Greek Feta cheese question(s)

I love Feta cheese so I bought it in Brine direct from Greece to try for the first time, but please tell me, do I rinse it or just drain it or what?

I want to put the traditional 'slab' on top of a Greek salad among other uses where it would get crumbled. I am assuming the guests crumble their own if I do this?

I am planning a Greek Salad lunch and starting with Saganaki for a very special birthday lunch with friends. I don't want to goof this up in any way.
