What are you making for Easter dessert?

We are having lamb roast, fresh green beans or asparagus, garlic roasted potatos and rolls. I can't make up my mind what to make for dessert. I am thinking either a carrot cake or a pineapple upside down cake or something with lemons. So what are you making?

roselvr, do you make the Company Cheesecake from the BH&G cookbook? That's our "old reliable"... back when my dad was teaching he and I would bake twenty or so of them every Christmas for the other teachers and a very few other very lucky people. I much prefer their shortbready crust to the more common crumb crusts. I need a new copy of the OLD big book - the red plaid binder - mine's gone walkabout and they messed around with the recipes in the new version. (Did the same thing to Joy of Cooking. Irritating.) I broke the spine on the paperback in about six places ages back, it's held together with packing tape! Pie for breakfast was a staple at Grammie's when I was a little kid. No half and half though. Slab of apple pie with a hunk of "rat cheese" (very sharp cheddar) on the side - Gramp liked apple best for breakfast, other kinds were for dessert - with "Navy coffee" you could just about stand your spoon up in. (I once had a version where they tried to bake the cheese into the pie. It was vile.) She made terrible crust though. You could hurt someone with the "bone", the bit around the rim. Then she decided to go all "healthy" and the delicious breakfast pie disappeared in favor of a bowl of Wheaties. *mourn* golddust, I do so hate to disagree with you, but I've had enough people insist "oh, I just can't stand that store-bought pie crust", mumbling it around a mouthful of pie... made with that very product. *chuckle* About the third time it happened I decided not to waste precious energy on making piecrust anymore (when you have 4-6 usable hours in a day, you take your shortcuts as you can)... My mom makes kick-@$$ pie crust - perfect texture etc. - but she also smokes heavily so all her baked goods have a strong overtone of "ashtray" to the flavor. We usually give them away to friends who smoke who won't notice it. Oh! I forgot Oatmeal Pie. It's an old Amish/Mennonite recipe, IIRC. It makes a chewy-crisp top sort of like an oatmeal cookie and underneath that is a layer like the gooey part of a pecan pie. As I said above, many of our friends are allergic to nuts, so this is what I bring to a lot of wintertime potlucks as a "replacement" for pecan pie. 25 or so people will wipe out 2 or 3 10" pies and leave other desserts untouched. LOL I used to love making fancy desserts, but they are usually too time consuming for my limited time budget and our friends don't really appreciate them anyway. They'd rather have the simpler, homier stuff.

I've been working on that.. We will be having 4 adults and 10 children. My husband will be the only Daddy..the other two Dad's are on deployment with the Navy. Lastnight I think I narrowed it down. Grilled pork loin with a peach grilling sauce and dogs for the kidlets. Roasted Sweet potatoes Red Beans and Rice Layered salad or spring greens with candied pecans and vinagrette Veggies with ranch dip and hummus if the strawberries are good..those plus caramel dip (cream cheese and brown sugar) Sweet Tea Carrot Cake Sandwich Cookies and maybe a caramel chocolate tart I came across ~one guest usually brings the "bunny cake", soda, chips and fudge(made by the 2nd oldest son). I am so glad we started Spring Break today...I have the whole week off to prep and clean!

And I meant to say, I found a gluten free Irish Soda bread recipe. Can't vouch for it, but just in case: Karina's Gluten-Free Irish Soda Bread This soda bread sports a mildly sweet and complex flavor. The potato starch gives it tenderness, moisture and lift. If you don't like the taste of caraway, try a touch of finely grated orange peel. Make sure your source of millet flour is truly gluten-free. Ingredients: 1 cup gluten-free millet flour or certified GF oat flour 1/2 cup sorghum flour 1/2 cup potato starch (not potato flour!) 2 tablespoons raw sugar 1 teaspoon baking soda 1 1/2 teaspoons baking powder 1 teaspoon sea salt 2 teaspoons xanthan gum 5 tablespoons Earth Balance stick, or Spectrum Naturals Organic Shortening 3/4 cup plain non-dairy milk with 1/2 teaspoon lemon juice, or mild rice vinegar added 2 free range organic eggs or Ener-G Foods Egg Replacer 1 tablespoon honey or raw agave nectar 1 to 3 teaspoons caraway seeds, to taste (or use grated orange peel) 1 cup currants or raisins Instructions: Preheat oven to 375ºF. Lightly grease an 8-9 inch round cake pan and dust it with gluten-free flour. Whisk the dry ingredients together in a large mixing bowl. Cut in the shortening with a whisk, fork or pastry cutter. Whisk the wet ingredients together in a separate bowl. Make a well in the center of the dry ingredients and add the non-dairy milk, beaten eggs and honey, gently mixing as you go. I use a soft silicone or rubber spatula to do this. If you need a little more non-dairy milk to moisten the dough, add a tablespoon at a time and stir in. When the dough is evenly moist- like sticky biscuit batter, add the caraway and raisins. Stir only briefly to mix them in. Scrape and spoon out the dough into the prepared cake pan; and use wet hands to flatten and smooth the dough into a round loaf. Using a sharp knife, slice a criss-cross into the dough and wiggle it a bit from side to side to make a wider dent. [According to Irish folklore, the criss-cross discourages the mischievous fairies from messing with your humble loaf of bread. In case you were wondering.] Place the pan into the center of a preheated oven. Bake for about 30 minutes, until the loaf is golden and crusty and sounds hollow when thumped. Insert a wooden toothpick into the center to test for doneness. Cool on a wire rack for five minutes; and turn the loaf out of the pan to cool to room temperature on the rack. This sweet and tender bread is fabulous warm from the oven, even if it tends to crumble a bit. FYI, I measured out 3 cups finely ground vanilla wafers. That will help save on the math :o) Plus I made 1 1/2 custard recipe so I could have some for the top. Had to use toothpicks though to keep it from sliding. It is a keeper recipe for me as my family loves real banana pudding and this cake tops it. Made the cakes on Friday, Saturday the custard and assembled Sunday morning.

Uh, nothing. I usually have the whole family over, but with my son off at college I said I was not throwing a big party if he did not come home for Easter. He is not coming home, he has projects due right after Easter (he's a perfectionist, they are probably already done, but he likes to polish stuff) and he would have to leave by 2 or 3 on Easter to head back to school since he has class at 8 a.m. Monday. They don't get Friday off either, so he could not get home until 7 p.m. at the earliest Friday. Sigh, my first real holiday without my boy.

I told my hubby to let me know what he wants for Easter, hmmm, I probably should have specified food!

We are having decorated Easter cookies, my sister is bringing them.
I am making homemade ice cream and all the toppings for a banana split. I'm also thinking of stuffed strawberries, if I can get good strawberries.

Relax, LindaC, there's still time, LOL. Bud and Makayla are spending the night with me tomorrow night and Friday we're going to make a gingerbread bunny house and some Easter cookies with the new cookie cutters and stencils doucanoe brought me in Chicago and sprinkled with some beautifully colored sprinkles courtesy of San.

Other than that, I have homemade vanilla bean ice cream in the freezer, I just made it tonight. I've also gotten a mango/lime sorbet frozen, I made that last night. We'll have banana cream pie because David always wants that, it's his favorite. Probably a devil's food cake too, Ashley and the grandkids want CHOCOLATE.

Do you think that's enough dessert? (grin)

Another making LindaC cake, first time for me. The picky ones want strawberry shortcake or something chocolate. I'm leaning toward the strawberries if I can find some good ones.

Linda, I'm guessing you are making your famous bunny rolls...that should make up for some of it.

I made Ina Garten's Outrageous Brownies last night, and will slice them and freeze them tonight for Easter. It looks like we'll be eating out, though, but my sister said that doesn't mean we can't eat brownies, lol. I'm also going to attempt a vague recipe I got from DH's cousin for oatmeal cookies with dried apricots and flax seed added. That's in honor of the cookathon.

Is there a tradition of carrot cake for Easter? Which thread has LindaC's recipe? I'd like to add it to my to be tried file.

It is AnnT's Bread Pudding with caramel sauce for us. This has become an Easter tradition for our family. I also have the cut out cookies made and decorated.

Sol's Sourcream Pound cake in a lamb shape.
Vanilla Bean Ice Cream (one already churned and in freezer, one in fridge waiting for bowl to refreeze.)
And going to add chocolate to the vanilla bean ice cream for a chocolate version.

That's it...for now. LOL

Angel Food cake with lemon filling. Cut an angel food cake into 4 layers. Mix 1 can lemon pie filling with one small container lemon yogurt. Spread between the layers and frost with cool whip or whipping cream.

I'm going to make peeps cupcakes for the kids. We don't have any plans since we don't have family around so it will just be us. Nice and relaxing :)

I'll be making the Traditional Italian Noodle Pudding with Anisette. Fine noodles baked with a custard flavored with Anisette. The family used to put a few marachino cherries on top, but I haven't found any that taste decent in a long time, so I skip them.

Not really a dessert, but I'll make my standard Portuguese Sweet Bread recipe from an ancient Sunset Bread Book and as said elsewhere, I make the loaves into large and some small eggs and paint spring flowers or bunnies, etc., on them before baking with food coloring. Very pretty and the colors are nice and subtle after baking. At least I hope my back cooperates and I can do the kneading.

I recently bought a purty new piping bag so I think I'll make Sol's Lemon Curd Daisies as a surprise for Christy. I think one would look great as the centerpiece for a Easter Basket.

I'll be baking a lamb shaped lemon cake with cream cheese frosting and coconut for the wool. We have an antique cast iron lamb mold. Have been baking a lamb cake for Easter for as long as I can remember. We are also making cut out sugar cookies in Easter shapes, (chicks, tulips,etc.) My oldest daughter will be coming home from college and she asked for my apple caramel pie so that will be for her. Here's a cheesecake recipe I got 30 years ago from an Italian gentleman who was my neighbor. I don't know if it's a Traditional Italian Easter cheesecake but it does have ricotta in it.

Tony MarconiÂs Cheesecake

Graham cracker crumbs
1 lb. ricotta cheese
2 8 oz. pakages cream cheese (softened)
1Â½ cups sugar
4 eggs, slightly beaten
1/3 cup cornstarch
2 tbs. lemon juice
1 tsp. vanilla
Â½ cup margarine (melted)
1 pint sour cream

Preheat oven to 3250 .Grease a 9" springform pan; dust with graham cracker crumbs. In a large bowl, add ricotta and cream cheese. Beat at high speed until creamy. Continue to beat at high speed adding sugar then eggs. Reduce mixer speed to low. Add cornstarch, lemon juice and vanilla. Beat until blended. Add margarine and sour cream. Beat at low speed. Pour into pan. Bake at 3250 for 1 hour and 10 minutes. Turn off oven. Do not open oven door. Let cake stand in oven 2 hours. Remove cake from oven cool completely on wire rack.

*This make a dense cheesecake that sometimes cracks on the top but it is delicious plain. For variations, I've topped it with fruit or split the batter into 2 batches and added cocoa powder to one then swirled for a marble cheesecake.

One year I made Giada's "Easter Pie", but we weren't crazy about it.

I'd like to make Ann's Strawberry Roll but it will depend on how much time I have to devote to dinner. It will just be Tim and me this year, we decided to lay low and relax.

Holiday gatherings are getting smaller as everyone's kids get older and are starting their own families and holiday traditions. Plus Easter has never been a real big deal for us as holidays go.

We ended up making our cupcakes today. My friend brought her daughter over and she did an excellent job frosting and decorating. Munchkin #2 helped out also. Needless to say, much sugar was ingested today :)

What fun Tracey!

We are in the Winter Strawberry Capital of the World; I got a beautiful flat yesterday for $4. So all strawberry desserts starting with strawberry trifle, strawberry pie, and chocolate dipped strawberries.

I have made a lot of strawberry freezer jam, man I love that stuff.

The Princess, Bruvver, Ashley, Amanda, my mother and me all baked and decorated cookies today. I took pictures, I'll post them later. The grandkids spent the night last night and I'm just too tired,LOL.

I have some peaches I put in the freezer last summer. They still look great, not a sign of discoloration. I will use them to make a peach pie. DH loves his pie.

I just caved and made a double batch of Soft Sugar Cookie Dough..I'm not sure when we'll have time to do cut outs!!! But I'll probably put half the batch in the freezer for a later date.

I still have my Lamb halves in the freezer..And now I have 2 batches of homemade ice cream done in the freezer. (Vanilla Bean and Vanilla Bean with chocolate chip cookie chunks) and a batch of chocolate chocolate chunk(although I'm thinking about adding a swirl of raspberry freezer jam in it too) in the fridge waiting for the ice cream attachment to refreeze enough to be mixed up tomorrow night.

I think I'll make some homemade caramel sauce and maybe some hot fudge too.

Lou, yes I remember the bread basket with egg. It was the sweet bread dough. I see on the other thread you made it and it looks great. Did you ever make the noodle pudding with Anisette/anise flavoring?

Thanks Terri, I think I'm the lucky one with her putting up with me for all these years. lol. Your helpers have such concentration putting the jelly beans on those cupcakes and love the pic of your helper chowing on the peep bunny.

Cathy, $4 a flat......... swoon. I must say that Plant City has enabled me to have my banana strawberry smoothies year round these days and I love it. Our Acme will have sales of the quarts 2 for $5 and that's pretty good, but then they also come on sale $4 buy one get one free. That's when I stock up for my smoothies. Between you and David, now I want some strawberry shortcake though. On biscuits with unsweetened whipped cream.

I haven't decided on dessert!!

DD loves Pumpkin/spice cake (I told her that's a FALL/Winter cake), and she's not budging so I guess I will make that for her.

But DS wants Trifle, so we may be having both?

Thanks everyone for the suggestions. Cute peep cupcakes. I have decided on Pineapple Upside Down Cake. We haven't had that in quite awhile and it is a favorite. And I think it would be a good follow up to the lamb roast.

When I went to the farmers' market yesterday, they had gorgeous strawberries for $5 a flat (also from Plant City FL - Ham's Farm Rd.) so I scrapped the orange chiffon cake and made two hot milk sponge cakes instead to serve with the strawberries and whipped cream.

I just finished making 2 lemon meringue pies - one for us to take to my cousin's house and one for DD to take to her DBF's house - and a cheesecake from the Lindy's recipe. I used a bain marie (?) for the cheesecake and this is the first time it didn't crack!

Busy weekend for me so I'm late reporting back here.

LindaC, the cake was great even without the raisins...I really wanted to include but I just couldn't...no matter how small I chopped them up.

Eileen, no Costco here but I did score good berries at my local grocery store. Think they were from FL...2.79 for 2
lbs. Sam's or Wholefoods would have been my only chance after that.

Tracey, loved the pics!

Sounds like everyone had some great desserts and a good holiday.
