I have fed my chickens flax seeds for a couple of years now. I never had the eggs tested, but I would be very curious to do so, just to see what the Omega-3 content is. I mostly supplement during winter months, because they do a lot of free ranging when the weather is warm and from what I have read, free ranging greatly increases the Omega-3 content as well. The only problem I've had is that they don't really love the stuff. They'll eat it if I throw some on the ground for them, but when I tried mixing it in with their feed, they picked out the feed and all the flax was left in a pile at the bottom of the feeder. I guess they like it OK as a snack, but there are other snacks they like better, such as commercial bird seed. I've also been curious about that - how does the sunflower seeds, millet, etc in bird seed affect the fat content of the eggs? -Diggity

You can make ghee easily at home. How to make Ghee Ghee is essentially clarified butter. I use organic cultured(European style)UNSALTED butter as the end product tastes richer than with regular butter. Bring the cubes of butter to room temperature so they melt evenly when you start to cook them. Use a heavy bottomed saucepan that has enough height as the ghee will foam during cooking. Make sure the pan and the spoon are thoroughly dry. Add the butter to the pan and cook on medium low heat. In the beginning you want to stir well to prevent over cooking the ghee and burning it. Once the butter is all melted, continue cooking the ghee. It will foam and rise. Keep stirring to prevent burning. The ghee is cooked and done when the foaming subsides and the color is a pale caramel color. Be careful. It is very very hot. Take it off the heat immediately. Due to the retained heat in the pot, the ghee will continue to darken a bit more. Decant when it has cooled but still liquid to a clean glass or metal jar with a tight fitting lid. Use sparingly as this is high in fat. Ghee is highly aromatic and is amazing in omlets, for toasting nuts etc. Keeps forever in the fridge. It will be solid like butter but you can scrape a spoonful as needed. and will melt like butter. If the ghee is very pale and whitish, it needs to be cooked a bit more. If you have dregs in the bottom of the pan, just drain the liquid and use the dregs immediately. This is how my grandmother taught me to cook ghee the traditional Indian way. Ghee and unfiltered unrefined cold pressed coconut oil and raw sesame oil were pretty much the only fats used in cooking then.

Marga Mulino Flaker Mill - for cracked grain, flakes, and coarse farina (for cooked cereal) 3. Corona Corn Mill - for coarsely milled grain and corn meal. 4. Porkert Seed Grinder - for small seeds, such as amaranth, poppy seeds, teff, etc. 5. Bosch Coffee/Spice - for milling flaxmeal. 6. Family Grain Mill - a hand mill, that also has an electric-powered motor to run it as well, that has a lot of attachments available for other uses (meat grinders, flakers, etc.). This is my back-up mill. You have to mill the flour twice to get a reasonably fine grind of flour. Source for recipes: I suggest you start by substituting unbleached/bleached flour in your favorite recipes with a portion of wholegrain flour. There are all kinds of books out there on whole wheat baking. I have a collection of 28 beans, seeds, and grains that I use milled and whole - included in that, several types of wheat. I develop many of my own recipes because I use really "odd" ingredients, including gluten-free baking. Whole Wheat Pastry Flour is milled from (low-gluten) soft red wheat, just like you thought. It's best used just as you described - in baked goods where you don't want a lot of gluten development - for the most part, anything other than yeast breads. Low-gluten bleached flour would include White Lily and Martha White - which are great for quick breads, pastry, etc. I purchase soft white wheat berries from Bob's Red Mill to mill into whole wheat pastry flour. I also use freshly-milled spelt and some rye, barley, and triticale for baked goods that need low-gluten flour, as an alternative to soft wheat flour. All wheat has a protein level that determins if the grain is hard or soft. Even in the same field you'll find protein (gluten) level differences from one side of the field to the other. If a portion of the field is shaded(usually at the edge of the field) and/or there's a low place in the field that retains water after a rain, the wheat that receives a lot of water/shade will usually have a low-protein count. Even though hard wheat may have been planted, the protein level is also determined by the amount of rainfall, and other factors. Soft wheats are characteristicly plump (a lot of endosperm), while hard wheat varieties (especially winter wheat) is small, wrinkled, and very hard when you bite it. When soft whole wheat is milled, the flour is exactly that - very soft to the touch. Hard whole wheat is much 'grittier' - due to the higher percentage of bran to endosperm ratio. All bleached/unbleached flour is milled from a combination of wheat protein levels to formulate the amount of protein for the type of flour needed. High-protein wheat is used for yeast breads, a combination of hard and soft wheat is milled for all-purpose flour, and pastry flour is milled from soft wheat. There are also fields of extremely high protein wheats (15% or more), but they are mixed with lower protein wheat to make flour. I've used some wheat that was 16% protein, and it took forever (lots of kneading and a very long fermentation) to develop the gluten in bread - 12-13% protein level is much better for yeast bread. Too much gluten will make a tough loaf of bread. The highest protein level wheat is durum wheat. Unlike hard red and white wheat varieties which are used for yeast breads, durum wheat is used in pasta. I mill durum for whole wheat pasta - NOT red or white varieties of wheat. Commercial whole wheat pasta is made with wholegrain durum wheat. The elements in wheat protein that we call "gluten" are actually a gluten group - GLUTENINS and GLIADINS. Glutenins provide the elasticity quality that allows bread dough to expand. Gliadins contribute to the viscosity and extensibility of bread dough. Red and white wheat varieties have a dominance of GLUTENINS and less GLIADINS. Durum wheat has a dominance of GLIADINS and less GLUTENINS. Therefore, even though durum wheat has a high protein level, it's unsuited for bread making, due to the type of protein. -Grainlady

FLsandytoes- Proofing the yeast was an interesting "new" twist to making fluffy bread in a bread machine, and one I've never come across. I think there are probably much better methods, but one just never knows..... I had a friend who used fresh yeast in his bread machine and it had to be proofed, so there are some applications for this process in a bread machine. I have a recipe for white sandwich bread that uses 1 cup of white cake mix, as another interesting example for making "fluffy" white bread, due to the soft wheat flour in the cake mix. FYI -- Two tablespoons of non-fat powdered milk, reconstituted, equals 1/2 c. of milk - which is a reasonable amount of milk in a bread recipe without causing crumb and crust problems. Much more than that and you will need to scald the milk first to avoid the textural problems caused by too much milk (from the milk whey protein). Heating the milk denatures the problematic protein. Try the recipe with 1/2 c. of milk and the remaining liquid water and see if you get different results. You will STILL need to adjust the dough for correct hydration (soft sticky ball) while it's starting to knead. --To improve 100% whole wheat bread, add an acidic ingredient, such as ascorbic acid. Some yeast products add ascorbic acid to the yeast. Yeast works better and longer in a slightly acidic atmosphere. There is a substance in wheat germ called Glutathione which breaks down the gluten - and is why we have trouble getting high-rising, fluffy, loaves of whole wheat bread without lightening the loaf by adding bleached/unbleached flour. By adding ascorbic acid it will help counteract the negative effects of Glutathione and will help repair broken gluten bonds (which is the cause of short, compact, squatty loaves). Add 1/8 t. of ascorbic acid (Fruit Fresh will work - it's a mix of ascorbic and citric acid) per 3-cups of flour. You may also find some recipes for 100% whole wheat bread that add lemon juice or vinegar for the same acidic effect, but it takes a lot more lemon juice or vinegar than it does ascorbic acid. You would have to use 6-times as much lemon juice to be as effective as ascorbic acid. -- Another way to lighten 100% whole wheat bread is to do a sponge with a portion of the flour for at least 1-1/2 hours, and as long as overnight. When I incorporated this method I got high-rising loaves of 100% whole wheat bread that were equal to any light-wheat and white breads I made. Soaking whole wheat flour helps lighten the loaf by softening the bran (bran cuts the gluten) and it gives the gluten time to absorb moisture, which creates strong gluten bonds without manipulation (kneading). I always use a sponge method for 100% whole wheat bread made in the bread machine. -- When adding 10-Grain Cereal Mixture, add it towards the end of kneading at the add-in beep. This goes for anything that may have a sharp edge, like nuts, dried fruit, etc. Adding dried fruit (raisins) early in the process and the kneading will pulverize them. If you add this coarse grind of grains/seeds/beans early in the dough making process it will cut the gluten strands as the dough kneads and you'll end up with a short squatty loaf because of the cut gluten. I prefer adding a dry mixture at the add-in beep because I like the "toothy" nuggets from the cereal mixture. If you don't want that much texture, you may want to soak the mixture first, but still wait to add it at the add-in beep towards the end of kneading. -- Another way to improve 100% whole wheat bread is to wait to add the salt and fat after the dough is kneading and the gluten is well developed. Once you add salt, the gluten tightens and kneading is more difficult - with a bread machine or by hand. Adding the fat early in the mixing/kneading "shortens" the gluten strands and development for a finer textured loaf. You can make the exact same recipe, and by adding the fat early or adding the fat late, it will alter the crumb and size of the loaf. Adding fat early for a close crumb (bread used for sandwiches), add it late for a more open crumb (bread used for toasting). These options are neither right or wrong - but are options to help control the crumb of the bread. --The same bread making rules and techniques that apply to making bread without the bread machine also apply to making bread IN a bread machine - such as when to add salt and fat. Bread machines are designed to make bread quick and easy and doesn't always take into considerations these rules and techniques. -- Check the dough for proper hydration while it's kneading, not after it's rising, while you still have time for the ingredients to be mixed into the dough. -- I only use the bread machine for mixing and kneading dough. As soon as it has completed the kneading I stop the bread machine and remove the dough and place it in a dough-rising bucket. I don't want a machine with a timed rise to determine when the dough has "doubled", which is actually determined by the strength of the yeast, moisture and ambient temperature, not a clock. If I have 1-quart of dough patted into the bottom of the dough-rising bucket, I know it has doubled when it gets to the 2-quart line -- whether it takes 25-minutes or 1-hour. In fact, it's better to only allow dough to rise to just UNDER double because our flour no longer has the extensibility it did as when it was bromated, and whole wheat flour was never bromated. The reasons not to use milk for proofing: 1. Water is more reliable than milk. 2. When proofing yeast in milk use 4-times the amount of milk as yeast. Yeast also tends to clump in milk and not proof as well. If you have to stir the milk/yeast mixture, you will end up killing some of the yeast. 3. Yeast works best with sucrose (table sugar) over lactose (milk sugar). 4. Yeast granules can become coated with milk fat (much like fat coats flour when making pastry) which can restrict water from entering and dissolving the yeast. -Grainlady
