Hey! I am always picking the same things. It would be nice to have a fresh look. What would you choose? Pick 4 hot dishes and choice of Carving or Pasta Station. Thanks!

Maggie, what is the occasion for this dinner? That may make a difference in what to choose.

Wow, there are almost too many choices here! I am drooling over nearly all of them! If I were to just go with my favorites I'd choose Chicken Cordon Bleu, Sliced London Broil, Au Gratin Potatoes and Mixed Vegetables. I would also choose a pasta station. Only think missing is some type of salad.

Ugh! Now I am full!

Thanks, Linda. It is my daughter's Christening. Just how I feel - too many choices. They do a salad on the buffet but I am going to ask them to have the salad plated on the tables - don't know if they will.

Annie - Thank you, and yes I can taste the different flavors in carrots, that is one of the things the guests noticed when eating the carrots, they were sold on the taste and said "why we cannot get carrots like that at the store?" I really like the flavor of the chipotle ketchup and I also like beans so that will be a perfect match. I still like to taste my food so I never make it too spicy. You should not feel self conscientious about speaking any other language, I know that I don't. I self taught myself a lot of the things that I know, English for one, I didn't go to school here and when I came I didn't know a word. I learn watching tv, reading and talking to everyone whether they were understanding or laughing, it didn't matter. The same thing with the gardening and cooking, I didn't have a mother or grandmother to teach me anything. I was raised by my single father and we ate in the restaurant every day because he had to work. So in reality I never saw anyone cooking or canning or anything kitchen related. Everything I know I learned it from the books and these days from the forums from people like you who teach me things. And forgive me if sometimes I put the wrong words when I am trying to say something. I take well when I get corrected in a positive way, it is learning for me and I get benefits from the experience. I hope that I didn't write a soap now, but Annie you should watch the Spanish novelas, they are funny and you can practice Spanish in the comfort of your own home.:) Like Dcarch said it is good to learn through music. Few years back I heard a song in English and sometimes I caught the meaning of few words, now when I listen to a song I actually understand the meaning of the whole song! Nikkidan, There is also marble, soapstone, and a couple of others that some here on GW have used such as cement, stainless steel, and even copper. Just the large number of choices makes it kind of overwhelming at times, let alone that each one has its own unique qualities. Maybe start with thinking about what you have now and what you don't want. Think about what your budget is and what your might look good with your cabinets. I think many people do granite, which I found to have a lot of earth tones in them. Granite does hold up to many of the kitchen issues like heat, staining, etc.... I found on GW that there were many willing to use soapstone and marble too. One reason I did not look at laminate or corian was because I thought you could not use an undermount sink with them, but I could be wrong there. Maybe find some inspiration photos on line or on GW finished kitchens or think about what you like in your family/friends kitchens. I used quartz, which is somewhat heat sensitive, so no pots right off the heat. I loved marble, but for resale mostly, decided to choose between granite and quartz. Good luck and have fun with the quest for your countertop. Maybe post a pic of some of your other parts of the kitchen such as cabinets and flooring.

If you have a green salad, I'd suggest Cathy/Mustangs Fig and Proscuitto salad. She uses arugula, but I use spinach because it's more easily available here. I don't even like salad, usually, but I just love this stuff and it would go nicely with quiche. Mustangs' Salad with Proscuitto, Parmesan and Figs 4 tbls olive oil 2 oz thinly sliced prosciutto cut into strips 1 tbls raspberry jam 3 tbls fig balsamic vinegar 1/3 cup dried figs, chopped into 1/4 inch pieces 1 tbls finely chopped shallots 5 cups baby spinach (she uses arugula, I think) 1/2 cup chopped walnuts, toasted 2 oz Parmesan, shaved into thin strips 1. Heat 1 tablespoon oil in 10 inch nonstick skillet over medium heat; add prosciutto and fry until crisp, stirring frequently for about 7 minutes. Using slotted spoon, transfer to paper towel to drain and cool. 2. Whisk jam and vinegar in medium microwave-safe bowl; stir in figs. Cover with plastic wrap, cut several steam vents in plastic and microwave on high until figs are plump, about 45 seconds. Whisk in 3 tablespoons oil, shallots, ? tsp salt; toss to combine. Let cool to room temperature. 3. Toss arugula and vinaigrette in large bowl; adjust seasonings with salt. Divide salad among individual plats; top with portion of prosciutto, walnuts, and Parmesan. My budget for all appliances is 15K, so if I spend less on the range/hood, I'll have more money for other appliances. If you are budget constrained, keep in mind that an island hood is more expensive than if you have your range against a wall. You'll need a larger hood for an island than if you had your range against the wall. Also, hood manufacturers price island hoods higher than comparable wall hoods. You'll also need more cfms for your island hood than for a wall hood as there is no wall or cabinets to help contain the smoke and grease from floating all around. Your island itself will need to be quite large to hold a 36" gas range plus the needed landing space, plus space so that the people nearby don't get splattered by what you are cooking on the island. As has been mentioned many times on this forum, more time is spent on prep than on actual cooking so if you want an island range for social reasons, it would be better to dedicate your island to prep.

Not sure I got this right. You wanted four from the hot list, and one station, right? If so I picked these so there would be a complete meal. They weren't necessarily my first choices but I only saw 2 veggie choices on the list and felt they should be included.

The chicken can go with the veggies or the pasta. The pork works well with the potatoes and veggies. The pasta can stand alone or go with the salad.

Maggie, what time should I be there. I am assuming the party is around 2 after the Christening??

You know your guests tastes better than us. I know my Irish family doesn't go for red sauce, so I would pick the Marsala or Francese. If you decide on the Pasta station, you can have your red sauce there.

If you are having the Pasta stas. I would stay away from pasta as one of the 4 picks...(also, these are the money makers for the caterer as they cost less)

Do you have any vegetarians..if so, you need something for them.

I catered many Christenings and showers...I would skip the roast veggies, you have a salad already.

Make sure they give you some type of bread or rolls, many look for that.

I am sure it will be great whatever you pick. You know what goes over with your family, we don't!

I would take the carving station and use one of the vegetable pasta dishes as one of your hot items...Vegetable lasagna is always good on a buffet, and since the eggplant rollatini is grouped with the pastas, it's probably served on a bed of angel hair or something which would also be good. This way, there's something substantial for vegetarians or those who simply don't care for the meat selections.

For chicken on a buffet,it's always good to make sure it has enough sauce, so the Chicken Forestiere would probably be my choice...Chicken Marsala is good, but there are those who don't care for wine or who won't drink it. Anyway, the Forestiere has the spinach as well.

Salmon is popular, and ordered so frequently that most places will know how to prepare it properly.

I'm with Kathleen regarding the veggies. You've got salad and veggie crudite as it is...and many of the choices have some sort of veggie. I would get the Potatoes Au Gratin though, because people like it on it's own and so it can pair with the meat at the carving station...which you can't go wrong with Roast Beef & horseradish sauce.

I agree, you have a salad, crudites and the seafood on the crab platter, so I'd go with a couple of meats, the potatoes, a vegetable and the pasta station. Hey, your Irish, gotta have the potatoes! OK, here's what I'd pick:

Chicken cordon bleu, just because I like it
Jack Daniels pork Loin
Seasonal mixed vegetables
Potatoes au gratin
Pasta station.

Kiss those baby cheeks for me, and be sure to take pictures!
