Two Cheese Questions

I was reluctant to title this brunch.....but, I'm having a brunch for a best friend's daughter and I want it to be "Martha Stewartish" and I'm more Maxine! Anyway, a tomato-herb frittata recipe calls for Italian three-cheese blend. What 3 cheeses would you use? I've googled it and the answers are all over the place.


Next. On the menu is Gouda grits. What kind of Gouda is best?
