What's For Lunch?

Since I didn't go to church today, we are having the lemon meringue pie and the sweet potato casserole,plus meatloaf, carrots and a baked potato and some Grands biscuits. I don't think my husband likes sweet potato casserole but I will eat a bit, he can have the baked potato. I am also brewing up some fresh Irani iced tea. What do you plan to have today for lunch?

I didn't make it to church either, but did go to the local cafÃ© for a big breakfast. I'll probably have a lite, late lunch.

I mentioned on another thread that I'd bring plates, cups, paper towels, "handy wipes" and utensils. I'll see if I still have a cooler that will hold some extra ice. Nelson

My usual Boarshead Maple Glazed Chicken on Arnolds brand Whole Wheat Sandwich Thin. But I have homemade chicken noodle soup in the crock pot. DH is sick and I thought maybe soup would be good for him. Thinking I will put some French Rolls in the oven and make an apple, strawberry, grapes, and banana fruit salad to go with it.

On the way to an Italian market in the next county we stopped at weird Pizza place. I have been sitting on a Restaurant.com coupon for this place so good time to use it. What was weird was that the menu looked good on line and it was touted as NY Style pizza and pasta, but it was a dump practically in the middle of no where. We ordered a pizza with pepperoni and anchovies. I watched the guy hand make the pizza crust, nice job. He delivered it to the table with a tin of anchovies saying that they put anchovies on the side. So, is that how it's done in NY?

Good old starchy, cheesy, tuna casserole. Even my DD who doesn't care for tuna or peas ate it for lunch today--amazing how a few years of cooking for yourself will change attitudes toward Mom's cooking. I made two last night, and we'll have it again tonight, with sliced tomatoes and yellow squash.

Lynn, I also made it after seeing the movie...and a couple of times since, because it became a quick family favorite.

PS - it's just as good, if not better, the next day - make extra.

As for my lunch - corn fritters. I've got a post-holiday yen for simple food, and found a can of creamed corn in the pantry.

End up at Waffle House: scrambled cheese eggs, crisp bacon, dry raisin bread and tomato slices.

WH makes the bestest scrambled eggs!

I had leftover antipasto from dinner last night. Prosciutto, Genoa and dry salami, mild provolone,Caprese roasted red peppers, shrimp basilico, and pepperocini.

No lunch...dinner will be

either Parm Chicken over polenta or pork stir fry bowl..

Depends on which meat is more thawed. :o)
