We had appetizers last night for our dinner. We went morel hunting earlier in the day. Didn't find very many morels but it was a nice day to be out. Came home and decided that with the few morels we did find, we could put together a nice variety of goodies...

First I baked...

Then I made Stuffed Endives with Crab Meat. I've made this before, so knew ahead of time we liked it...a lot!

Next was the Spanish Tortilla. It made a really good 'main course' for our appetizer dinner....

Meanwhile Kim, babied the few morels and pan fried them.

Here's my plate, everything was so good I had seconds...

OOOOH Nancy, I wish I had, had dinner at your house last night. Everything looks soooo good. And I love how you were very generous with the crab meat.

I worked yesterday but have today off so decided to do our appetizer dinner tonight. So far I have the filling made for the Asparagus ravioli. That will be our main course. And I think I'll do a small antipasto platter as a starter.

I made Ann's Warm Romaine and Potato Salad...
It was a last minute addition to dinner, so I didn't fry up some bacon..But I love the Creamy Vinagrette! Yummm..Just ate the leftover dressed romaine for lunch!

Lastnights dinner.
Hubby grilled ribs and made mac n cheese. I added roasted asparagas, corn and the Warm romaine and Potato Salad.

I too, made a few appy's for dinner last night. I baked a semolina loaf of bread and used that to make brushcetta, topped with feta. I made Ann's oyster tarts. Very easy and my hubby absolutely loved them. I also made Ann's Shrimps skewered with lemon pesto. Another winner and not a single one left! I had a salad with mine, but hubby just enjoyed the appies. Thanks again Ann!

Shelley, the skewered shrimp with lemon pesto sounds delicious. We just had shrimp a few days ago so I knew Howard would rather I do something different.

I made the Spanish tortilla, too......I erased the pictures from the camera before putting them on the computer and after eating...I can't believe I did that! I made mine in small springform pans (halved the recipe) and they came out really nice looking, of course.

Terri, that is my kind of dinner. Lots of carbs. I haven't made that salad recently. It was one that Matthew really loved so I made it more often when he was still living at home.

Shelley, Great dinner. I love the close up picture of the oyster tarts still in the pan.

Marigene, I'm sorry you deleted your pictures. Knowing what great pictures you take and how good your meals alway look I can use my imagination.

We started with melon and prosciutto drizzled with olive oil and coarse ground pepper, and some hot Genoa Salami , olives and Gorgonzola cheese.

I usually serve the Asparagus Ravioli as a first course but tonight we had it as our main course.

No pictures from me unfortunately! We went on a lake cruise Saturday picking up some friends along the way. It was a gorgeous day, warm and sunny. Stupid me left the camera on the counter in the cottage!

Because we we're on the boat I had to go with room temp/cold appies so I made Ann's Tuna Pate and her Tortilla. Both were a huge hit with our fellow cottagers. Others brought appetizers too, an antipasto platter, fruit and cheese and shrimp so we we're well fed.

Well, my best laid plans of doing three different dishes did not pan out due to having so many other things in the fridge I had to use up. I am usually only able to cook on weekends. I didn't even end up getting to the vichysoise so I still have fennel in the fridge that is now past its prime.
But anyway, I DID make the artichoke red pepper bites, and MAN were they YUMMY! I had them sort of like a crustless quiche for breakfast. As a matter of fact I think I will have the leftovers for breakfast again today.
I have the ingredients for the olive tapenade and mandarin salad so will be making them much later this week or this weekend.
I really enjoyed seeing all your pictures!! Your dinners look so elegant!

Sharon, nice that you got out on the water. Maybe you could take us on a virtual boat ride sometime this summer. I will try also...I'm dying to see the new place that they just finished up the lake from me, already featured in a magazine.

It all looks so good. Alas, I just wasn't able to participate this weekend. DS came over Sunday to fix dinner for me, which was a good thing cause I was not feeling well. I was still not 100% yesterday, plus my DIL and grandson came over to sped the day yesterday. Well, I do have my priorities, and I'm afraid that playing with my GS that I don't get to see very often is way up there. So the appetizers will have to wait.

Funny, when I told DH about the appetizer party, he asked if something from the dessert chapter could count as an appetizer!

Nancy, even if you just dress a salad or toss potatoes in that Creamy Vinagrette...yumm...taste sensation. I used Balsamic, because it was the "closest" I had to red wine vinegar. So it had that wonderful warm deep balsamic yumminess to it!

I printed another recipe on Sunday, but I don't recall it..I'll try and get it done this week.

I had ALL intentions of making appetizers for dinner from Ann's chapter but Mother Nature had other plans. We have been through a tornado and 7+inches of rain that followed a couple of days later. It has been quite a mess around here. Several roads closed, schools closed, etc.

My apologizes for promising to do this and not being able to carry through.

Great looking food ladies! I couldn't pull it off due to my crazy schedule. It's lunch time here and off to eat my boring bowl of leftover chili and cornbread. I'd rather have one of everything posted above.

Oh you all did a fantastic job on your appetizers!

I was going to participate but we went camping and then I was too worn out to make anything.

I planned on making the Hummus and toasting some pita chips to go along with it.

Another day I'll do it.

Wow! Everyone did a great job. I would have loved to participate, but we were driving on goat paths in New Hampshire looking at boarding schools for my son.
I will definitely be trying some of these.
