forms a soft dough. Gather up dough and divide into two flat disks. Wrap in wax paper and freeze until chilled, about 45 minutes. Position two racks in center and top third of oven. Line baking sheets with parchment paper or silicone pads. Place the jelly in a small plastic bag and force it into one corner. Snip off the corner of the bag to make a small hole. Set bag aside. Using 1 tsp of dough for each, roll the dough into small balls. Place the balls 1-inch apart on the prepared baking sheets. Bake for 5 minutes. Remove from oven. Using the end of a wooden spoon or a 1/2-inch wide dowel, poke an indentation in each cookie. Pipe the jelly from bag into the indentation. Return to the oven and bake, switching the position of the sheets from top to bottom, halfway through baking, until the tops are lightly browned, about 10 minutes (the cookies will continue to crisp as they cool). Transfer to a wire cake racks and cool completely. Can be prepared 2 days in advance in stored in air tight containers at room temperature. OK, first I use a spoon, not a bag, for the jelly, I made a big mess with that ziplock bag thing. Second I bake them one pan at a time, I don't do the remove/switch thing, it's easier for me to do one pan at a time. Third, this dough is very similar to another one posted here by Weed, so you could wrap it around an olive or pecan, etc., and make a whole difrferent kind of appetizer. I doubt I'd take the time to wrap the dough, I'd probably plunk an olive in the middle of the "cookie" and call it good, LOL. If you don't do something like the puffed sandwiches, Ann T's Gougiere would be lovely, I think. An antipasta plate could be nice and could be entirely assembled ahead of time and I've had Caprese-on-a-stick, which was basically a cherry tomato, a chunk of marinated mozzarella, an olive and a leaf of basil, all skewered for serving. Meatballs would stay hot in a crockpot or small Nesco roaster without any last minute prep at all, as would chicken wings, although those could be messy unless they are boneless. This corn & pecan dip has gotten raves on the Food Forum. Corn & Pecan Dip 2 8-oz. pkg cream cheese, softened Â¼ c. lime juice 1 Tbsp ground cumin 1 Tbsp ground red chiles (I used 2 tsp cayenne and it was plenty hot) Â½ tsp salt dash black pepper Â¼ c vegetable oil 1 16-oz. can whole-kernel corn, drained 1 c. chopped pecans 1 small onion, diced (I like more) In a large bowl, combine all ingredients except corn, pecans, and onion. Beat until smooth with electric mixer on medium speed. Stir in corn, pecans, and onion. Serve with tortilla chips Or how about the classic spinach & artichoke dip? This recipe is from Southern Living. FLORENTINE ARTICHOKE DIP 1 (10-ounce) pkg frozen chopped spinach, thawed 2 (6 1/2-ounce) jars marinated artichoke hearts, drained & chopped 3 garlic cloves, finely minced 1/2 c. mayonnaise 12 oz cream cheese, softened 2 Tbsp fresh lemon juice 1 c. freshly shredded Parmesan cheese 1 1/2 c. French breadcrumbs, (homemade...see note) 2 Tbsp butter, melted DRAIN spinach; press between layers of paper towels to remove excess moisture. Drain and chop artichoke hearts. Combine spinach, artichoke hearts, garlic, and next 4 ingredients, stirring well. SPOON into a lightly greased 11" x 7" baking dish. Combine breadcrumbs and butter; sprinkle over spinach mixture. BAKE uncovered at 375Â° for 25 minutes. Serve with assorted crackers, bagel chips, or breadsticks NOTE: To get 1 1/2 cups breadcrumbs, tear off a piece of baguette. Pulse in a food processor until coarse crumbs form. Measure crumbs, tear off another chunk, and repeat procedure until you get 1 1/2 cups These toasts are excellent. Robust Onion Cheese Toast 1 cup mayonnaise 1 8-zs pkg cream cheese, softened 4 oz blue cheese, crumbled 2 Tbsp chopped parsley 2 Tbsp minced onion Â½ teaspoon minced garlic Â½ teaspoon hot pepper sauce Â½ teaspoon white pepper 1 loaf sliced cocktail rye bread Combine mayo, cream cheese, blue cheese, parsley, onion, garlic, pepper sauce and white pepper. Cover and chill for 2 hours to let flavors blend. Can be made up to 2 days in advance. Spread 2 teaspoons mixture on each slice of bread and place on an ungreased cookie sheet. Cover with plastic and chill until ready to serve. To Serve: Preheat oven to 400 degrees. Uncover baking sheet and bake 10 Â 15 minutes until toasts are puffy and slightly brown.

Sounds lovely, I love appetizers! I add a cheese based appetizer or two and eliminate one of the meats. I'd also be leary of anything requiring a dipping sauce as they can be tricky to serve if you are passing the appetizers and the quests are standing. Also think that something with a zip to it may be nice. Here are two recipes I have great luck with. Spanikopita 16 Oz Phyllo Dough Thawed in the fridge For 24 Hours 10 Oz Frozen Spinach Thawed and drained 3/4 Lb Feta Cheese 1/2 Lb Cottage Cheese - About 1 Cup, Pressed And Drained 1/4 lb Cream Cheese Softened 3 Eggs 1/4 Cup Fresh Dill Chopped Fine Salt Pepper dash of Nutmeg 3/4 Cup Butter Melted In large bowl combine all ingredients except phylo and butter. Working with one sheet of phylo at a time, brush with melted butter and cut in 5 strips lengthwise. Place 1 spoonful of~ mixture at the bottom of each strip about 1 inch from the bottom, fold the bottom piece up over the filling and then fold up into triangles. Fold like you fold a flag, to the left, up , to the right ,up etc. These can be made ahead and frozen for up to three months. When ready to cook:P lace frozen Spanikopita on a baking sheet and bake at 350 for 20 minutes or until golden. Serve warm Salt Baked Potatoes With Goat Cheese 3 Cups Kosher Salt 18 Small New Potatoes Halved And Scooped Out Slightly 2 1/2 TBSP Olive Oil 3 Cloves Garlic Minced 14 Oz Goat Cheese At Room Temp 4 Tsp Fresh Thyme Fresh Ground Pepper To Taste Basil Leaves For Garnish Preheat oven to 400 Spread salt on the bottom of an extra large baking dish. Toss potatoes with 2 Tbsp olive oil. Press potatoes cut side up in salt. Roast for 35-40 minutes or until tender. Remove potatoes and scrap off excess salt. Place potatoes on a clean baking sheet. Turn on the broiler. Heat remaining 1/2 Tbsp of olive oil. Saute the garlic until tender Transfer to a medium sized bowl, add cheese, thyme and pepper. Stir to combine. Fill each potato with the goat cheese. Broil for 1 minute or until bubbling. Serve garnished with basil.

I'd like to participate this time, but would have to do the actual cooking and serving of the appetizers on the weekend before since I have a night class on Mon. nites, 6-9 and work during the day.

I'd be up for it but it would have to be around the 12th. And as Ann stated, I just might do an all appetizer dinner as I love sampling lots of different things.

I just need to see what is up with Photobucket as to why I'm not being able to post pictures here anymore. My pictures are there but when I try to pull them over now to here, I get an error message on this board. I didn't have that problem in the past.

I'll play and I too may do a selection. The weekend preceding the 12th is best for me. Might make it into a cocktail party if we are at the lake.

I'm out of this one. I'm getting married on the 10th and I'll be....um.....occupied. LOL

I'll be sending honeymoon pictures from Joe's Gizzard City, though. (grin)

I'm on the fence for now...very busy month for me with birthdays, graduations, Mothers Day, and work. I'll try and join in if my schedule allows it. I'll be watching the posts for sure!

I can't do it the 5th, but maybe the weekend after that, but I don't know, that's Mother's day. I don't know if I can do it this month, I'm busy pretty much every weekend, too. I'll enjoy seeing what y'all make, though.

I need to take an appetizer to a get together on the 13th. This would be a good excuse to cook something out of the ordinary so count me in.

I would love to do the appetizer party, but don't think I will be able to with two birthdays, graduation and Mothers Day. But if I can I will and might just do it anyway even if not on the exact day.

Ann, thanks again for the recipes. I have enjoyed looking at the appetizer and dessert recipes and look forward to making many of them!

Annie....you are excused! I hope you and Elery are going to be able to take some time off for a Honeymoon!!!! I'm just so excited for you two!!!!

I might plan to make my appetizers for dinner either on Friday or Saturday night, then post my pics on Sunday or Monday. Lots of nibblies make a terrific dinner in my book!

I'm still participating on the 12th, but decided to have an appetizer dinner last night too.

Warm goat cheese on slices of baguette, some with roasted red peppers and some with Tapenade,

Tuna Pate,

and Brie.

And to make it a little better we drank Champagne with it.
