A question for a cheese maker

Each week after I finish a batch of yogurt, I convert half to greek yogurt. It is always so thick and creamy that I was wondering if that could go on to be cheese. It already is a soft cheese so to speak. Would it just get moldy if I leave it in the fridge or continue on to age as a semi hard cheese?
